1 (12 ounce) package peanut butter chips
12 ounces raw Spanish peanuts

Steps:

  • Combine chocolate chips and peanut butter chips in top of double boiler. Stir frequently over low to medium heat until melted; add peanuts and stir.
  • Drop by teaspoon full on wax paper. Allow to cool.

5 cups cornflakes
3 cups crisp rice cereal
1 cup dry roasted peanuts
1 cup sweetened shredded coconut
1 cup light corn syrup
1/4 cup butter, cubed
1/2 cup half-and-half cream
1/2 cup sugar

Steps:

  • In a large bowl, combine the first four ingredients; set aside. In a heavy saucepan, combine corn syrup, butter, cream and sugar; cook and stir over medium heat until sugar is dissolved. Cook until a candy thermometer reads 234° (soft-ball stage). , Pour over cereal mixture and toss to coat. Pat into a greased 13-in. x 9-in. pan. Cool before cutting.

1 12 oz bag white chocolate chips (I use Guittard)
1 12 oz bag extra semisweet chocolate chips (I use Guittard)
1/4 cup creamy peanut butter
3 tbsp shortening
4 cups lightly salted peanuts

Steps:

  • Instant Pot Method: Pour 2 cups of water into the liner of the Instant Pot. Set the Instant Pot to saute HIGH. Place a large glass bowl on top of the Instant Pot to create a double boiler.
  • Add both types of chocolate, the peanut butter and shortening to the bowl.
  • Stir occasionally until melted. SKIP TO STEP 5.
  • Microwave Method: Microwave both types of chocolate, peanut butter and shortening until smooth. Do this by microwaving for 30 second intervals, stirring in-between until smooth.
  • Once the chocolate is melted and smooth, stir the peanuts into the chocolate making sure to coat all peanuts evenly.
  • Using spoon or cookie scoop, portion the chocolate peanuts out into small clusters. Place the peanut clusters onto parchment paper to set.
  • Allow the peanut clusters to set completely before trying to remove. You can pop them the fridge to speed up this process.

1/2 cup creamy peanut butter
3 tablespoons unsalted butter
One 10-ounce bag marshmallows
7 to 8 cups lightly salted popcorn, freshly popped or your favorite store brand
One 7.25-ounce bottle hardening chocolate sauce, such as Magic Shell

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray. Set aside.
  • Melt the peanut butter and butter together in a medium saucepan over low heat, then stir in the marshmallows. Continue to stir until the marshmallows are melted.
  • Remove the pan from the heat and stir in the popcorn to coat evenly in the melted marshmallow mixture. Pour the popcorn mixture into the coated baking dish and spread out into an even layer. 2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks (6 ounces) unsalted butter, melted and cooled slightly
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2/3 cup creamy peanut butter
2 teaspoons pure vanilla extract
2 cups bittersweet chocolate chips (about 12 1/2 ounces)
1/2 cup chopped salted peanuts (about 2 ounces)

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line a 13by-9-inch baking pan with foil, letting the excess hang over the edges of the pan by about 1 inch (this will help you lift the bar easily from the pan in one piece). Spray the pan with cooking spray.
  • Mix the flour, baking soda and salt in a medium bowl. In a large bowl, whisk the melted butter and sugars until combined. Use a whisk or a rubber spatula to mix in the egg, egg yolk, peanut butter and vanilla until smooth. Fold in the flour mixture until just combined (be careful not to over mix the dough or the bars will be tough). Fold in the chocolate chips and the peanuts.
  • Scrape the dough into the prepared pan, pressing and smoothing the top with a rubber spatula. Bake until the top is slightly golden and firm to the touch and the edges are starting to pull away from the sides of the pan, 30 to 35 minutes. Let cool completely on a wire rack.
  • Lift up on the foil overhang to remove the bar from the pan, and transfer it to a cutting board. Use a ruler to cut it into 2-inch squares.

This candy is a must for gifts, parties, or special occasions, especially if your time is limited. NOTE: The butterscotch chips will NOT melt. When they are soft, they look shiney. Do not overcook, as the chocolate will burn. You may use more peanuts if desired. I usually throw in more to make sure the last pieces have some nuts in them.

1 (6 ounce) package NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels (1 cup) or 1 (6 ounce) package milk chocolate chips (1 cup)
1 (12 ounce) package butterscotch chips
1 (6 ounce) can salted peanuts (1 - 1 1/2 cups)

Steps:

  • Microwave chocolate and butterscotch chips in a 2 quart glass dish for 5-6 minutes on 60% power, or until melted.
  • Watch carefully!
  • (They don't actually melt, but look very shiny).
  • Add peanuts and mix well.

6 cups/200 grams cornflake cereal
1 (12-ounce/340-gram) bag large marshmallows
1 teaspoon kosher salt (such as Diamond Crystal)
1/2 cup/125 grams natural creamy peanut butter
4 ounces/115 grams semisweet chocolate (preferably bar chocolate), roughly chopped
Flaky sea salt, for sprinkling

Steps:

  • Grease a 9-inch square pan with butter and sprinkle 1/2 cup/17 grams of the cornflakes on the bottom of the pan.
  • In a large pot, melt the 6 tablespoons/85 grams butter over medium-low heat. Add the marshmallows and kosher salt, and cook, stirring often, until about half of the marshmallows have melted but the mixture is not completely smooth. Add the peanut butter and mix until just combined, keeping some lumps of marshmallow.

  • Place the chocolate in a small heatproof bowl and microwave it in 15-second intervals, stirring between intervals, until melted and smooth. Drizzle the chocolate over the bars in overlapping lines. (If using chocolate chips, scatter the chips onto the surface of the bars while they are still warm and let sit for 5 minutes, allowing the heat of the cornflakes to melt the chocolate before dragging a fork or toothpick through it to create lines.) Sprinkle the bars lightly with flaky sea salt, and set aside at room temperature (in a cool spot, if possible) until completely set, about 2 hours.
  • Cut into bars and serve. Bars will keep, wrapped well at room temperature, for up to 3 days.

My mom, trying to keep her eyes on the road, reached for her purse and asked me to look for a pen and piece of paper and wright it down. Since then it's been my Christmas staple that everyone looks forward to. They're perfect for any holiday or any event and especially bake sales. They are sooo easy and you'll be jelously asked for the recipie. Be warned - they are addicting!!!!

1/4 cup margarine
1 (10 ounce) bag marshmallows
1 (12 ounce) bag semi-sweet chocolate chips
1 teaspoon vanilla
2 cups salted peanuts

Steps:

  • The trick to these is to keep the heat low - that will make them soft and chewy. If the heat gets high they seem to come out more hardend but still mostly chewy. I've forgotton the vanilla at times and they still turn out tasting great. I have also used milk chocolate chips.
  • Melt butter over low heat in a large pan or skillet.
  • Add marshmellows, melting, stirring constantly, keeping heat on low.
  • When melted add choc chips stirring until melted.
  • Add vanilla, stirring, and then the peanuts, folding in and stirring until peanuts are covered (when chocolate mixture is sticking to most of the peanuts).
  • Remove from heat and quickly drop by spoonfuls onto greased parchment paper or parchment lined and greased 9 x 13 pan (to cut into squares). NOTE: wax paper will not work, they will stick to it even when greased.
  • Let cool on counter.
  • Store in tightly covered containers (with parchment in between layers) or Ziploc baggies.
  • Then repeat all above. (I usually have to make 3 batches!).
