4 medium sweet bell peppers
1/2 pound ground beef
1/4 cup finely chopped onion
2 cups cooked brown rice
1 can (6 ounces) tomato paste
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon spicy brown mustard
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1 cup vegetable broth
1 cup shredded cheddar cheese

Steps:

  • Cut peppers in half lengthwise and remove seeds; set aside. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the rice, tomato paste, ketchup, Worcestershire sauce, mustard, garlic salt and pepper. Spoon into peppers., Place in a greased 13x9-in. baking dish; pour broth around the peppers. Cover and bake at 350° for 30 minutes. Sprinkle with cheese. Bake, uncovered, 5 minutes longer or until cheese is melted.

8 ounces American cheese, cubed
1 teaspoon cornstarch
1 12-ounce can evaporated milk
Kosher salt and freshly ground pepper
1 tablespoon unsalted butter
1 pound ground beef sirloin
Kosher salt and freshly ground pepper
1 32-ounce bag frozen potato tots
Ketchup, yellow mustard, dill pickle chips and toasted sesame seeds, for serving

Steps:

  • Make the cheese sauce: Toss the cheese and cornstarch together in a bowl until totally coated. Set a medium saucepan over low heat. Add the evaporated milk. Once the milk is warm, whisk in the cheese mixture and cook, stirring constantly, until all the cheese is melted and the sauce is silky and smooth, about 5 minutes. Season with salt and pepper.
  • Cook the beef: Heat a large skillet over medium-high heat. Add the butter and ground beef and cook, stirring, until the exterior is caramelized and the inside is just cooked through, about 10 minutes. Season with salt and pepper and keep warm over low heat.
  • Assemble the cups: Fry or bake the tots as the label directs. Divide the warm tots among small cups and top with about a tablespoon of the cheese sauce, then a tablespoon of the ground beef. Top each with a small squiggle of ketchup and mustard and nally a pickle on top and a light sprinkle of sesame seeds.

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. Steps:

  • Crumble and cook the beef in a skillet adding salt and pepper to season. Drain.
  • Mix in ketchup, Worcestershire, mustard, and brown sugar.

12 slices white bread
8 ounces lean ground beef
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
6 slices bacon
1 medium red onion, chopped
1 tablespoon spicy mustard
1 tablespoon sweet pickle relish
3 ounces sharp Cheddar, cut into 12 cubes (about 3/4-inch cubes)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 cup milk
1/4 cup sour cream
2 large eggs
Our Special Sauce:
1/4 cup mayonnaise
2 tablespoons ketchup
Garnishes:
Shredded romaine lettuce
Sliced tomatoes
Chopped red onion
Dill pickle slices

Steps:

  • For the cupcakes: Preheat the oven to 400 degrees F. Line one 12-cup standard muffin tin with paper cupcake liners. Spray the liners with baking spray.
  • Cut a 2-inch round from each slice of bread and toast in the oven on a baking sheet until lightly browned. Save the rest for breadcrumbs. Place a piece of toast in the bottom of each cup and set aside.
  • Cook the ground beef in a 10-inch skillet over medium heat until browned, stirring occasionally, about 6 minutes. Stir in 1/2 teaspoon salt and the pepper. Drain off any fat, if necessary, and place the beef in a medium bowl; set aside.
  • Wipe out the skillet with a paper towel and cook the bacon over medium heat until crisp, turning once, about 6 minutes. Remove and drain on paper towels.
  • Remove all but 1 tablespoon of the bacon fat from the skillet and add the onions. Cook over medium heat, stirring frequently, until the onions are very soft, about 8 minutes. Stir in the mustard and relish. Stir into the bowl with the ground beef. Divide evenly between the prepared cups.
  • Place a cheese cube in each cup and push gently down into the meat mixture.
  • Whisk together the flour, baking powder and remaining 1/4 teaspoon salt in a medium bowl. Whisk together the milk, sour cream and eggs in a 1-quart glass measuring cup. Add the milk mixture to the flour mixture and whisk just until blended. Return to the measuring cup. Pour over the beef mixture.
  • Bake until a toothpick inserted into the center of the cupcakes comes out clean, 18 to 20 minutes. Cool the cupcakes in the tin on a rack for 10 minutes.
  • For the sauce: Combine the mayonnaise, ketchup and relish.
  • To assemble: Drizzle the cooled cupcakes with the sauce. Garnish with the reserved bacon and with lettuce, tomato, onions and pickles.

1 (12 ounce) package frozen riced cauliflower
1 pound lean ground beef
1 medium red onion, chopped
½ cup reduced-sugar ketchup

1 tablespoon dill pickle relish, or to taste
1 ½ cups shredded reduced-fat Cheddar cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Slice peppers in half lengthwise. Remove and discard core and seeds. Place peppers in a baking dish.
  • Bake in the preheated oven until tender, 30 to 40 minutes.
