MEXICAN MOCHA CHIA SEED PUDDING (KETO)
I love chia seeds. They are not only good for you but taste great. Chia seeds are very filling and can keep you full for several hours. This Mexican mocha chia seed pudding can be a snack or a yummy breakfast. This pudding is not only sweet but a little spicy as well. I usually keep it for up to 4 days in the fridge. Dust cocoa powder and dollop whipped cream on top if desired.

CHOCOLATE CHIA PUDDING
When I was a kid, I was addicted to these little canned puddings the other kids always had in their lunches. This reminds me of that pudding, thanks to chia's silky smooth thickening power. And, of course, this chocolate pudding has the "functionality" of chia: high fiber, omega-3 fatty acid in the form of alpha-linolenc acid, and a fair amount of protein. Me, I just like pudding. This recipe first appeared in Season 1 of Good Eats: The Return.Photo by Lynne Calamia

- Set aside 3 mini jars. For Microwave: Scoop entire can of coconut milk into a heatproof, microwave-safe bowl. Heat in 10-second increments in the microwave until fully melted. Or, if using drinkable milk (like almond milk), skip this step. For Stovetop: set a medium saucepan over low heat and transfer the entire can of full-fat coconut milk into the pan. Heat and stir just until melted and completely smooth. Transfer to a heatproof bowl.
- Add melted coconut milk or other milk, raw cacao powder, and maple syrup to a blender. I use this personal blender for easier cleanup. Blend until thoroughly mixed and no cacao powder clumps remain.
- Pour this mixture into a medium bowl. Add chia seeds and whisk until very well mixed. Allow to set for 5 minutes. Whisk again, clearing out any clumps that formed.
- Pour mixture into mini jars, filling each jar almost to the top and cover. These are the resealable mini jars that I use.

- To a small mixing bowl add cacao powder (sift first to reduce clumps), maple syrup, ground cinnamon, salt, and vanilla and whisk to combine. Then add a little dairy-free milk at a time and whisk until a paste forms. Then add remaining dairy-free milk and whisk until smooth.
- Add chia seeds and whisk once more to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it's achieved a pudding-like consistency). It may also be helpful to give the mixture an extra whisk/stir once it has been in the refrigerator for 30-45 minutes.
- Leftovers keep covered in the fridge for 4-5 days, though best when fresh. Serve chilled with desired toppings, such as fruit, granola, or coconut whipped cream.
