- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.
- Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)
- Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
- Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
- Bake in the preheated oven for 20 minutes, or until golden brown.

Official Contest Entry: Simply Potatoes 5Fix. Easy and quick to prepare! I usually scramble the hamburg and drain and then put in a freezer bag and freeze. When you come home from work and need a hearty dinner it only takes minutes to put together. The hamburg is already cooked and the Simply Potatoes are ready in 2 mins!

Steps:
- Pre-Heat oven to 350 degrees.
- Scramble hamburg in a frying pan, drain grease return to pan.
- Add 1 can of cream of mushroom soup heat to combine with hamburg.
- Transfer to a casserole dish (I use an 8" x 8").
- Next sprinkle 1 cup of shredded sheddar cheese over top.
- Drain water out of corn and add layer of corn over the cheese.
- Heat Simply Potatoes for 2 mins in microwave, then stir up good till fluffy.
- Spread over top of corn layer.
- Bake in 350 degree oven about 15-20 mins, just till the top peaks of potatoes start to lightly brown.

BIRD'S EASY CHEESY SHEPHERD'S PIE
This is a very flavorful Shepherd's Pie. It puts a new twist on an old favorite by the addition of cream cheese and a dash of ground mace, and it's super easy to make. You can use any leftover veggies such as corn, carrots, string beans, etc. My photo was made using a shallow pan, because my deep dish pan was busy at the time. :)

Steps:
- Preheat oven to 375°F Mix potatoes, cream cheese, half of the cheddar cheese, and garlic until well blended (use microwave if necessary). Set aside.
- Brown meat, onion, Italian seasoning, and ground mace in large skillet and drain. Return meat back to pan and stir in vegetables and sour cream. Heat to warm.
- Pour meat mixture into a deep 9" pie crust. Cover with potato mixture.
- Sprinkle with remaining cheddar cheese and paprika. Bake for 25 minutes or till heated through.

- Place potatoes in large saucepan and cover with cold water. Bring potatoes to a boil and cook until fork-tender, about 15 minutes.
- Preheat oven to 400°F. Spray 8-inch baking dish with cooking spray. Cook ground beef and onion in large skillet over medium heat until crumbled and brown. Stir in flour and cook 1 minute.
- Stir in vegetables, tomato paste, beef broth, Worcestershire sauce, thyme and pepper and cook until thickened, about 5 minutes. Pour into baking dish.
