4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
¼ teaspoon salt
¼ teaspoon ground black pepper
8 slices bacon
¼ cup minced sweet onion
¾ cup unsweetened apple cider
½ cup chicken broth

Steps:

  • Sprinkle chicken with salt and pepper; set aside.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble bacon when cool enough to handle.
  • Add chicken to the bacon drippings in the skillet. Cook chicken over medium-high heat, flipping halfway, until chicken is no longer pink in the center and the juices run clear, 12 to 14 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove to a plate.
  • Add onion to the skillet and cook for 2 minutes. Pour apple cider and chicken broth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Cook until mixture is reduced to about 1/2 cup, about 20 minutes. Stir crumbled bacon into sauce and serve over chicken.

1 pound beef stew meat, cut into bite-size pieces
2 teaspoons all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon dried thyme
2 teaspoons vegetable oil
2 ½ cups apple cider
4 carrots, sliced
3 potatoes, chopped
2 small Fuji apples - peeled, cored, and chopped
1 cup chopped onion
1 cup water
1 stalk celery, chopped
1 teaspoon salt
¼ teaspoon dried thyme

Steps:

  • Combine the beef stew meat with the flour, 1/2 teaspoon salt, the black pepper, and 1/8 teaspoon thyme in a bowl; toss to coat evenly.
  • Heat 2 teaspoons oil in a pot; cook the stew meat in the hot oil until completely browned, 5 to 7 minutes. Pour the apple cider over the beef, reduce heat to medium low, and simmer the mixture until the beef is tender, about 1 hour.
  • Add the carrots, potatoes, apples, onion, water, celery, 1 teaspoon salt, and 1/4 teaspoon thyme to the pot; continue cooking at a simmer until the vegetables are tender, about 30 minutes more.

I made this chicken stew on a cold autumn night when I had an excess of fresh apples. The apple adds a sweet, pleasant flavor which complements the root vegetables, resulting in a light, but delicious, dinner which warms you from the inside. Great with a sprinkle of Parmesan cheese and served with sourdough rolls for dipping.

2 tablespoons olive oil
1 medium onion, chopped
1 clove garlic, minced
3 cups diced sweet potatoes
2 McIntosh apples - peeled, cored, and diced
1 cup diced carrots
3 cups chicken broth
½ cup apple cider
4 medium skinless, boneless chicken breasts, cubed
¼ teaspoon ground black pepper
¼ teaspoon dried rosemary, crushed
¼ teaspoon ground turmeric
1 bay leaf
2 tablespoons fresh lemon juice
¼ teaspoon salt, or to taste

Steps:

  • Heat olive oil in a large saucepan over medium heat. Add onion and garlic and cook until onion has softened, about 3 minutes. Add sweet potatoes, apples, and carrots; continue to cook and stir for 3 to 5 minutes. Pour in chicken broth and apple cider and cook, stirring occasionally, for 10 minutes.
  • Add chicken, pepper, rosemary, turmeric, and bay leaf; cook until vegetables are soft and chicken is no longer pink in the centers and juices run clear, 15 to 20 minutes. Remove from heat and stir in lemon juice and season with salt before serving.

8 skinless, boneless chicken breast halves
1 ⅓ cups crushed saltine cracker crumbs
⅓ cup vinegar
1 teaspoon garlic powder
1 teaspoon dry mustard

1 ½ teaspoons Worcestershire sauce
1 tablespoon ketchup

Steps:

  • Heat oil in a large skillet over medium high heat. Brown chicken in oil, then remove from skillet and dip in cracker crumbs to coat; set aside.
  • To skillet add vinegar, garlic powder, dry mustard, cumin, Worcestershire sauce and ketchup. Stir together and cook until heated through and bubbly, about 7 to 10 minutes. 2 cups buttermilk
1/4 cup Dijon mustard
2 tablespoons onion powder with green onion and parsley
5 teaspoons salt
4 teaspoons dry mustard
4 teaspoons cayenne pepper
2 1/2 teaspoons ground black pepper
1 3- to 3 1/4-pound fryer chicken, backbone removed, chicken cut into 8 pieces, skinned (except wings)
3 cups all purpose flour
1 tablespoon baking powder
1 tablespoon garlic powder
5 cups (or more) peanut oil (for frying)

Steps:

  • In 1-gallon resealable plastic bag, mix buttermilk, Dijon mustard, 1 tablespoon onion powder, 1 teaspoon salt, 1 teaspoon dry mustard, 1 teaspoon cayenne and 1 teaspoon black pepper. Add chicken pieces. Seal bag, eliminating air. Turn bag to coat chicken evenly. Refrigerate at least 1 day and up to 2 days, turning plastic bag occasionally.
  • Whisk flour, baking powder, garlic powder, remaining 1 tablespoon onion powder, 4 teaspoons salt, 3 teaspoons dry mustard, 3 teaspoons cayenne and 1 1/2 teaspoons black pepper in 13 x 9 x 2-inch glass dish. With marinade still clinging to chicken pieces (do not shake off excess), add chicken to flour mixture; turn to coat thickly. Let chicken stand in flour mixture for 1 hour, turning chicken occasionally to recoat with flour mixture.
  • Pour oil to depth of 1 1/4 inches into deep 10- to 11-inch-diameter pot. Attach deep-fry thermometer. Heat oil over medium-high heat to 350°F. Add 4 pieces of chicken, skinned side down, to oil. Reduce heat to medium-low and fry 5 minutes, adjusting heat to maintain oil temperature between 280°F and 300°F (oil should bubble constantly around chicken). Using wooden spoons, turn chicken over. Fry 7 minutes. Turn chicken over again. Fry until deep golden brown and cooked through, about 3 minutes longer. Using same spoons, transfer chicken to large rack set on baking sheet.
  • Reheat oil to 350°F. Repeat frying with remaining 4 pieces of chicken. Serve chicken warm or at room temperature within 2 hours, or chill up to 1 day and serve cold.

1 teaspoon salt
2 tablespoons olive oil
6 slices bacon
1 onion, sliced
2 cups chicken broth, divided
2 cups apple cider, divided
2 apples - peeled, cored, and sliced
4 sage leaves
2 sprigs fresh thyme
4 tablespoons butter

Steps:

  • Season chicken thighs with salt and set aside.
  • Heat oil in a large skillet over medium heat. Add chicken and cook until browned on both sides, 7 to 10 minutes. Transfer to a plate and set aside.
  • Place bacon into the skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and drain excess grease from the skillet.
  • Add onion to the skillet and cook over medium heat until soft, 5 to 7 minutes. Pour in 1 cup chicken broth and 1 cup apple cider. Cook until reduced by 1/2, about 10 minutes. Add cooked bacon, apples, sage, and thyme; let simmer for 2 minutes. Add remaining chicken broth and cider.
  • Return chicken to the pan, reduce heat to medium-low, and cook and stir until chicken thighs are no longer pink in the centers, about 15 minutes.
  • Transfer chicken to a serving platter. Remove the pan from heat and add butter, swirling to combine with sauce. Pour over chicken.
