1 lb. Yukon gold potatoes (about 4), cut into 1/2-inch cubes
1/2 cup fat-free reduced-sodium chicken broth
3 cups small broccoli florets
1 cup KRAFT Shredded Sharp Cheddar Cheese

Steps:

  • Cut sausage lengthwise in half, then crosswise into slices. Cook in large nonstick skillet on medium-high heat 5 min. or until lightly browned, stirring occasionally.
  • Add potatoes and chicken broth; stir. Bring to boil; cover. Simmer on medium heat 5 min. Stir in broccoli; cook, covered, 5 min. or until crisp-tender, stirring occasionally.
  • Top with cheese; cook, covered, 2 to 3 min. or until melted.

CRISPY CHEESE AND BACON POTATOES



Crispy Cheese and Bacon Potatoes image

Crispy roasted potatoes, topped with melting cheese and plenty of crisp bacon are a great side dish for any meal.

Number Of Ingredients 6

1/2 pound bacon
3 extra large russet potatoes (peeled and chopped into 1/2"-3/4" pieces, about 6 cups worth)
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
1 1/2 cups shredded cheddar or Mexican blend shredded cheeses
3 green onions (sliced thin)

Steps:

  • COOK THE BACON: Spread the bacon strips out across a large rimmed baking sheet pan and place on the middle rack of a COLD oven. Set the temperature to 400 degrees. Set a timer for 16 minutes and check the bacon. Remove it from the oven when it is as crisp or crunchy as you like. I remove ours at 18 minutes and it's a great balance of chewy crunch. If you like your bacon crispy enough to crumble, you will probably want to cook it another minute past that.
  • COOK THE POTATOES: While the bacon is cooking, peel and chop the potatoes. Transfer the bacon to a paper towel lined plate to drain. There should be 2-3 tablespoons of bacon grease left on the sheet pan. (If there is more than that, drain off a bit.) Put the potatoes on the pan and toss with tongs to thoroughly coat them in the bacon grease. Sprinkle with salt and pepper. Spread the potatoes out in a single layer and bake for 20 minutes, stir well and bake an additional 20 minutes. Stir again, making sure that none of the potatoes are sticking to the tray. Bake another 15 minutes.
  • Chop the bacon into small pieces. Remove the potatoes from the oven, stir again and sprinkle generously with shredded cheese and chopped bacon. Return the tray to the oven and bake an additional 2-3 minutes, until the cheese has melted. Top with sliced green onions just before serving. Enjoy!

2 cups shredded Cheddar cheese
¼ cup butter
1 ½ cups sour cream
½ cup diced onions

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Grease a 2-quart casserole dish.
  • Place potatoes, with their skin, into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and refrigerate until cold; peel and dice.
  • Combine Cheddar cheese and butter in a saucepan over medium heat. Stir until almost melted, 3 to 4 minutes. Remove from heat. Blend in sour cream and onions.
  • Fold mixture into potatoes. Place potato mixture in the prepared casserole dish.
  • Bake in the preheated oven, uncovered, until bubbling and browned on top, about 25 minutes.

¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
¾ cup shredded Swiss cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a casserole dish.
  • Arrange sliced potatoes in the casserole dish; season with salt.

3 lbs Potatoes (thinly sliced (1/8 inch thick) (Russet or Yukon Gold))
1/4 cup Butter
1/4 cup Flour
2 cups Milk (2% or whole milk)
1 cup Chicken Broth
1 tsp Salt
1/2 tsp Pepper
1 Tbsp minced garlic
2 cups Sharp Cheddar Cheese (shredded)

Steps:

  • Preheat the oven to 350 degrees F and spray a 9X13 baking dish with a non stick cooking spray.
  • Melt the butter in a small sauce pan and then whisk in the flour and the minced garlic.
  • Whisk in the chicken broth and then gradually add in the milk and whisk constantly until well combined and smooth. Then stir in the salt and pepper.
  • Cook on low until the sauce is smooth (whisking constantly).
  • Turn the heat off and then stir in the shredded cheddar cheese. Stir until the cheese is melted and well combined.
  • Then place half of the potatoes in the baking dish. Pour half of the cheese sauce on top of the layer of the potatoes in the pan. Repeat with the remaining potatoes and cheese sauce.
  • Bake uncovered for 55-70 minutes at 350 degrees F until the potatoes are fork tender.
  • Switch the oven to the broil setting and broil for 3-5 minutes until the top of the scalloped potatoes are browned slightly.
  • Remove and let the potatoes set at room temperature for 15-20 minutes before serving.
  • Serve warm and enjoy!
