CARIBBEAN FISH WITH MANGO SALSA
Now for something completely different, how about a little Caribbean/Creole feel? This can be done with fish or with scallops and will wake up the little taste buds. Please forgive me, I am not a real recipe follower, and I change it around all the time. Hope this works for you, love to hear about it. I never wrote it as a recipe, sort of a seat of the pants guy. One item to complete it that I may add is Zatarain's Caribbean Rice®, and in this I add 1/2 red bell pepper and 1/4 cup of fresh pineapple.

Steps:
- Mix together the paprika, curry powder, cumin, allspice, ginger, coriander, salt, black pepper, fennel, and cayenne pepper in a bowl; set the spice mix aside.
- In a bowl, lightly toss the mango, pineapple, red bell pepper, black beans, red onion, and cilantro in a bowl; pour lime juice over the mango mixture, and toss again. Cover the bowl, and refrigerate until chilled, at least 30 minutes.
- Whisk together the egg and milk in a bowl. In a separate shallow bowl, stir the panko crumbs with coconut. Stir about 1 tablespoon of the spice mix, or to taste, into the panko crumb mixture.
- Heat olive oil in a skillet over medium heat. Dip tilapia fillets into the egg mixture, then press gently into the panko crumb mixture to coat both sides of fillets. Brush off any loose crumbs, then lay the fillets into the hot oil. Pan-fry until the fish is opaque inside and golden brown outside, 3 to 5 minutes per side or as needed. Serve with mango salsa.

CARIBBEAN COCONUT FISH
A simple way to prepare fish. You can try any type of fish that suites your taste. For nutritional purposes I just used tuna steaks.

Steps:
- Pre-heat oven to 350°F In a small sauce pan heat up onions, garlic, and butter. Saute for 2 minutes, pour in tomato sauce and cook another two minutes.
- Pour in can of coconut milk, cilantro, lemon grass, salt and pepper. Turn of heat and let sit.
- In a baking dish place the fish and pour coconut sauce over the top. Cover with aluminum foil and bake for 15 minutes.
- Remove foil and bake uncovered for 10 minutes, or until fish is fork tender.

JAMAICAN GRILLED FISH

- Make a few slashes in the flesh on either side of the fish with a sharp knife. Mix the onion powder, paprika, thyme and some seasoning with the beer. Pour over the fish and rub into the slashes and cavity. Place the lime slices inside the fishes' bellies, cover with cling film and leave to marinate in the fridge for 1 hr.
- Heat the grill to medium-high. Place the fish on a tray and grill for 15-20 mins, depending on the size, turning halfway through. Baste the fish with a little beer as it cooks. Serve with lime wedges to squeeze over.

CARIBBEAN STYLE FRIED FISH
Adapted from a reader recipe submitted to a Women's magazine . To make this recipe gluten-free suitable- use a gf flour for dusting the fish (my preference is sorghum flour). The suggested fish was Sea Bass, but you can use any fish fillets of your choice.

Steps:
- Wash the fish and pat it dry with absorbent kitchen paper. Squeeze a few drops of lemon or lime juice on to the flesh.
- Place the garlic, onion, spring onion, chilli, coriander and seasoning into a small blender and purée to a paste.
- Spread the paste over the fish and leave it to marinate for at least 15 minutes.
- Heat some oil in a frying pan.
- Put some plain flour in a bowl and dip the fish in it.
- Place the fish in the hot oil, without overcrowding the pan. Fry the fish on each side until golden brown.
- Remove the fish from the pan and place on absorbent kitchen paper to absorb any excess oil.
- Serve with a light salad on the side.
