Cranberry Trifle is a show-stopping, yummy dessert that's perfect for the holidays! And, so easy. Recipe is adapted from Dec. 2008 edition of Everyday Food. Note: Use a 3 quart trifle/serving dish.

24 ounces cranberries (two bags, fresh or frozen)
2 cups sugar
2 cups water
1/4 cup crystallized ginger, chopped
1 tablespoon grated fresh orange zest
1/4 cup brown sugar
1/4 cup granulated sugar
1 1/2 teaspoons vanilla extract
8 ounces cream cheese, softened
2 cups heavy cream
24 ounces poundcake, cut into 3/4-inch thick slices (two loaves all-butter pound cake)
additional grated fresh orange zest, to garnish (optional)

Steps:

  • Make compote:.
  • In a medium saucepan cook the cranberries, 2 cups of sugar, 2 cups of water, ginger, and orange zest for about 5-8 minutes over medium-high heat, until some of the berries just begin to burst. Let compote cool completely.
  • Make Cream Filling:.
  • Using an electric mixer, beat cream cheese, brown sugar, 1/4 cup granulated sugar and vanilla on high until well combined. With mixer on medium, gradually add heavy cream; continue beating until soft peaks form.
  • Arrange 1/3 of cake in a 3 quart trifle dish. Spoon 1/3 of compote over cake; spread to sides of dish. Dollop 1/3 of cream filling over compote; spread to sides of dish. Repeat twice more, ending with cream filling. Cover; refrigerate at least 2 hours (or up to 1 day). Garnish with freshly grated orange zest (or candied orange zest), if desired.

1-1/2 cups cold fat-free milk
1 package (1 ounce) sugar-free instant vanilla pudding mix
1 cup fat-free vanilla yogurt
6 ounces reduced-fat cream cheese, cubed
1/2 cup reduced-fat sour cream
2 teaspoons vanilla extract
1 carton (12 ounces) frozen reduced-fat whipped topping, thawed and divided
2 prepared angel food cakes (8 ounces each), cut into 1-inch cubes
1 pint fresh blackberries
1 pint fresh raspberries
1 pint fresh blueberries

Steps:

  • Whisk milk and pudding mix for 2 minutes. Let stand until soft-set, about 2 minutes more. Meanwhile, beat yogurt, cream cheese, sour cream and vanilla until smooth. Fold in pudding mixture and 1 cup whipped topping., Place one-third of cake cubes in a 4-qt. trifle bowl. Top with one-third of pudding mixture, one-third of berries and half of remaining whipped topping. Repeat layers once. Top with remaining cake, pudding and berries. Serve immediately or refrigerate.

2 1/4 cups granulated sugar
2 tablespoons finely grated peeled fresh ginger
1 bar (8 ounces) cream cheese, room temperature
1/4 cup packed light-brown sugar
1/2 teaspoon pure vanilla extract
2 cups heavy cream
2 homemade or store-bought all-butter pound cakes (12 ounces each), cut into 3/4-inch-thick slices
Candied Orange Zest, for garnish (optional)

Steps:

  • In a medium saucepan, combine cranberries, 2 cups granulated sugar, ginger, and 2 cups water. Bring to a simmer over medium; cook until cranberries begin to burst, 8 to 10 minutes. Let compote cool completely.

2 cups cooked cranberry sauce (not jelly)
1/4 cup cream Sherry (sweet)
1/2 cup chilled heavy cream
1/2 cup melted but cool vanilla ice cream
1 1/2 cups cubed (1/2 inch) pound cake

Steps:

  • Stir together cranberry sauce and Sherry in a bowl. Set aside.
  • Combine heavy cream and ice cream in a bowl, then set in a larger bowl of ice and cold water and beat with an electric mixer until stiff.
  • Divide half of cake cubes among 4 dessert glasses. Top each serving with a scant 1/4 cup cranberry mixture, then top each with 1/4 cup whipped-cream mixture. Repeat layering with remaining cake cubes, cranberry mixture, and whipped-cream mixture.
  • Chill, loosely covered with plastic wrap, at least 8 hours for flavors to develop.

1 (300 ml) can eagle brand sweetened condensed milk (regular or low-fat)
1 1/2 cups cold water
1 (102 g) package instant pudding mix
1 (1 liter) container frozen whipped topping, thawed
1 (298 g) package frozen pound cake, thawed and cubed
1 (540 ml) can cherry cranberry pie filling or 1 (540 ml) can cherry pie filling

Steps:

  • Combine Eagle Brand and water. Add pudding mix; beat about 2 minutes. Chill until just thickened, about 15 minutes. Fold in whipped topping.
  • Spoon 1/3 of the pudding mixture into 3L: serving bowl; top with half of the cake cubes. Top with half of the pie filling and 1/3 of the pudding mixture. Repeat with remaining cake cubes, pie filling and pudding mixture.
  • Cover and chill overnight.

You can use either a homemade angel food cake or a store bought one. Super easy to prepare and the dish always come home licked clean. Works especially well when you need to prepare dessert for a large number of people.

1 prepared and cooled angel food cake
4 -6 cups prepared vanilla pudding, cooled if necessary
2 (16 ounce) cans cherry pie filling (Lite works fine)

Steps:

  • Tear the angel food cake into 1 inch cubes. Place them in a single layer in a 13x9 inch pan.
  • (The pudding amount is 2 small boxes or 1 large US box pudding, either instant or cooked.) Pour the pudding over the cake; top with the cherry pie filling.
  • Can also be layered in a trifle bowl or in individual parfait glasses.
  • I've never tried it but I bet chocolate pudding would be good too. :).
