Roasted Carrots and Red Quinoa image

Shiro miso, a Japanese soybean-rice paste, imparts a salty-sweet note to this substantial salad.

1 pound carrots, peeled and cut into 1-inch pieces
1 small red onion, cut into 1/2-inch wedges
1 tablespoon fresh thyme leaves
3 tablespoons extra-virgin olive oil
1/4 teaspoon coarse salt
Freshly ground pepper
1 cup red quinoa, rinsed
3 cups baby spinach
1 tablespoon shiro miso
1 tablespoon lemon juice

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, toss carrots, onion, thyme, and 2 tablespoons oil. Season with salt and pepper. Roast, stirring once, until tender, about 40 minutes.
  • In a saucepan, bring quinoa and 1 1/4 cups water to a boil. Cover; reduce heat and simmer until tender, 16 minutes. Add spinach, cover, and let stand 5 minutes. Transfer to a bowl; top with vegetables. In another bowl, whisk together miso, lemon juice, and remaining 1 tablespoon oil. Drizzle over salad; toss.

2 tablespoons fresh lemon juice
1 clove garlic, finely chopped
1 teaspoon ground cumin
¼ teaspoon salt
freshly ground black pepper to taste
2 cups shredded carrots
1 (14 ounce) can chickpeas (garbanzo beans), drained and rinsed
2 tablespoons chopped fresh parsley
2 tablespoons chopped white onion

Steps:

  • Whisk olive oil, lemon juice, garlic, cumin, salt, and black pepper together in a bowl until dressing is smooth; add carrots, chickpeas, parsley, and onion and toss to coat.

1 tablespoon olive oil
1 tablespoon moroccan seasoning
1/2 cup red quinoa
1/2 cup white quinoa
2 cups water (or vegetable broth)
2 teaspoons moroccan seasoning1 cup chickpeas (drained and rinsed)
1/4 cup red onion (diced)
1/4 cup raisins
1/4 cup pine nuts (toasted)
1 handful parsley (chopped)
2 tablespoons olive oil
1 lemon (zest and juice)
1 teaspoon moroccan seasoning
salt and pepper

Steps:

  • Toss the carrots in the olive oil along with the spices.
  • Arrange the carrots in a single layer on a baking sheet.
  • Roast in a preheated 400F oven until tender, about 20-30 minutes, turning them once in the middle.
  • Simmer the quinoa in the water along with the spices until the water is absorbed, about 20 minutes.
  • Mix the carrots, quinoa, chickpeas, onion, raisins, pine nuts and parsley in a bowl.
  • Mix the olive oil, lemon juice and zest, moroccan spice blend, salt and pepper in a small bowl and then toss the salad in it.

Cook the quinoa, covered, for 15-17 minutes, or until all the water is absorbed. Remove the saucepan from the heat and let the quinoa stand covered for 3-5 minutes. Then fluff with a fork and set aside to cool.
  • Using a vegetable peeled, shave the carrots into long ribbons. Add the carrot ribbons to the cooled quinoa long with the chickpeas, cashews, currants and parsley. Toss gently. Then drizzle with some of the dressing (you may not use it all, depending on your taste preferences) and toss until evenly coated.
