2 eggs
1 ½ cups bread crumbs
3 tablespoons salsa
2 tablespoons Ranch-style salad dressing
1 (1.25 ounce) package taco seasoning mix
½ cup shredded Cheddar cheese
¼ cup sour cream

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8x4 inch loaf pan.
  • In a large bowl, mix together the ground chicken, eggs, bread crumbs, salsa, salad dressing, and taco seasoning mix. Pack into the prepared loaf pan.
  • Bake for 1 hour in the preheated oven. Top with cheese, and serve with sour cream.

3 tablespoons butter
2 stalks celery, finely chopped
1 onion, chopped
½ teaspoon salt
1 carrot, grated
1 apple - peeled, cored, and chopped
1 ½ pounds ground chicken
1 egg
⅓ cup applesauce
2 tablespoons milk
½ cup dry bread crumbs
2 teaspoons poultry seasoning
1 teaspoon ground sage
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup applesauce
1 tablespoon Dijon mustard
2 teaspoons honey

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the celery and onion with 1/2 teaspoon of salt, stirring occasionally, until the onions are soft and browned, about 12 minutes. Stir in the carrot, and cook for 5 more minutes; stir in the apple, and remove the mixture from the heat.
  • In a mixing bowl, lightly mix together the ground chicken, egg, 1/3 cup of applesauce, milk, bread crumbs, poultry seasoning, sage, 1/2 teaspoon of salt, and black pepper. Mix in the cooked vegetable-apple mixture. Form the mixture into a loaf, and place into the center of a 9x12-inch baking dish.
  • In a bowl, mix together 1/3 cup of applesauce, the Dijon mustard, and honey into a smooth mixture, and spread the glaze over the top and sides of the meat loaf.
  • Bake in the preheated oven for 30 minutes, then reduce the temperature to 375 degrees F (190 degrees C) until the internal temperature of the loaf is 180 degrees F (80 degrees C), about 30 more minutes. Allow the loaf to rest for 5 minutes before serving.

1 pound ground chicken
1¼ cups breadcrumbs
½ cup finely chopped onion
½ cup shredded Parmesan cheese
¼ cup chopped fresh parsley
1 teaspoon kosher salt
½ teaspoon garlic powder
¼ teaspoon ground black pepper
1 cup milk
2 large eggs
2 tablespoons tomato paste
2 tablespoons Worcestershire sauce
¾ cup ketchup
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, crumble the ground chicken.
  • In a medium bowl, combine all of the dry ingredients (breadcrumbs, onion, parmesan, parsley, garlic powder, salt and pepper) and stir to mix. Add this to the bowl with the ground chicken and stir.
  • Add the remaining wet ingredients (milk, eggs, tomato paste, and Worcestershire sauce) and stir to mix.
  • In a small bowl, make the glaze by stirring together the ketchup, brown sugar and Worcestershire sauce.
  • Spoon a couple tablespoons of the glaze into the bottom of an 8x4-inch loaf pan. Add the chicken mixture to the loaf pan and then spread the remaining glaze on top.
  • Bake in the preheated oven, uncovered, for 80-90 minutes, or until the internal temperature reaches 165°F and the loaf is cooked through.

1 head broccoli, cut into small florets, stems peeled and cut into 1/4-inch slices
Extra-virgin olive oil, for pan
1 small onion, chopped
1 carrot, peeled and chopped
1 stalk celery, chopped
1 cup fresh breadcrumbs (from 3 to 4 slices white bread)
1 pound ground chicken
1 large egg, lightly whisked
1 tablespoon plus 2 teaspoons Dijon mustard
1/3 cup finely grated Parmesan
2 tablespoons chopped fresh dill
1 1/2 teaspoons coarse salt
Freshly ground pepper
1/2 cup ketchup
2 tablespoons packed light-brown sugar

Steps:

  • Preheat oven to 350 degrees. Set a steamer basket or colander in a large saucepan filled with 2 inches water; bring to a boil, then reduce to a simmer. Place broccoli florets and stems in basket, cover, and steam until bright green and just tender, 4 to 6 minutes. Remove basket from pan; let cool slightly.
  • Brush a 5-by-9-inch loaf pan with oil. In a food processor, pulse onion, carrot, and celery until finely chopped; transfer to a large bowl. Pulse broccoli in food processor until finely chopped. Transfer to bowl.
  • Add breadcrumbs, chicken, egg, 1 tablespoon mustard, Parmesan, dill, and salt to bowl. Season with pepper. Using two forks, mix until combined. Transfer mixture to prepared loaf pan.
  • Stir together ketchup, remaining 2 teaspoons mustard, and brown sugar in a small bowl until smooth; brush evenly on top of loaf. Set loaf pan on a rimmed baking sheet and bake until glaze is caramelized and a thermometer inserted in center of loaf registers 160 degrees, about 1 hour. Let cool 20 minutes before serving.

1 tablespoon olive oil
1 1/2 cups chopped baby carrots
1 cup chopped celery (from about 2 large stalks)
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
1 medium onion, chopped
1 chicken bouillon cube
3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
1/4 cup Greek yogurt
Pinch granulated sugar
1/4 teaspoon cider vinegar or white wine vinegar
1 1/4 cups frozen peas, thawed
2 1/2 cups rotisserie chicken meat, cut into chunks
1/4 cup chopped fresh parsley
1 chicken bouillon cube
6 tablespoons unsalted butter, cold
1 cup all-purpose flour, plus additional for dusting
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon kosher salt
1 teaspoon sugar
1/3 cup Greek yogurt
2 to 3 tablespoons cold water

Steps:

  • For the stew: Heat a 10-inch cast-iron skillet over medium heat until hot, then add the olive oil, carrots, celery, and some salt and pepper and stir. Cook until the carrots begin to soften, 5 to 6 minutes. Remove the carrots and celery to a small bowl and set aside.
  • Add the butter and onions to the skillet with another pinch of salt. Sweat the onions until softened slightly, 2 to 3 minutes. Add the chicken bouillon and crush it, stirring to combine with a wooden spoon. Sprinkle the flour over the onions and stir well, then allow to cook for 1 minute. Whisk in the chicken broth in thirds, whisking after each addition until smooth. Whisk in the yogurt, sugar and vinegar. Season with salt and pepper to taste. Stir in the peas, cooked vegetables and chicken. Allow to simmer on low heat while you prepare the biscuits.
  • For the biscuits: Preheat the oven to 400 degrees F.
  • Crush the chicken bouillon in a small heatproof bowl and add 2 tablespoons butter. Heat in the microwave at 10-second intervals until melted. Set aside.
  • Whisk together the flour, baking powder, baking soda, salt and sugar in a medium bowl. Use a box grater to grate the remaining 4 tablespoons butter into the flour, then use a fork to toss the butter into the flour. Stir in the Greek yogurt to form a smooth dough. Add 2 to 3 tablespoons water if needed to make the dough come together. Knead and turn the dough a few times in the bowl to incorporate any dry bits of flour.
  • Lightly flour a work surface and turn the dough out of the bowl. Give it another few kneads and then shape and flatten the dough into an 8-inch circle. Cut the dough into 6 wedges.
  • Stir about 2 tablespoons parsley into the simmering chicken. Arrange the 6 biscuits in a loose circle atop the chicken mixture, leaving some space in between. Brush the biscuits with the melted chicken bouillon butter.
  • Bake until the biscuits are puffed and golden brown, 25 to 30 minutes.
  • Allow to cool for 5 minutes. Sprinkle with the remaining parsley before serving.
