CHILI-STUFFED BISCUITS RECIPE BY TASTY

- Make the chili: In a large pot over medium heat, combine the ground beef, onion, bell pepper, garlic, and crushed tomatoes. Bring to a simmer. Add the salt, chili powder, cumin, paprika, cayenne, and kidney beans. Stir to combine, then simmer for 40-45 minutes, until the chili has thickened. Remove the pot from the heat and let the chili cool completely.
- Make the biscuits: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the self-rising flour, cornmeal, and salt.
- Add the butter and press into the dry ingredients with your fingertips until the flour resembles coarse sand.
- Add the buttermilk and stir until the dough comes together in a ball.
- Dust a clean surface with the all-purpose flour. Turn the dough out and fold in half, then the dough into a circle and roll out with a rolling pin to about ¼ inch (6 mm) thick.
- Using a 4-inch (10 cm) round cutter, portion the dough into 12 rounds. Re-roll dough and cut more circles as needed.
- Scoop 1 tablespoon of the cooled chili into the center of a round of dough and carefully pinch the edges together around the chili to seal. Repeat with the remaining dough. Place the filled biscuits on the prepared baking sheet, seam-side down. Save the remaining chili for another use.
- Make the chili butter: In a small microwave-safe bowl, combine the butter, salt, chili powder, cumin, paprika, and cayenne. Microwave in 30-second intervals until the butter is completely melted.
- Brush the tops of the biscuits generously with the chili butter. Sprinkle the cheddar cheese on top.
- Bake the biscuits for about 20 minutes, or until golden brown.
- Garnish the biscuits with the scallions and serve with sour cream alongside.

- In a large bowl, combine the Bisquick and butter until crumbly.
- Add the milk, dried parsley and shredded cheddar and mix to combine. The dough will be sticky.

- Heat a pan over medium-high heat. Add the ground beef and break up into smaller bits using a spoon or spatula.
- Add the cayenne, cumin, onion powder, garlic powder, pepper, and salt, then mix until evenly incorporated.
- Add ketchup. Mix thoroughly allowing beef to cook all the way through.
- Remove the pan from heat, and drain excess fat.
- Add the grated potatoes to a bowl, and add in the flour and 1 teaspoon of salt. Stir to combine.
- Using the palm of your hand, spread 1 tablespoon of the potatoes into a thin pancake.
- Add 1 teaspoon of the beef, then press a cheese cube into the middle.
- Fold potato over beef and cheese, then create a fist around the tot while using your opposite hand to flatten both sides, creating the cylindrical tot form.
- Heat vegetable oil over high heat until temperature reaches 360˚F (182˚C).
- Fry the tots in batches for about 5 minutes, until golden brown.
- Transfer fried tots to a paper towel-lined plate to drain. Serve immediately.

- Cook the sausage in a large skillet over medium heat for about 5 minutes until evenly browned, breaking up into small pieces as it cooks. Remove from the skillet with a slotted spoon and transfer to a plate, leaving any rendered fat behind.
- Add the butter to the skillet. Once the butter melts, add the flour and whisk until light golden brown, about 2 minutes. Slowly whisk in the milk until combined and whisk until the gravy thickens, about 10 minutes.
- Add the thyme, red pepper flakes, sage, salt, pepper, and sausage to the pan and stir until combined. Transfer the mixture to a glass measuring cup and let cool to room temperature.
- Carefully pour the cooled gravy into a silicone ice mold and freeze overnight.
- Make the biscuits: Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- To the bowl of a food processor, add the flour, baking powder, butter, salt, cheddar cheese, and chives. Pulse several times until mixture resembles coarse crumbs.
- With the processor running, slowly pour in the heavy cream and pulse until the dough comes together.
- Turn the dough out onto a lightly floured surface and knead until no longer sticky. Roll the dough out to about ⅛ inch (½ cm) thick and cut out 8 4-inch (10 cm) circles with a floured biscuit cutter.
- Remove the frozen gravy from the mold and place 1 cube at the center of each biscuit. Bring the edges of the dough over the gravy and roll to seal. Save the leftover gravy cubes for another use.
- Place the stuffed biscuits on the prepared baking sheet. Brush with the beaten egg and sprinkle with more cheese.
- Bake the biscuits for 15-20 minutes, until golden brown.

- In a saucepan, cook the onion and 2 garlic cloves in a little oil.
- After a minute or so, add the minced beef, breaking it up with a spoon.
- When the mince has browned, stir in the chilli powder, cumin, ground coriander, and the plain flour.
- Stir in the beef stock, tomatoes, tomato purée, kidney beans, oregano, and salt.
- Place a bay leaf into the mixture, loosely cover and simmer for 30-45 minutes, stirring occasionally. Allow to cool some so you don't burn yourself during the next bit!
- Preheat the oven to 200°C (400°F).
- Top and tail the baguette, then cut it into 3-4 equal rolls.
- Hollow out each roll, allowing a thin border of bread around the outside.
- Stuff each roll with chili using a teaspoon. Try to really fill them up.
- Make the garlic butter by stirring in 2 cloves of crushed garlic and a handful of parsley into the melted butter.
- Coat each stuffed roll with a generous helping of garlic butter. Top with a healthy portion of finely grated cheddar.
- Bake in the centre of the preheated oven for 10-12 minutes, until the cheese is bubbly and melted.

CHILI AND BISCUITS CASSEROLE
This is yummy and filling; good comfort food. My husband calls it Chili Pot Pie. If you like it spicy you can add red pepper flakes or other spices with some heat. Don't let the list of ingredients or steps intimidate you, it is really easy and many of the ingredients you probably already have on hand. This is super simple and easy to make throughout the year.

- Brown turkey in 12-inch skillet, drain grease. Add onion and bell pepper to the ground meat and cook until veggies are crisp tender.
- Stir tomatoes with juice, beans, spices and Tabasco sauce into meat mixture. Simmer over medium heat for 10 (you can simmer longer if you'd like).
- Remove meat mixture from stove, add 1/3 cup salsa and 1/3 cup cheese and stir until well blended.
- Pour mixture into 13 X 9 inch casserole dish, level out mixture.
- Sprinkle 1/3 cup cheese over beef mixture in casserole.
- Split each biscuit in 1/2 lengthwise, this is why the layered biscuits are important, it makes it easier. Arrange biscuits over the cheese and beef mixture, covering the top of the casserole.
- Add remaining 1/3 cup of cheese on top of biscuits.
- Bake at 350°F for 15 minutes on bottom shelf of oven, and 15 additional minutes on top shelf of oven until biscuits are deep golden brown.
- Serve with sour cream, salsa and additional cheese if desired.
