An easy recipe for hard candy. The hardest part is waiting for the sugar to reach the proper temperature. Be patient and use a candy thermometer for perfect candy. This recipe can easily be adjusted by using different flavored extracts and food colorings.

3 ¾ cups white sugar
1 ½ cups light corn syrup
1 cup water
1 tablespoon orange, or other flavored extract
½ teaspoon food coloring
¼ cup confectioners' sugar for dusting

Steps:

  • In a medium saucepan, stir together the white sugar, corn syrup, and water. Cook, stirring, over medium heat until sugar dissolves, then bring to a boil. Without stirring, heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads.
  • Remove from heat and stir in flavored extract and food coloring, if desired. Pour onto a greased cookie sheet, and dust the top with confectioners' sugar. Let cool, and break into pieces. Store in an airtight container.

1 3/4 cups sugar
1/2 cup water
1/2 cup light corn syrup
1/8 teaspoon salt
4 -5 drops food coloring (any color)
1/4-1 teaspoon flavoring oil (any flavor)

Steps:

  • In a medium-size heavy saucepan combine sugar, water, light corn syrup and salt, and Stir until sugar dissolves.
  • Cover pan and bring to a rolling boil.
  • Remove lid and insert a candy thermomater and cook until temperature reaches 250 degrees F.
  • Add food coloring, stirring with metal spoon until thoroughly mixed.
  • Continue cooking until the temperature reaches hard crack, or 300 degrees F.
  • Remove pan from heat and let it cool about 3 minutes, then add flavoring oil, and mix it very well.
  • Cover the pan and let it sit for about 5 minutes.
  • Pour the candy into greased molds (for lollypops) or a marble slab or into a greased shallow pan.
  • As soon as it is cool enough to handle, cut into squares with scissors or roll into balls or shapes.
  • Or, another option is to let the candy cool completely, then break the candy into bite-sized pieces with a cleaned hammer or the blunt end of a butter knife.

½ cup brown sugar
1 cup light corn syrup
1 cup peanut butter
6 cups cornflakes cereal
1 cup dry roasted peanuts
1 (11 ounce) package butterscotch chips

Steps:

  • Combine white sugar, brown sugar, and corn syrup in a microwave-safe glass or ceramic bowl and heat until sugars have dissolved, about 1 minute. Stir in peanut butter. Place the cornflakes and peanuts into a large bowl and stir in syrup mixture, mixing well.
  • Spray a 9x13 inch pan with cooking spray. Lightly press the corn flake mixture into the pan. Melt the butterscotch chips in the same microwave-safe glass or ceramic bowl in 30 second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or butterscotch will scorch. Spread over the cornflake mixture. Allow candy to cool, then cut into 1x2 inch bars.

5 to 6 cups confectioners' sugar
2 cups sugar
3/4 cup light corn syrup
1/2 cup water
1 to 2 teaspoons anise, lemon or orange extract
Red, yellow or orange liquid food coloring, optional

Steps:

  • Fill a 15x10x1-in. pan with confectioners' sugar to a depth of 1/2 in. Using the handle of a wooden spoon, make a continuous curved-line indentation in the sugar; set pan aside. , In a large heavy saucepan, combine the sugar, corn syrup and water. Bring to a boil over medium heat, stirring occasionally. Cover and continue cooking for 3 minutes to dissolve any sugar crystals., Uncover and cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage). Remove from the heat; stir in extract and food coloring if desired. , Carefully pour into a glass measuring cup. Working quickly, pour into prepared indentation in pan. Cover candy with confectioners' sugar. When candy is cool enough to handle, cut into pieces with a scissors. Store in a covered container.

Steps:

  • Combine sugar and corn syrup in a dutch oven.
  • Bring to a boil.
  • Remove from heat.
  • Stir in peanut butter.
  • Add corn flakes and stir until all are coated with syrup mixture.
  • Drop by tablespoon onto waxed paper.
  • *you can add 1 tsp of vanilla for a slightly different flavor.
  • *or you can spread the mix out into a 13 x 9 dish and cut into squares.
