Steps:
- Heat the vegetable oil in a 3-quart saucepan over medium heat. Add the onions & carrots to the saucepan and cook, stirring occasionally, for about 5 minutes, or until tender. Add the celery and bell pepper and cook for 2 to 3 minutes. Stir in the Cajun Seasoning and cook one minute longer.
- Add the ham stock and ham to the vegetable mixture and simmer for 15 to 20 minutes until vegetables are tender. Stir in the rice, heat through. Taste for salt and add if needed. Stir in vinegar and serve.
CHEESY HAM 'N' RICE SOUP

- In a large saucepan, saute celery and onion in butter until tender. Add carrots; cook and stir for 1-2 minutes. In a large kettle or Dutch oven, combine the flour, salt and pepper. Gradually stir in cream. Bring to a boil; cook and stir for 2 minutes or until thickened., Remove from the heat; stir in cheese until melted. Stir in the wild rice, ham, brown rice, bouillon, celery mixture and water. Return to a boil. Sprinkle with almonds if desired.

CAJUN STYLE RED BEAN AND RICE SOUP
This is a very hearty, spicy soup. Makes for a filling first-course serving.

- In a large pot over high heat, heat the oil. Add the bacon and saute for 2 minutes. Add the onions, bell pepper, garlic, bay leaves, sausage and ham hock and saute for 2 more minutes.
- Add the beans and saute for 2 more minutes. Stir in the Cajun-style seasoning, Worcestershire sauce and stock. Bring to a boil, reduce heat to low and simmer for 1 hour, stirring occasionally.
- Add the salt, cover the pot and simmer for an additional 15 minutes. Turn off the heat and allow the pot to sit, covered, for about 20 minutes. Discard the ham hock.
- Ladle soup into individual bowls. Top each serving with 1/4 cup rice and 1 tablespoon green onion.

- Place chicken in a large stockpot; cover with water. Add the bay leaves, salt, poultry seasoning and pepper. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until chicken is tender., Remove chicken from broth; set aside to cool. Strain broth, discarding seasonings. Set aside 6 cups broth for the soup; save remaining broth for another use. Skim fat from soup broth. When cool enough to handle, remove chicken from bones; discard bones. Shred and set aside 3 cups chicken (save remaining chicken for another use). , In a large stockpot, saute onion and celery in butter until onion is crisp-tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, orange juice, cilantro, seasonings and reserved broth. Bring to a boil. Reduce heat; cover and simmer for 15 minutes or until vegetables are tender. Stir in the rice, beans and reserved chicken; heat through.

CAJUN GLAZED HAM
This recipe has been submitted for play in ZWT9 - Cajun/Creole. This recipe is from cookbook: More HeartSmart Cooking With Bonnie Stern. This glaze is pretty spicy, it really wakes up the ham. Lovely meal served with rice and peas, sweet potatoes and greens. Enjoy!

Steps:
- Trim ham of all fat and pierce ham all over and score surface.
- In a small bowl combine brown sugar, jalapenos, garlic, vinegar, mustard, paprike, pepper, cayenne, thyme and oregano.
- Place ham on foil-lined baking sheet and spread 1/3 of the glaze over ham.
- Bake in a preheated oven 350 F for 20 minutes.
- Baste with 1/3 of the remaining glaze and bake for another 20 minutes.
- Repeat, total cooking time should be 1 to 1 1/2 hours . Baste often.
- Allow to rest 15 minutes before carving.

- Add beans to a large colander and rinse beans under water. Shake, inspect and discard any debris.
- Move beans, ham hocks, onion, garlic, seasoning packet, spices (don't add salt yet) and chicken stock to a slow cooker and cook on High for 6-7 hours. After 6-7 hours, remove the ham hock or ham bone.. pick apart meat and add back into slow cooker.
- Stir in tomatoes and salt and cook for another 30 minutes before finishing with squeeze of lemon juice. Keep warm until ready to serve.
