salt, to taste
½ lb spaghetti
2 tablespoons olive oil
2 tablespoons unsalted butter
2 teaspoons coarsely ground black pepper
4 oz grated parmesan cheese, or pecorino romano cheese

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta for 1 minute less than the package instructs, until al dente. Save 1 cup (240 ml) pasta water, then drain.
  • Heat a large sauté pan over medium heat. Add the olive oil, butter, and pepper, and stir to combine.
  • Stir in the reserved pasta water.
  • Toss in the cooked pasta. Reduce the heat to low.
  • Add the Parmesan and toss until the cheese is melted and the pasta is well-coated.
  • Season with salt, if desired.
  • Enjoy!

My Grandmother made this for us some 50 years ago. I have found it to be a great kid pleaser, even the fussy ones! It is affordable and simple to make. I like it better reheated for two minutes in the microwave and it freezes well.

1/2 lb spaghetti
1/2 lb sharp to old cheddar cheese, cubed
1 large onion, chopped
1 (19 ounce) can tomato juice
butter or olive oil
salt and pepper

Steps:

  • Prepare spaghetti pasta according to package directions.
  • While spaghetti is cooking; in a separate saucepan add butter or olive oil, chopped onion and salt.
  • Cook onions until they are soft (careful not to burn your onions).
  • Add the tomato juice and bring to a slight boil.
  • Add the cheese and blend until the cheese is almost melted.
  • Drain spaghetti and place in an oven proof dish.
  • Pour the sauce over spaghetti and mix together.
  • Place in a 350 F oven for about 10 - 15 minutes to allow the noodles to absorb the sauce.

1 pound ground beef
1 medium onion, chopped
1 jar (24 ounces) pasta sauce
1/2 teaspoon seasoned salt
2 large eggs
1/3 cup grated Parmesan cheese
5 tablespoons butter, melted
2 cups 4% cottage cheese
4 cups shredded part-skim mozzarella cheese
Chopped fresh basil, optional

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente. Meanwhile, in a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef into crumbles; drain. Stir in pasta sauce and seasoned salt; set aside., In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat., Place half of the spaghetti mixture in a greased 13x9-in. or 3-qt. baking dish. A kid favorite and a parent's favorite because it is so easy. When you want to go out, make this and the kids won't even know you are gone. I use medium cheddar but you can add different cheeses to this recipe. It was my favorite as a kid. Very cheesy and fun! This recipe is good by itself.

750 g cheddar cheese, Diced
1 (16 ounce) can diced tomatoes, Diced
1 (6 ounce) can spaghetti sauce
1 (8 ounce) box spaghetti noodles
1 teaspoon salt

Steps:

  • Dice cheddar cheese into small cubes.
  • Put diced cheese in an ovenproof bowl.
  • Add 1 can diced tomatoes, Spaghetti Sauce, salt and pepper if desired.
  • Partially cook 4 to 6 portions of spaghetti.
  • Drain.
  • Add spaghetti to bowl.
  • Mix all together (I use my hands).
  • Bake for 1 hour at 350 degrees until golden crispy and gooey.

Unsalted butter, for greasing
1 1/2 pounds spaghetti
Kosher salt and freshly ground black pepper
8 ounces imported fontina cheese, coarsely shredded (2 cups)
8 ounces Gruyere, coarsely shredded (2 cups)
8 ounces mozzarella, coarsely shredded (2 cups)
4 ounces Gorgonzola dolce, crumbled

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish.
  • Cook the spaghetti in a large pot of boiling salted water until al dente. Drain well and spread the spaghetti on a baking sheet; let cool.
  • In a large bowl, toss the fontina with the Gruyere and mozzarella. Spread half of the spaghetti in the prepared baking dish in an even layer. Sprinkle half of the mixed cheeses and half of the Gorgonzola over the spaghetti and season with salt and pepper. Repeat with another layer of spaghetti, mixed cheeses, Gorgonzola and salt and pepper.
  • Bake the spaghetti in the center of the oven until the top is golden brown, about 40 minutes. Let cool slightly before cutting into squares and serving.

Steps:

  • Bring about 3 quarts water to a boil and add linguine, stirring down so the pasta is completely immersed in the water. Add salt and cook until tender, stirring strands often, 8 to 10 minutes. Drain.
  • Return pasta to the kettle it was cooked in, and add butter, olive oil, basil, pepper and 1/2 cup cheese, and toss to blend. Serve with additional Parmesan cheese on the side.
