CHEWY COFFEE COOKIES

Chewy Coffee Cookies image

Provided by Food Network Kitchen

Time 2h

Yield about 24

Number Of Ingredients 11

3 tablespoons coffee beans
1/3 cup turbinado sugar
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 stick unsalted butter, at room temperature
1 cup packed dark brown sugar
1 large egg
2/3 cup confectioners' sugar
2 to 4 teaspoons milk or water

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Coarsely grind the coffee beans in a coffee grinder. Combine 1 tablespoon ground coffee in a small bowl with the turbinado sugar; set aside. Transfer the remaining coffee to a medium bowl and whisk in the flour, salt, baking powder and cinnamon.
  • Beat the butter and brown sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg. Reduce the mixer speed to low and beat in the flour mixture until combined.
  • Roll tablespoonfuls of dough into balls, then roll each ball in the coffee-sugar mixture. Arrange 2 inches apart on the prepared pans.
  • Bake, switching the pans halfway through, until the cookies are just set around the edges but the centers are still soft, about 18 minutes. Let cool 3 minutes on the pans, then transfer to racks to cool completely.
  • Make the glaze: Whisk the confectioners' sugar and 2 teaspoons milk in a small bowl until smooth. Gradually stir in up to 2 more teaspoons milk until the glaze is thick but pourable. Spoon the glaze over the cookies. Let set, about 10 minutes.

THE BEST BROWNIES AKA CHOCOLATE CHEWY WONDERS

The Best Brownies AKA Chocolate Chewy Wonders image

The Best Chewy Brownies Recipe AKA Chocolate Chewy Wonders. These are for the people that love fudgey brownies!

Provided by Karlynn Johnston

Categories     Dessert

Time 30m

Number Of Ingredients 7

3/4 cup of butter
1 1/2 cups of white sugar
3/4 cup of cocoa
3 eggs
1 teaspoon vanilla
1 cup of chocolate chips or chocolate chunks
3/4 cup of flour

Steps:

  • Kick the tires and light the fires and preheat your oven to 350 degrees.
  • Melt the butter in a pot, remove from the heat and stir in the white sugar.
  • Once that is combined, mix in your cocoa.
  • Add in your eggs then add in the vanilla. If you are using chocolate chips instead of chocolate chunks, you can mix in the 2/3 of a cup after the eggs are thoroughly combined into the mix.
  • Once all that is mixed very, very well, add in your flour and barely stir it in. Just barely. I read somewhere that stirring the flour mixture creates gluten, which in turn creates the cakey texture I don't like for brownies. So in theory, the less you stir, the less gluten and then chewy brownies here we come!
  • Line a 9x9 pan with parchment paper.
  • I used chocolate chunks, which I placed on top of the batter. They are so heavy that they sink right into it. Bake at 350 degrees for 30-40 minutes, until the brownies pull away from the edges slightly. This is why I use the chunks, they sink in right to the top level of the brownies. Cool the brownies.

COFFEE BROWNIES

These brownies are the moistest, most chocolaty, and best brownies I have ever tasted, and I've tasted a lot. It takes time to prepare (and clean up), but it's well worth it. You may even want to prepare a pan for yourself! Just double the recipe.

5 ounces unsweetened chocolate, coarsely chopped
1 1/4 cups unsalted butter, softened
3 tablespoons espresso powder
1/2 teaspoon salt
2 1/2 cups sugar

ATK'S CHEWY BROWNIES

ATK's Chewy Brownies image

Rich, decadent perfect chocolate brownies made with three kinds of chocolate.

Provided by adapted slightly from America's Test Kitchen

Categories     Bars

Time 2h35m

Number Of Ingredients 12

1/3 C (1 oz) Dutch-processed cocoa powder
1 1/2 tsp instant coffee granules
1/2 C plus 2 tbsp boiling water
2 oz unsweetened chocolate,finely chopped
1/2 C plus 2 tbsp vegetable oil
4 tbsp (1/2 stick) butter, melted
2 large whole eggs, plus 2 large egg yolks
2 tsp vanilla extract
2 C (14 oz) granulated sugar
1 3/4 C (8 1/4 oz) all-purpose flour
3/4 tsp table salt
6 oz bittersweet chocolate chips or chunks cut into 1/2 " pieces

Steps:

  • Move an oven rack to the lowest position in the oven. Preheat the oven to 350 degrees. Line a 13x9" pan with aluminum foil (to lift out brownies after they're cooled) and spray the aluminum foil lightly.
  • In a large bowl, whisk the cocoa, coffee granules, and boiling water together until smooth. Add the finely chopped unsweetened chocolate and whisk together until melted and smooth.
  • Whisk in the oil and melted butter (the mixture will look slightly curdled but it'll blend later). Add the whole eggs and egg yolks, and vanilla and continue to whisk until smooth and totally combined.
  • Whisk in the sugar until fully incorporated. Add the flour and salt and stir completely together with a rubber spoon or spatula. Fold in the bittersweet chocolate pieces.
  • Pour the batter into the pan and bake until a toothpick inserted toward the sides of the brownies comes out lightly moist with a few crumbs. Mine took about 45 minutes, but start checking at 35 minutes.
  • Put the pan on a wire rack and let brownies cool for about an hour (so they won't fall apart). Lift the brownies from the pan by the aluminum foil flaps and set on the rack to completely cool.
  • Remove the aluminum foil and make 4 even cuts horizontally and also vertically (to equal 25 squares) and serve. Store in an airtight container for up to 4 days. Like they'll last that long.

Categories     Dessert

Time 30m

Number Of Ingredients 8

1/2 cup unsalted butter, (melted and HOT)
1 tablespoon cooking oil, ((olive oil or coconut oil are fine))
1 1/8 cup superfine sugar, ((caster sugar or white granulated sugar)*)
2 large eggs
2 teaspoons pure vanilla extract
1/2 cup all purpose ((or plain) flour)
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt

Steps:

  • Preheat oven to 350°F (175°C).
  • Lightly grease an 8-inch square baking pan with cooking oil spray. Line with parchment paper (or baking paper); set aside.
  • Combine hot melted butter, oil and sugar together in a medium-sized bowl. Whisk well for about a minute. Add the eggs and vanilla; beat until lighter in colour (another minute).
  • Sift in flour, cocoa powder and salt. Gently fold the dry ingredients into the wet ingredients until JUST combined (do NOT over beat as doing so well affect the texture of your brownies).
  • Pour batter into prepared pan, smoothing the top out evenly. (OPTIONAL: Top with chocolate chunks or chocolate chips.)
  • Bake for 20-25 minutes, or until the centre of the brownies in the pan no longer jiggles and is just set to the touch (the brownies will keep baking in the hot pan out of the oven). If testing with a toothpick, the toothpick should come out dirty for fudge-textured brownies.
  • Remove and allow to cool to room temperature before slicing into 16 brownies.
