- In a large bowl, combine the chicken, chiles, broth, soups and onion; set aside. Layer half of the tortillas in a greased 13x9-in. baking dish, cutting to fit pan if desired. Top with half of the chicken mixture and half of the cheese. Repeat layers. , Bake, uncovered, at 350° for 30 minutes or until heated through. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°. If desired, serve with sour cream and green onions.

CHICKEN QUESADILLAS WITH HOMEMADE FLOUR TORTILLAS
This recipe combines leftover rotisserie chicken or roast chicken with quick-and-easy five-ingredient flour tortillas for a homemade take on a classic. Plus, it's easily tailored to what you have on hand (or prefer). The fresh taste and aroma of just-made tortillas may make you swear off store-bought ones forever!

- Whisk the flour, salt and baking powder together in a large bowl. Mix in the lard with your hands or a fork until the mixture resembles wet sand. Slowly mix in the hot water, mixing the dough by hand or with a fork until it comes together in a ball; you may have a little water leftover.
- Knead the dough by hand on a clean counter until smooth, 6 to 8 minutes. Let the dough rest for 10 minutes before portioning it into 12 equal balls. (At this point the dough can be covered with plastic wrap and refrigerated for up to a day before use.)
- Roll out each ball of dough on a floured surface until about 1/8-inch thick. Heat a medium cast-iron skillet over medium-high heat. Cook the tortillas one at a time in the skillet until they blister and puff, about 1 minute per side. Remove from the skillet and stack on a plate; cover with a kitchen towel as you work to keep the tortillas warm.
- For the quesadillas: Place one tortilla in a medium nonstick skillet and cover with shredded cheese and chicken. Cook over medium-low heat until the cheese begins to melt, 3 to 5 minutes. (If you like, heat 2 separate skillets so you can cook 2 quesadillas at once.)
- Place another tortilla on top of the first and flip. Cook until the underside is golden brown and the cheese is completely melted, 3 to 5 minutes longer. Transfer to a cutting board. Repeat with the remaining ingredients.
- Cut the quesadillas into triangles and serve with lime wedges, cilantro and toppings of choice: Sour cream, hot sauce, pickled jalapeños, guacamole and/or salsa.

- Heat a non-stick frying pan over a medium heat, swirl 1 tsp of the oil around, then add a tortilla. Sprinkle a handful of the cheese over one half of the tortilla, followed by some chicken and a few tomato slices. Season with a little salt and pepper. Cook for a few moments to melt the cheese, then fold over and cook until the tortilla is crisp.
- Turn the tortilla out of the pan and cut into quarters. Repeat with another flour tortilla to make another child's portion.
- For the adults' version, start by making a simple guacamole. Halve, stone, peel and slice the avocado, then mash it with the lime or lemon juice and a little seasoning.
- Make the tortillas as before, adding a little chopped coriander. Serve two each and cut into halves rather than quarters. Serve with the guacamole and soured cream, scattered with a little more coriander.

These taste just like the one's your grandmother use to make. They are so thin and perfect. Unless you tell I promise nobody will ever know they are flour tortilla's. If you want to make for a really big crowd, follow the same instructions just use a 6 qt pot and an additional small pack of 8.5 oz shells. Also you can omit the chicken if you want and use canned chicken broth or bouillon cubes.

- Fill 4-quart pot half full with water.
- Boil chicken until tender.
- While chicken is cooking, slice tortillas with a sharp knife 5 slices across and one slice through the middle.
- Remove cooked chicken and shred with a fork or cut into cubes.
- Place chicken, cream of chicken soup, butter, salt and pepper into boiling chicken broth.
- Bring to a rolling boil.
- Drop individual tortillas into pot one piece at a time.
- Do not stir, you can pat the top of the dumplings and move them around slightly with a wooden spoon.
- Boil medium/high heat for 12 minutes.
- Remove from heat.
- Add 1 cup of milk and move the dumplings around gently to mix the milk.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
- In a medium saucepan over medium heat, melt the butter and saute the green onion until tender (about 3 to 4 minutes). Add the garlic powder, then stir in the green chiles, cream of mushroom soup and sour cream. Mix well. Reserve 3/4 of this sauce and set aside. To the remaining 1/4 of the sauce in the saucepan, add the chicken and 1/2 cup of shredded Cheddar cheese. Stir together.
- Fill each flour tortilla with the chicken mixture and roll up. Place seam side down in the prepared baking dish.

- Fill bottom of pan with chicken.
