Chewy fudgy homemade brownies made completely from scratch. Try them with chocolate frosting and sprinkles on top! You will never make a box mix again, trust me.

1/2 cup (115g) salted or unsalted butter*
two 4-ounce (226g) semi-sweet chocolate bars, coarsely chopped*
3/4 cup (150g) granulated sugar
1/4 cup (50g) packed light or dark brown sugar
3 large eggs
1 teaspoon pure vanilla extract
1/2 cup + 2 Tablespoons (79g) all-purpose flour (spoon & leveled)
2 Tablespoons (10g) unsweetened natural or dutch-process cocoa powder
1/4 teaspoon salt
1 cup (180g) semi-sweet chocolate chips
optional: chocolate buttercream

Steps:

  • Melt the butter and chopped chocolate in a medium saucepan on medium heat, stirring constantly. Or melt in a large microwave safe bowl in 20 second increments, stirring after each. Remove from the heat, pour in a large mixing bowl, then allow to slightly cool for 10 minutes.
  • Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9×9 inch square baking pan* with aluminum foil or parchment, leaving an overhang on all sides. Set aside.
  • Whisk the granulated and brown sugars into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently whisk in the flour, cocoa powder, and salt. Once combined, fold in the chocolate chips.
  • Pour/spoon batter into the prepared baking pan and bake for 35-36 minutes or until the brownies begin to pull away from the edges of the pan. A toothpick inserted in the center should come out with only a few moist crumbs when the brownies are done. All ovens are different, so keep an eye on them after 30 minutes and use the toothpick test to see when yours are finished.
  • Allow the brownies to cool completely in the pan set on a wire rack. Once cooled, lift the foil out of the pan using the overhang on the sides. Frost with chocolate buttercream, if desired. Cut into squares. For neat squares, I use a very sharp knife and wipe it clean with a paper towel after each cut.
  • Unfrosted brownies stay fresh in an airtight container at room temperature for 1 week. Frosted brownies stay fresh in an airtight container at room temperature for 2 days or in the refrigerator for up to 1 week.

1 and 1/2 cups (300 grams) granulated sugar, divided
2 large eggs plus 1 egg yolk
3/4 cup (128 grams) chocolate chips

Steps:

  • Preheat oven to 350 degrees (F) (175 degreed C). Line an 9x9-inch baking pan with parchment paper. Spray lightly with non-stick baking spray and set aside.
  • In a large bowl, sift together the flour, baking powder, salt, cocoa powder, and espresso powder. Set aside until needed.
  • In a medium saucepan, combine the butter, oil, and 1/2 cup of the sugar. Heat over medium heat, stirring frequently, until butter is completely melted. Remove from heat.
  • In a large mixing bowl, combine the eggs and remaining sugar. Whisk until well combined, about 30 seconds.
  • Slowly, pour the warm butter mixture into the egg mixture, adding it very gradually (a little bit at a time) and whisking constantly until completely combined.
  • Add in the dry ingredients and chocolate chips and, using a rubber spatula, slowly stir until just combined. *Do not over mix! Stop staring when you see the last trace of dry ingredients. Over mixing will give you cakey brownies.
  • Scrape the batter into the prepared pan and smooth the top.
  • Bake for 30 minutes, or until the edges are firm and the top is shiny and slightly cracked.
  • Place pan on a cooling rack and cool completely before slicing.

  • Preheat oven to 350°F (175°C).

I will be the first to admit that I am a complete brownie snob. I believe a brownie should be extremely fudgy without being under baked. I believe a brownie should be chewy; not caramel chewy, but chewy enough that the outer crust of the glorious concoction sticks a bit to my teeth as I chew it. I believe a good brownie should have slightly tougher, more chewy edges. They should NOT, however, resemble hard, stale bread that crunch and crumble as I bit into them. I'm not sure what it is that I find distasteful about the melted chocolate method that is involved in most of the chewy, fudgy brownie recipes. It just somehow feels to me they are not completely made from scratch; like I am cheating somewhere along the line. Adding chocolate chips to create a chunky effect is completely different than using them as part of the base. If you happen to feel the same way as I do, you may want to try this recipe!

3/4 cup of butter
1 1/2 cups of white sugar
3/4 cup of cocoa

1 teaspoon vanilla
1 cup of chocolate chips or chocolate chunks
3/4 cup of flour

Steps:

  • Kick the tires and light the fires and preheat your oven to 350 degrees.
  • Melt the butter in a pot, remove from the heat and stir in the white sugar.
  • Once that is combined, mix in your cocoa.
  • Add in your eggs then add in the vanilla. If you are using chocolate chips instead of chocolate chunks, you can mix in the 2/3 of a cup after the eggs are thoroughly combined into the mix.
  • Once all that is mixed very, very well, add in your flour and barely stir it in. Just barely. I read somewhere that stirring the flour mixture creates gluten, which in turn creates the cakey texture I don't like for brownies. So in theory, the less you stir, the less gluten and then chewy brownies here we come!
  • Line a 9x9 pan with parchment paper.
  • I used chocolate chunks, which I placed on top of the batter. They are so heavy that they sink right into it. Bake at 350 degrees for 30-40 minutes, until the brownies pull away from the edges slightly.This is why I use the chunks, they sink in right to the top level of the brownies. Cool the brownies.

1/2 cup unsweetened cocoa powder (I prefer and use the Hershey's Dark Cocoa)
1/2 teaspoon kosher salt
1 stick salted butter (melted and hot to the touch)
2 tablespoons canola oil
3/4 cup granulated sugar
1/2 cup packed brown sugar (light or dark)
2 large eggs
1 tablespoon pure vanilla extract
1 cup chocolate chunks (I get the milk chocolate block from Trader Joe's and cut my own chunks)

Steps:

  • Preheat oven to 350 degrees F. and line an 8 x 8 inch baking dish with parchment paper.
