I just made these for my mother's annual Christmas Cookie Exchange - they turned out great and so seasonal if you put green and red sugar on top - perfect for the holiday! Recipe came from Colorado Colore: A Palate of Tastes - cooking time does not include hour to chill . . .

4 1/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
1 cup butter, softened
1 cup vegetable oil
1 cup sugar
1 cup confectioners' sugar
2 eggs
1 teaspoon vanilla extract

Steps:

  • Sift flour, baking soda, cream of tartar and salt together.
  • Beat butter, oil, sugar and confectioner's sugar in separate mixing bowl until creamy.
  • Add eggs and vanilla and beat until smooth.
  • Add dry ingredients gradually and beat until well blended.
  • Chill, covered for 1 hour.
  • Shape dough into 1 inch balls and coat balls with additional sugar.
  • Arrange balls on ungreased cookie sheet.
  • Flatten with bottom of glass dipped in sugar. Press in additional color sugar for holiday decoration.
  • Bake at 350 degrees for 8-10 minutes or until lightly brown.
  • Cool and store in airtight container.
  • For variations: Add 1 tsp of almond extract or lemon extract, add 1/2 crushed almonds or hazelnuts, add 1 TBS finely chopped lemon zest, add 1 TBS crushed peppermint candies, roll in colored sugar for holidays, or use decorative glass to create pattern on each cookie.

This recipe came from the back of a box of Quaker Oats. I have not tried it yet but thought it looked tasty with lots of vitamins and fiber. I will be trying it with butter instead of margarine and I think I might substitute chopped dates for the prunes as well. The pumpkin and spices make think of Fall.

2 cups oats (quick or old fashioned, uncooked)
1 cup granulated sugar
1/2 cup margarine
1 cup pumpkin (canned)
2 egg whites or 1 egg
1 teaspoon orange peel, grated
1 cup flour (all-purpose)
1 teaspoon pumpkin pie spice or 1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pitted prunes, finely chopped
1/4 cup walnuts, finely chopped
1/2 cup powdered sugar
1 tablespoon orange juice

Steps:

  • Heat oven to 350°F Lightly spray cookie sheets with cooking spray.
  • For cookies, beat sugar and vegetable oil spread with electric mixer in large bowl until well blended. Add pumpkin, egg whites and orange peel; beat well. (Mixture will look curdled.)
  • In separate bowl combine oats, flour, pumpkin pie spice, baking soda and salt. Add oat mixture to wet mixture and mix well.
  • Stir in prunes and walnuts.
  • Drop dough by rounded tablespoonfuls about 2 inches apart on cookie sheets.
  • Bake 11 to 13 minutes or until lightly browned. (Do not overbake. Centers of cookies will be soft.) Cool 1 minute on cookie sheets; remove to wire racks. Cool completely.
  • For glaze, combine powdered sugar and orange juice in small bowl; mix well. Drizzle glaze over cooled cookies. Let cookies stand until glaze sets. Store tightly covered.

Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. 1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
Additional sugar

Steps:

  • Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and baking soda; gradually beat into creamed mixture., Shape into 1-in. balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 10-12 minutes. Remove to wire racks to cool.
