BANANA COFFEE CAKE
A delicious banana coffee cake made with ripe mashed bananas and a crisp, crumbly, streusel topping!

Steps:
- Preheat oven to 350F and lightly grease and flour a 9x13 baking pan. Set aside.
- Combine butter and sugar in the bowl of a stand mixer (or in a large bowl and use an electric mixer). Beat until well-combined, then stir in mashed bananas.
- Add eggs, stirring well after each addition, and then add sour cream and vanilla extract and stir well.
- In a separate, medium-sized bowl, whisk together your flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to wet, stirring until completely combined (be sure to scrape down the sides and bottom of the bowl). I prefer to do this with a spatula to avoid over-mixing the batter.
- Pour batter evenly into prepared 9x13 pan. Prepare Streusel.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line two 12-cup muffin tins with paper liners.
- Whisk flour, baking powder, baking soda, and salt together in a bowl. Mix mashed bananas and sour cream in a separate bowl.
- Beat sugar and oil in a large mixing bowl. Add eggs and mix until light and fluffy. Mix in liqueur, then flour mixture. Add banana mixture and mix just until combined, scraping sides of the bowl quickly; don't overmix. Pour batter into the prepared muffin cups, filling 3/4 full.
- Bake in the preheated oven until tops are golden brown and a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool in the tins for 5 minutes. Transfer to a wire rack and let cool, about 20 minutes.
- Meanwhile, dissolve instant coffee in hot water in a medium bowl. Stir in confectioners' sugar, oil, and liqueur. Drizzle over cooled muffins.

- 1. Splenda powder sugar 2 cup of Splenda sugar 2 tsp. cornstarch Put in blender on high speed about five minutes
- 2. Mash the banana well add lemon juice and nuts.
- 3. Gradually add powdered sugar until you obtain right spreading consistency. Ice cake after completely cool.
CARAMEL MACCHIATO BANANA BREAD
Baking banana bread is one of my favorites, and I love nothing more than enjoying a slice with a nice cup of coffee. This was the inspiration for my recipe, which features a coffee infused loaf and a rich caramel glaze.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In a large mixing bowl, mash the bananas with a fork until almost smooth, and stir in the coffee creamer, vegetable oil, eggs, sugar, and instant coffee granules until the coffee granules have dissolved. Gradually stir in the flour mixture, about 1/2 cup at a time, until batter is almost smooth, and pour batter into the prepared loaf pan.
- Bake in preheated oven until a toothpick inserted into the center of the banana bread comes out clean, about 1 hour. Allow to cool before removing from pan.
- Melt the unsalted butter in a saucepan over medium heat, and mix in the brown sugar and vanilla extract. Bring the mixture to a boil, stirring to dissolve sugar, and reduce heat to a simmer. Simmer the syrup for 3 minutes, allow to cool to a warm but liquid temperature, and pour the glaze over the banana bread. Serve when glaze has set.

- Preheat oven to 325 degrees F. Spray a 9×5 inch loaf pan thoroughly with nonstick spray. In a small bowl, combine the flour, baking soda, cinnamon and salt, whisking thoroughly. Set aside.
- In a large bowl, whisk together the eggs and brown sugar until smooth. Add in the milk and coconut oil, whisking until combined. Stir in the mashed bananas and vanilla extract until mixed. Slowly stir in the dry ingredients and mix until just combined. Pour batter in the greased loaf pan. Top with coarse sugar.
- Place the loaf pan on a baking sheet and set in the oven. Bake for 75 to 85 minutes, or until the center is set. If the streusel begins to brown, tent the bread with aluminum foil. Remove the bread and let it cool in the pan for 20 minutes. Gently turn the bread out on a plate or cutting board and let it cool completely before glazing.
- Whisk together the ingredients until a smooth, drippy glaze forms. If the mixture is too thin, you can thicken it by adding a little more powdered sugar. If it seems too thick, add 1 teaspoon of milk at a time, whisking to combine. Pour it over the banana bread and let it set for 30 minutes before slicing.
