CHICKEN BOG
I am not sure of the origin of this recipe. It is a cross between a casserole and a stew: chock-full of chicken, sausage, rice and onion. A really good cold-weather comfort food. When you're feeling 'bogged' down, make Chicken Bog to cheer up! This recipe is what is called 'Low Country cooking.' It is a term used in the coastal regions of South Carolina. Chicken Bog is even served at restaurants in South Carolina along with other local favorites.

Steps:
- Place water, salt and onion in a large pot. Add chicken and bring all to a boil; cook until chicken is tender, about 1 hour.
- Remove chicken from pot and let cool. Remove skin and bones and chop remaining meat into bite size pieces.
- Skim off fat from cooking liquid and measure 3 1/2 cups of this chicken broth into a 6-quart saucepan. Add rice, chicken pieces, sausage, herb seasoning and bouillon to this saucepan. Cook all together for 30 minutes; let come to a boil, then reduce heat to low, keeping pan covered the whole time. If mixture is too watery or juicy, cook over medium low heat, uncovered, until it reaches the desired consistency. Stir often while cooking.

CHICKEN AND BOWS
I first made this chicken bow tie pasta when I was a professional nanny. It comes together quickly at dinnertime when the kids are hungry. -Danette Forbes, Overland Park, Kansas

ONE DISH CHICKEN AND BOWS
I love this meal for it's ease and down home goodness. You can make this one dish meal in less than 30 minutes. It's pretty too! You could substitute chopped carrots for the red pepper if you'd prefer. It reminds me of chicken pot pie without the 'pie'. Comfort! It makes A LOT so you can serve half of it and freeze the other half for a quick dinner some other night. From Simple & Delicious courtesy of Danette Forbes. *NOTE: this recipe does not include many spices, etc.. It is meant to be a comfort food type of recipe. If you enjoy spice, go ahead and throw some in!! This recipe is also versatile in terms of what veggies you like. Have fun with it. :)

CREAMY BOW TIES AND CHICKEN
Barbara Lopshire of Holland, Michigan copied the Creamy Bow Ties and Chicken from a similar dish at a nearby Italian restaurant, but her version has "all the flavor but less fat and it's cheaper!"

CHICKEN AND BOW TIE PASTA
The original recipe is from myrecipes.com. In my usual manner, I did a few things differently. I added different cheeses to get the creamy effect that I was looking for. This makes the perfect amount of cheesy sauce. This is not a recipe for the diet conscious. A lighter version can be made by substituting fat free cream of mushroom soup, 2% Velveta, neufchatel, and low fat cheddar cheese. To save even more time, you can also use rotisserie chicken in place of the chicken breasts. We serve this dish with crusty French bread and either steamed asparagus or broccoli.
