Cebu Torta Mamon Cake Recipes

This is a favorite traditional Filipino torta recipe baked during holidays and special occasions. These little cakes are so good, it's difficult to just have one.

Ingredients

8 large eggyolks
2 c self-rising flour
1 c oil
1 c milk
1 1/2 c sugar
1 tsp vanilla

Steps:

1. Cream oil & sugar.
2. Add eggs and beat until creamy.
3. Add flour alternately with milk then add vanilla.
4. Line muffin tins with muffin cups and bake for 20-25 min at 350 degrees (pre-heated oven)
5. Let the muffins cool completely and roll tops on sugar
6. Note: The tins I used are traditional muffin tins used for this recipe which can be purchased from Oriental stores.

Line molds with paper liners, but if you don’t have you, you can use wax paper and grease it lightly and set aside.
Separate eggs and whisk egg yolks until smooth and set aside the egg whites for another recipe, such as Angel food cake, Meringue, Lengua de Gato, Sylvanas, and others.
Boil the coconut juice and sugar over low heat for 5 minutes and add in the star anise to infuse in the syrup at the last minute, set aside to cool.
