1 (2.5 pound) whole chicken, cut into pieces
salt and ground black pepper to taste
⅔ cup plum jam
1 ½ teaspoons ground black pepper
1 ½ teaspoons minced fresh ginger root
1 ¼ teaspoons prepared horseradish

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Season the chicken pieces with salt and pepper to taste and place skin-side-up onto the prepared baking sheet. Bake in the preheated oven for 20 minutes.
  • While the chicken is baking, stir together the plum jam, 1 1/2 teaspoons pepper, ginger, and horseradish in a small bowl. After the chicken has baked 20 minutes, brush with the plum glaze and return to the oven.
  • Continue baking until no longer pink at the bone and the juices run clear, 20 to 30 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
3/4 cup all-purpose flour
3 tablespoons canola oil
2 cans (16-1/2 ounces each) whole plums, pitted
1/2 cup honey
1 tablespoon white vinegar
1 to 2 garlic cloves, minced

Steps:

  • Coat chicken pieces with flour; brown in oil in a large skillet over medium heat. Transfer to a greased 13-in. x 9-in. baking pan. , Drain plums, reserving syrup; remove pits and coarsely chop plums in a food processor. Pour into a measuring cup; add enough syrup to equal 2 cups. Place in a saucepan. Add honey, vinegar and garlic; bring to a boil. Cook and stir for 2 minutes. Pour over chicken. , Bake, uncovered, at 350° for 45 minutes or until chicken juices run clear.

2 tablespoons peanut oil
1 small onion, coarsely chopped
4 cloves garlic, coarsely chopped
1 tablespoon fresh ginger, coarsely chopped
1 Thai chile, coarsely chopped
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 1/2 pounds red or purple plums, pitted and coarsely chopped
1/4 cup honey
1/4 cup soy sauce
2 tablespoons fresh lime juice
1 tablespoon granulated sugar
8 chicken thighs, skin on, bone in
Plum Sauce
Salt and freshly ground pepper

Steps:

  • Plum Sauce: Use side burner or grill. Heat oil in a medium saucepan over medium-high heat. Add onions and garlic and cook until soft. Add ginger, chile pepper, cinnamon and cloves and cook for 2 minutes. Add remaining ingredients and cook until plums are soft and mixture has thickened. Place mixture in a food processor and mix until smooth. Let cool.
  • Preheat grill. Season chicken with salt and pepper to taste. Grill, on 1 side for 5 minutes, or until golden brown. Turn the chicken over, brush with the sauce and continue grilling for 3 to 4 minutes, turn over and brush with sauce. Continue grilling and brushing with the sauce until the chicken is cooked through, approximately 12 to 15 minutes.

4 Chicken breasts (ready to cook, skinless, each 150 grams)
salt
freshly ground peppers
2 scallions
3 tomatoes
8 red Plum
olive oil
1 Tbsp butter
1 Tbsp rosemary
100 milliliters dry white wine
100 milliliters chicken stock
2 Tbsps Crème fraiche

Steps:

  • Preheat the oven to 160°C (approximately 350°F).
  • Rinse chicken, pat dry and season with salt and pepper.
  • Rinse scallions, trim and cut into narrow rings. Blanch tomatoes in a large pot, drain, peel, quarter, core and cut into small cubes. Rinse plums, cut in half, remove pit and cut into thin slices.
  • Heat 2 tablespoons oil in a pan and fry chicken on all sides until golden brown, remove from the pan and then cook in the preheated oven for about 15-20 minutes.
  • Heat butter in a frying pan and sauté onions with plums. Add tomato and rosemary, deglaze the pan with wine and chicken stock. Let simmer over medium heat for 5-8 minutes, stir in crème fraîche and season with salt and pepper.
  • Serve chicken arranged on warmed plates and drizzle with plum sauce.

4 medium oranges, halved and seeds removed
1 roasting chicken (6 to 7 pounds)
1 teaspoon garlic powder
1 teaspoon salt
1 can (15 ounces) plums
1/4 cup butter, cubed
1 medium onion, chopped
3/4 cup thawed lemonade concentrate
1/3 cup chili sauce
1/4 cup reduced-sodium soy sauce
2 teaspoons Dijon mustard
1 teaspoon ground ginger
1 teaspoon Worcestershire sauce
2 drops hot pepper sauce, optional

Steps:

  • Preheat oven to 350°. Arrange oranges in a shallow roasting pan, cut sides down. Place chicken over oranges, breast side up. Mix garlic powder and salt; rub over the outside and inside of chicken. Tuck wings under chicken; tie drumsticks together., Roast 1-1/4 hours. Meanwhile, drain plums, reserving liquid. Remove pits from plums. Place plums in a food processor; process until pureed., In a large skillet, heat butter over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Roast until a thermometer inserted in thigh reads 170°-175°, brushing occasionally with remaining glaze, 3/4 to 1-1/4 hours longer. (Cover loosely with foil if chicken browns too quickly.), Remove chicken from oven; tent with foil. Let stand 15 minutes before carving. Reheat reserved sauce. Serve chicken with sauce.

Coarse salt and ground pepper
2 tablespoons olive oil
1/2 medium red onion, chopped
1/2 jalapeno chile, (ribs and seeds removed for less heat, if desired), chopped
4 red plums, (about 1 pound), halved, pitted, and cut into 1/2-inch pieces
1/3 cup packed light-brown sugar
2 tablespoons cider vinegar
3/4 teaspoon curry powder
1/4 teaspoon ground ginger

Steps:

  • Season chicken with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium. Add chicken and cook until opaque throughout, about 5 minutes per side. Transfer to a plate. Set aside.
  • Make chutney: To skillet, add remaining 1 tablespoon oil, onion, and jalapeno; cook until softened, about 3 minutes. Increase heat to medium-high; add plums, sugar, vinegar, curry powder, ginger, and 1/4 cup water. Bring to a boil; reduce to a simmer, and cook until plums are softened and liquid is slightly syrupy, about 8 minutes.
  • Add chicken and any juices that have accumulated on plate; simmer until heated through, about 4 minutes. Season with salt and pepper to taste. Serve chicken with chutney spooned on top.

1/2 cup flour
1/2 cup cornstarch
2 teaspoons baking powder
1 teaspoon salt
2 eggs
1/2 cup milk
2 -3 lbs chicken, cut into bite size pieces (I use boneless skinless breasts)
1/2 cup crushed pineapple in juice
1/4 cup sugar
1/4 cup water
1/4 cup vinegar
3/4 teaspoon soy sauce
1/4 cup plum preserves or 1/4 cup plum jam
1 1/2 teaspoons cornstarch
1 1/2 teaspoons water

Steps:

  • Mix the first 4 ingredients well. Add eggs and milk. Whisk together well to make batter. Dip chicken pieces in batter and deep fry. Drain on a pan lined with paper towels.
  • In a sauce pan, mix pineapple, sugar, water, vinegar and soy sauce. Bring to a boil. Mix corn starch and water together. Add to the sauce pan. Bring to a boil again. When thick, let cool for 15 minutes Add plum preserves and mix well.
  • Serve sauce over chicken or as dipping sauce.

1 (400 g) can plum sauce (maybe found in jars )
1/2 cup soy sauce

Steps:

  • place chicken in a baking dish.
  • mix plum sauce with soy sauce (soy sauce is to taste so keep checking to see how you like it).
  • add sauce to cover the chicken
  • put in the oven and cook until chicken is cooked (around 40 - 50 minutes)
  • serve with rice or as my nan did warm vegies and potatoes.
