EASY CARNIVAL FUNNEL CAKES

Steps:
- Heat the oil into a deep skillet, at least 8 inches in diameter, to 360-375 degrees.
- While the oil heats, add the flour, baking powder, and salt to a mixing bowl and whisk together.
- Add the eggs, milk, and vanilla to a blender. Pulse a few times to combine.
- Add in the sugar. Pulse a few more times to combine.
- Add the flour mixture in 1/2 cup at a time, pulsing after each addition to combine.
- If using a funnel, plug the hole at the bottom with your finger. Pour the desired amount of batter into the funnel. Over the hot oil, remove you finger and using a circular motion to make 4 to 6 inch circle with the batter, and then cross over the circle to make a spiral pattern.
- If using a freezer bag, Pour the batter into a zipper freezer bag. Cut off the corner and pipe some batter into the hot oil using a circular motion to make 4 to 6 inch circle, and then cross over the circle to make a spiral pattern.
- Cook until under side of funnel cake is golden brown. Carefully flip the cake over to cook the bottom side until golden. Remove from the oil and drain on plate lined with paper towels.
- Serve warm and dust generously with powdered sugar. Top with desired toppings. Makes 4-6 funnel cakes.
CARNIVAL FUNNEL CAKE

- ***In an eight inch skillet, heat the oil to 360 degrees F.****
- In a blender, combine the eggs, vanilla and milk.
- Pulse mix a few times.
- Add the granulated sugar and pulse again a few times.
- Combine the flour, salt, and baking powder in a bowl.
- Add flour mix to egg/milk mixture in 1/2 cup increments, pulsing the blender a few times after each addition.
- If you are like me and do not have a funnel, place batter in a ziploc bag.
- When the oil is hot, cut the tip of the bag and pour approximately 1/2 it into the hot oil while making a circular motion.
- Carefully, use tongs and wide spatula to turn the cake over when golden brown.
- Fry the second side one minute, remove and drain on paper towels.
- Sprinkle with sifted confectioners' sugar, and garnish with strawberries and whip cream.
AUTHENTIC CARNIVAL FUNNEL CAKE

Steps:
- Add dry ingredients into large bowl
- Add in eggs, milk & vanilla & whisk until fully combined & there are very little lumps
- In a large skillet add about ½ inch oil & heat to 350 degrees - watching closely
- Transfer batter into a large squeeze bottle - you may have to do this in batches
- Once oil has reached frying temperature - squeeze batter into funnel cake pattern - try to keep it somewhat circular
- Allow to fry 30-60 seconds or until golden brown - flip & cook other side the same
- *Note- keep watch of your oil temp as this can fluctuate.
- Once both sides are done cooking use tongs to remove & place immediately in paper sack to drain off the oil
- Continue with remaining batter & adding to the bag
- Once complete dust each cake with confectioners sugar before serving
- *Some like to also add some pie filling , berry sauce or chocolate sauce

- In a mixing bowl, combine all the ingredients; transfer mixture to a plastic zip-top bag or air-tight glass jar.
- Include the following instructions: in a mixing bowl, beat 1 large egg and 1 cup milk; add in funnel cake mix and beat until smooth.
- In a frying pan, heat oil (1-inch depth) until 375 degrees.
- Pour batter, 1/2 cup at a time through a funnel into the hot oil with a circular motion to form a spiral.
- Fry until golden; turn to fry the other side.
- Remove funnel cake to drain on paper towel lined plate.
- Repeat with remaining batter.
- Sprinkle with powdered sugar while warm.
- Note: takes a little practice to get the hang of it.

- Fill a 8 to 10 inch fry pan with oil (about 1/3 to 1/2 of the pan full of oil) and heat to frying temperature.
- Combine the ingredients in order given.
- Get a regular cooking funnel. Put your finger over the funnel spout; fill the funnel with the batter.
- Start letting the batter funnel out in a criss-cross until all batter in funnel is gone. Batter will come together and cook until golden brown in about 30 seconds to 1 minute on each side. remove and top with what you want (when cooking make sure you make the batter cover the whole bottom of the pan--just keep criss-crossing until all holes are filled in).
- Repeat with remaining batter. Makes 8 to 10 large cakes.
- Toppers for the cakes after cooking: Dust with powdered sugar or powdered sugar mixed with cinnamon. The carnival also uses canned pie filling such as apple or any flavor you want.

- Mix salt, baking powder, and half the flour in a bowl. Set aside.
- Cream eggs, sugar, and milk in a large bowl. Add flour mixture and beat until smooth. Continue to add remaining flour, but use only enough to achieve desired consistency. Batter will be thin enough to run through a funnel.
- Heat the oil to 375 degrees F (190 degrees C) in an 8-inch skillet.
- Put your finger over the bottom opening of the funnel, and fill the funnel with a generous 1/2 cup of the batter. Hold the funnel close to the surface of the oil, and release the batter into the oil while making a circular motion. Fry until golden brown. Use tongs and wide spatula to turn the cake over carefully. Fry the second side one minute. Drain on paper towels, and sprinkle with sifted confectioners' sugar.
