Incredible Chicken Oporto image

This is one of my favourite recipes. Its a Portuguese recipe, made of boneless chicken breasts. It's braised in a white Portuguese Port Wine, with mushrooms and cream. You can serve it over noddles, rice, or with french.fries, and a nice tossed green salad, have a good bottle of wine ready to goble this down with. I do hope you will enjoy it as much as I do

1/2 cup butter
1/2 lb mushroom, sliced
1/4 cup flour
2 teaspoons pepper
1 onion, sliced
2 garlic cloves, chopped
4 -6 chicken breasts
1 1/2 cups cream
1/3 cup port wine
2 tablespoons fresh parsley, chopped

Steps:

  • In a hot frying pan heat half of the butter (medium-high heat).
  • Add in the mushrooms and onion cook for about 5 minutes along with the garlic.
  • Remove and set aside in a bowl or deep dish.
  • In a bowl combine the flour salt and pepper to coat chicken breasts on both sides.
  • In the same frying pan add in the remaining butter and cook the chicken breasts over medium-high heat, careful not to burn, cook till browned on all sides.
  • Now stir in the cream and the Port Wine, and the mushrooms, bring to a boil, and then reduce heat to low, cover and simmer for 15 minutes or till cooked.
  • Pour into a platter and sprinkle chopped parsley over top.

1/2 cup butter
1/2 lb fresh mushrooms, thin sliced
1/4 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground nutmeg
4 medium whole boneless skinless chicken breasts
1 1/2 cups heavy cream or 1 1/2 cups whipping cream
1/3 cup white port

Steps:

  • In 12 inch skillet over medium high heat, in hot butter cook mushrooms 5 minutes. Remove mushrooms with slotted spoon to bowl. Set aside.
  • In plastic bag, combine flour, salt, pepper, and nutmeg. Coat chicken breasts by tossing in closed bag. In same skillet, in remaining butter, over medium high heat, cook chicken until brown.
  • Stir in cream, port, and mushrooms, heat until boiling. Reduce heat to low; cover and simmer 15 minutes until chicken is fork tender.

  • In a 12" skillet cook mushrooms in butter, remove. Combine flour, salt, pepper, and nutmeg and coat chicken, cook chicken until brown on all sides, stir in cream, port and mushrooms, heat to boiling, then simmer 15 min or until tender.

This is a simple recipe with a spicy kick for garlic lovers. It is my combination of a much loved linguine and clam sauce dish and a recent introduction to orzo pasta. I have several variations for this recipe. Add more red pepper for extra spice. Substitute the chicken for clams or shrimp. Substitute the spinach leaves for diced tomatoes. I've also added spices such as basil, rosemary and oregano bringing a distinct Italian flavor to the dish.

1 cup uncooked orzo pasta
2 tablespoons olive oil
2 cloves garlic
¼ teaspoon crushed red pepper
2 skinless, boneless chicken breast halves - cut into bite-size pieces
salt to taste
1 tablespoon chopped fresh parsley
2 cups fresh spinach leaves
grated Parmesan cheese for topping

Steps:

  • Bring a large pot of lightly salted water to a boil. Add orzo pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Heat the oil in a skillet over medium-high heat, and cook the garlic and red pepper 1 minute, until garlic is golden brown. Stir in chicken, season with salt, and cook 2 to 5 minutes, until lightly browned and juices run clear. Reduce heat to medium, and mix in the parsley and cooked orzo. Place spinach in the skillet. Continue cooking 5 minutes, stirring occasionally, until spinach is wilted. Serve topped with Parmesan cheese.

Homemade Portuguese Chicken image

This Portuguese chicken can be baked or grilled. You may double or triple the recipe (or more if required) for bigger batches of chicken. An easy recipe to make several servings for a party!

¼ cup lemon juice
4 tablespoons olive oil
4 cloves garlic, peeled
1 tablespoon paprika
1 teaspoon dried oregano
1 teaspoon sea salt
1 teaspoon chili powder, or to taste
1 teaspoon red pepper flakes, or to taste
1 bay leaf
½ teaspoon ground black pepper
4 chicken leg quarters
1 pinch sea salt to taste

Steps:

  • Combine lemon juice, oil, garlic, paprika, oregano, 1 teaspoon salt, chili powder, red pepper flakes, bay leaf, and black pepper in a blender or food processor. Blend until very smooth.
  • Score chicken legs a few times using a knife and place in a resealable bag or a bowl. Pour about 1/3 cup of sauce over chicken and toss well. Season with additional sea salt. Cover or seal and marinate chicken in a refrigerator, 8 hours to overnight. Reserve remaining sauce for basting.
  • Preheat the oven to 350 degrees F (175 degrees C). Place chicken in a baking dish and cover with aluminum foil.
  • Bake in the preheated oven for 20 to 25 minutes. Turn chicken over and baste with extra marinade. Cover baking dish with foil once again and bake for another 20 to 25 minutes. Remove foil and bake until no longer pink in the center and juices run clear, 15 to 20 minutes more. An instant-read thermometer inserted near a bone should read 165 degrees F (74 degrees C).
