Edamame disappear quickly when simply salted, but they take on added appeal when tossed with chile flakes. Boil them and set them out while you put the finishing touches on the meal.

Steps:
- Pulse red-pepper flakes in a spice grinder until finely ground. Mix with salt and sugar in a small bowl.
- Bring a large pot of water to a boil. Add frozen edamame, and cook until bright green and heated through, about 4 minutes. Strain, and transfer to a large bowl. Toss with chile-salt mixture, and serve.

- finely chop the chilli pepper as small as you can
- mix the cholled chilli pepper with the salt crystals and spreat out on baking parchment
- leave in a warm place (above radiator, top of fridge, on Aga) for 2-3 days till it has dried out
- pack into small jar
- this will keep for up to 6 months

- Finely grate lime zest into a small bowl. Stir in salt and chile powder. Cut lime into wedges.

- Preheat oven to 200° F with rack in middle. Line a large baking sheet with a nonstick liner, like a Silpat or parchment paper.
- Place chili and salt in the bowl of a food processor and pulse until well incorporated. Spread chile salt on the lined baking sheet. Dry the salt in the oven for 30 minutes, stirring after 10 minutes. Without removing the salt from the oven, turn the oven off and allow salt to dry overnight in the warm oven.
- The next day, carefully remove the dried chile salt from the oven, and break up any clumps. Using a funnel, pour salt into pretty jars.

- To make Simple Syrup, mix sugar and water in 1-quart saucepan. Heat to boiling over medium-high heat, stirring until sugar is dissolved. Remove from heat; let stand 30 minutes. Transfer to storage container. Cover and refrigerate up to 3 days. Makes 1 1/4 cups.
- To make Smoky Chile Salt, mix sea salt, ancho powder and chipotle powder in small bowl until well mixed. Spread mixture on a small plate.
- To make margarita, rub outside rim of cocktail glass with lime wedge to moisten; roll in chile salt to coat rim of glass. To cocktail shaker, add 3/4 oz of the simple syrup, the tequila, orange-flavored liqueur, lime juice, orange juice and lemon juice. Fill shaker with ice; cover and shake vigorously. Strain into cocktail glass filled with fresh ice. Garnish as desired.

MANGO WITH CHILE-LIME SALT
This take on the classic street food, served throughout Mexico, is encountered often in open air markets, beaches and parks in summer. The original is often made with tajín spice, a store-bought blend of ground chile, lime and salt. This preparation allows you to use any variety of mango, in states of ripeness from soft and juicy to firm, and the homemade chile-lime salt can be used for a variety of savory or sweet dishes as a garnish or topping. If using store-bought chile-lime salt, substitute the ground chile, lime zest and salt with 2 tablespoons of the seasoning.

- In a small bowl, combine the chile powder, lime zest and salt. Use the chile-lime salt immediately or store at room temperature in an airtight container for up to 3 days.
- Sprinkle the chile-lime salt all over the mango and serve immediately, or loosely cover and refrigerate for up to 4 hours.
CHILI GRILL SALT
This is a seasoned salt recipe chock full of healtful spices. Use it anywhere you would use Lawry's or Johnny's. Good quality sea salt is full of micro nutrients just not found in commercial table salt. I like Real Salt for it's price to nutrient ratio, but celtic sea salt would be a great choice too. Chiles and turmeric are full of antioxidants and cancer fighting nutrients especially needed when grilling food. I use mostly New Mexico chile powder to keep the heat level down, but a little Arbol or Cayenne will really kick up the heat. Kelp is an amazing natural source of iodine and other sea minerals and doesn't add any strange flavor to this flavorful mix. Onion and garlic are also known for their anti biotic and anti cancer properties. You just can't go wrong with this stuff!
