The CHEESIEST Macaroni and Cheese EVER image

The absolute cheesiest mac and cheese recipe ever! 5 cheeses make up this dish of comfort.

Number Of Ingredients 13

1 or 1 1/2 pounds elbow macaroni
4 qt chicken broth
2 TBS butter
12 oz can evaporated milk
1 cup half and half
1 tsp onion powder
2 tsp salt
2 tsp white pepper
1 cup shredded American cheese
1/2 cup shredded Colby Jack cheese
1 cup shredded Mozzarella cheese
1 cup shredded Muenster cheese
1/2 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 F
  • Pour broth in a large pot
  • Bring to a boil
  • Stir in the elbow macaroni and cook according to package instructions until al dente.
  • Drain macaroni. Do NOT rinse.
  • Pour macaroni back into the pot; heat off
  • Stir in the butter until it melts
  • Pour in the evaporated milk and half and half.
  • Turn heat back on medium.
  • Bring mixture to a simmer
  • Add in the salt, onion powder, and white pepper.
  • Stir in all of the American cheese and half of the rest of the cheeses EXCEPT the cheddar cheese.
  • Once cheese melts, turn off the heat.
  • Butter a 9x13* baking dish.
  • Pour the macaroni into the dish in a single layer.
  • Add the remaining cheese on top including the cheddar cheese.
  • Bake for 30-35 or until the cheese is as brown on top as you'd like.
  • Allow it to rest for 10 minutes.
  • Enjoy!

16 oz. dry radiatore macaroni ((or elbow macaroni) )
1/4 cup unsalted butter ((half stick))
1/3 cup UNBLEACHED all-purpose flour
1 1/2 cups heavy whipping cream
1 tsp. sea salt
1/2 tsp. black pepper
6-7 drops hot sauce
2/3 cup mozzarella cheese (shredded (or substitute Monterey Jack cheese))
1 1/3 cups sharp cheddar cheese (shredded)
8 oz. block sharp cheddar cheese (sliced (or use white cheddar cheese))
1/4 cup unsalted butter (melted (half stick) (See note below))
2/3 cup Panko bread crumbs ( (see note below))
fresh parsley (for garnish)

Steps:

  • Preheat oven to 350°.
  • Grease an 8x12 or large oval glass baking dish.
  • In a large stock pot, boil the pasta according to package instructions.
  • Drain water and return pasta to the stock pot.
  • Meanwhile in a medium-sized saucepan, melt 1/4 cup butter.
  • Whisk in flour and cook 1 minute whisking continuously, until mixture is bubbly.
  • Slowly stir in the cream adding about ¼ cup at a time.
  • Add salt, pepper and hot sauce and stir 1 more minute.
  • Turn heat to low and gradually stir in the mozzarella and shredded cheddar cheese.
  • Stir frequently until the cheese melts completely.
  • Sauce will be very thick.
  • Remove from heat.
  • Stir the drained macaroni into the cheese sauce.
  • Pour half of the mac and cheese mixture into the prepared baking dish.
  • Layer all of the cheese slices over top of the macaroni.
  • Top remaining half of the mac and cheese over cheese slices.
  • In a microwavable glass, melt remaining 1/4 cup butter in microwave.
  • Stir in the panko crumbs.
  • Sprinkle the bread crumb mixture over top of the mac and cheese.
  • I used about half of the Panko bread crumb mixture).
  • (Bake for 20-25 minutes at 350°, or until mixture is hot and bubbly.

1 cup evaporated milk
2 large eggs
2 cups grated havarti cheese (about 6 ounces)
1 1/2 cups grated Colby jack cheese (about 4 ounces)
Pinch of grated nutmeg
1/4 cup sour cream

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Combine the evaporated milk, eggs, havarti, Colby jack, 1/2 teaspoon salt and the nutmeg in a large saucepan over medium heat. Cook, whisking constantly, until smooth and thickened, about 8 minutes. Remove from the heat.
  • Add the pasta and sour cream to the sauce; toss to coat, then let sit 5 minutes so the sauce thickens slightly. Add the reserved cooking water to loosen, if desired.

1 cup cottage cheese (not low-fat)
2 cups milk (not skim)
1 teaspoon dry mustard
Pinch of ground cayenne
Pinch of ground nutmeg
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound sharp or extra-sharp Cheddar, grated
1/2 pound elbow pasta, uncooked

Steps:

  • Heat oven to 375 degrees and position an oven rack in upper third of oven. Use 1 tablespoon butter to grease a 9-inch round or square baking pan.
  • In a blender, purée cottage cheese, milk, mustard, cayenne, nutmeg and salt and pepper. Reserve 1/4 cup grated Cheddar for topping. In a large bowl, combine remaining grated Cheddar, milk mixture and uncooked pasta. Pour into prepared pan, cover tightly with foil and bake 30 minutes.

  • Cook macaroni according to package directions; drain.

This is pretty close and in a house of picky eaters, the first time I made it--it was gone in minutes. I have a rather large family, so you can halve the recipe to make for a smaller family. Also the larger recipe is good if you want to serve as a meal.

1 lb macaroni (I use either elbows or springs)
4 cups milk
1 1/2 lbs shredded cheddar cheese (I prefer to shred myself)

1/2 cup butter
1/2 medium onion, diced small
salt and pepper

Steps:

  • This step will take approximately 20 minutes, so preheat oven to 350° while working on this step.
  • Put macaroni to boil.
  • In a medium pot heat butter and sauté onions.
  • Add milk, flour, salt and pepper; bring to a rolling boil.
  • Slowly add cheddar cheese, stirring while adding.
  • After cheddar has dissolved, add the mozzarella, stirring while adding.
  • Drain macaroni.

Amanda Hesser brought this recipe to The Times in a 1998 article about a return to simply-prepared, down-home foods in response to the brash, over-the-top 90's style of cooking. It's an adaptation of one found in Pam Anderson's book, "The Perfect Recipe," and it calls for stirring the mixture every five minutes while it is baking. This gives it the ideal balance of lightness and creaminess -- a detail that is missing from most macaroni and cheese recipes.

1 cup fresh bread crumbs from French or Italian bread
2 teaspoons salt, plus a pinch
1 1/2 tablespoons melted butter, plus 4 tablespoons butter at room temperature

1/4 teaspoon hot red-pepper sauce
1/4 teaspoon freshly ground black pepper

  • Preheat oven to 350 degrees. Place a 1 1/2-quart heat-proof dish, such as a souffle pan, in oven to warm.

  • Place dish of macaroni and cheese in the oven, and bake for 5 minutes. Remove dish from oven and add about half of the remaining evaporated milk, and half of the remaining cheese. Stir well, and return pan to oven. Bake 5 minutes longer, remove pan from oven, and stir thoroughly. If mixture does not look moist and creamy, add a little more of the milk and cheese. Return to oven for an additional 20 minutes, removing pan from oven halfway through to stir in remaining evaporated milk and cheese.
  • While macaroni is baking, add pan of bread crumbs to oven. Bake until bread crumbs are toasted and golden brown, 10 to 15 minutes. Remove from oven and set aside. When macaroni has baked, sprinkle surface with toasted bread crumbs, and serve immediately.
