CAJUN SALMON AND SHRIMP
This easy and delicious cajun salmon and shrimp recipe is packed with flavor. Served with a homemade cream sauce.

Steps:
- Preheat oven to 450 degrees F.
- Season the salmon with 2 tsp of Cajun Seasoning. Season the shrimp with 1 tsp of Cajun seasoning.
- Heat a large skillet with some oil over medium-high heat. Cook the salmon for 1-2 minutes, on each side, skin side down. Place the salmon in the oven and cook for 7 minutes.
- While the salmon bakes in the oven, heat a medium-sized skillet with some oil over medium-high heat.
- Add the shrimp to the skillet and cook for 40 seconds on each side. Remove the shrimp from the skillet and set aside.
- Add the garlic and red crushed pepper to the skillet and cook for 20 seconds.
- Add the lemon juice, heavy cream, parmesan cheese and cook for 3-4 minutes. Season with salt and pepper.
- Pour the sauce over the cooked salmon and shrimp and enjoy.

EASY CAJUN SALMON
Cajun salmon is a quick and easy dinner recipe that is bursting with flavor. Cajun seasoned salmon is quickly seared until blacked, then a little cream (or dairy-free cashew cream) is added to the pan to make a creamy cajun sauce. It's delicious!

- Mix the seasoning ingredients together in a small bowl. Reserve about ½ tablespoon of the seasoning then sprinkle the remaining evenly over the top of the salmon.
- Heat the oil in a large nonstick pan over medium-high heat. Add the salmon to the pan, top side facing down. Cook for 5 minutes, or until the side of the salmon that is facing the pan is well-browned (blackened). Flip the salmon over and continue to cook for another 3-4 minutes, or until the salmon is fully cooked. It should reach an internal temperature of 140 degrees Fahrenheit. Remove the salmon from the pan.
- Add the cream and the reserved ½ tablespoon of cajun seasoning to the pan. Simmer for about 1 minute, or until the cream reduces slightly. Serve the salmon with the cajun cream sauce poured over the top and a little minced parsley for color.

- Brush a little oil in a frying pan and preheat the pan.
- Combine the spices for the salmon in a small bowl.
- Turn the salmon fillets in the spices, covering all sides.
- Place the salmon fillets (skin side under) in the hot frying pan.
- Fry for 4 minutes before turning over and frying for another 3 minutes or until done.
- Serve with mashed potatoes and spinach.

- Pat the salmon fillets dry with paper towel. Drizzle over the olive oil then season generously with Cajun seasoning, salt and pepper.
- Heat a large frying pan over medium high heat.
- Add the salmon, skin-side down, and cook for 2-3 minutes until the skin is crisp.
- Flip over and cook for another 2-3 minutes on the other side. Remove from the pan and set aside while you make the sauce.
- In the same pan you cooked the salmon, melt the butter then add the garlic and herbs.
- Sauté for a few minutes until fragrant then pour in the cream and lemon juice.
- Allow to simmer for a few minutes then season with salt and pepper.
- Add the salmon back to the sauce and allow to simmer for another 2 minutes. Serve immediately.

- Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
- Slice eggs in half lengthwise. Remove yolks and place in a medium bowl. Set aside egg whites. Mashing with a fork, mix mayonnaise, Dijon-style mustard, salt and black pepper with the egg yolks.

CREAMED SALMON ON TOAST
Steps:
- In a saucepan or skillet, melt butter over medium heat. Whisk in flour, stirring constantly, until a smooth paste is formed. Gradually add milk and reserved liquid from peas, stirring constantly, until a smooth thick gravy is formed.
- Flake salmon into a bowl, breaking apart any large pieces. Stir salmon and peas into the sauce carefully with a wooden spoon to avoid mashing the peas. Cook until heated through. Adjust seasoning with salt and pepper.

- Preheat your skillet over medium to medium-high heat. When fully heated, add 1 tbsp of high smoke point oil (canola, avocado, peanut oil, ghee etc) and heat the oil for 30 seconds or until shimmering.
- Dry the salmon fillets completely. Moisture is the enemy to crispy skin if cooking skin-on. Pat dry with paper towels regardless of cooking skin on or off. Season the skin with salt and pepper. Season the flesh as you desire.
- Using fish spatula or another flexible spatula, press the fish in the pan, skin side down for 30-40 seconds. Much like when searing a steak, do not be tempted to flip the salmon prior to it being cooked enough. The drier that skin is going into the pan, the crispier the skin will be. Fish skin shrinks when it cooks so adding pressure will keep it flat and covering the flesh.
- When skin is crisped and easily releases from the pan, flip the salmon over and cook an additional minute.
