Chinese Cold Pasta Salad image

A delicious, cold pasta served with a spicy peanut sauce.

8 ounces dry fettuccine pasta
2 tablespoons natural peanut butter
½ cup vegetable broth
2 tablespoons soy sauce
3 cloves garlic, minced
2 teaspoons crushed red pepper flakes
1 red bell pepper, chopped
2 green onions, chopped
½ cup chopped fresh cilantro

Steps:

  • Cook pasta in a large pot of boiling water until al dente. Rinse and drain. Set aside.
  • In a large bowl, combine peanut butter, broth, soy sauce, garlic, and crushed red pepper. Mix well. Add pasta, sliced red pepper, scallions, and cilantro; toss to combine. Chill.

Number Of Ingredients 11

1 pound linguine, broken in half
4 tablespoons oriental sesame oil
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1/4 teaspoon cayenne pepper
3 red bell peppers, seeded, thinly sliced
3 cups snow peas
1 large red onion, thinly sliced
3/4 cup honey-roasted peanuts, coarsely chopped
1/2 cup chopped fresh basil

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain very well. Transfer to large bowl.
  • Whisk 3 tablespoons sesame oil, honey, soy sauce, vinegar and cayenne pepper in small bowl to blend. Season with salt. Mix half of dressing into pasta. Heat remaining 1 tablespoon oil in heavy large pot over medium-high heat. Add bell peppers, peas and onion and sauté until just beginning to wilt, about 2 minutes. Add vegetables to pasta. Mix in peanuts, basil and enough dressing to coat. Serve, passing any remaining dressing separately.

1 medium head cabbage, shredded
4 green onions, sliced
½ cup slivered almonds
1 (3 ounce) package ramen noodles with seasoning packet
½ cup chopped fresh cilantro
¼ cup vegetable oil
½ cup rice wine vinegar

Steps:

  • In large bowl, combine cabbage, green onion and almonds. Crush ramen noodles and add to bowl with cilantro. Toss.
  • In small bowl, combine oil, vinegar and contents of ramen noodle seasoning packet. Toss dressing with cabbage mixture. Serve.

8 ounces vermicelli
1 red pepper, sliced thin
1/2 cucumber, sliced thin
6 ounces shrimp, cooked
4 1/2 ounces crabmeat
1 tablespoon fresh ginger, chopped fine
1 clove garlic, chopped
2 tablespoons sesame oil
1/2 teaspoon black pepper
1 1/2 teaspoons salt
2 tablespoons lemon juice
1 tablespoon vegetable oil
1 teaspoon red wine vinegar

Steps:

  • Wash and trim peas.
  • Place peas in bowl and cover with boiling water.
  • Let stand 10 minutes; drain and set aside.
  • Prepare vermicelli according to package directions; drain, rinse in cold water and set aside.
  • In a large bowl, combine noodles, peas, pepper, cucumber, shrimp and crabmeat.
  • In a separate bowl, combine remaining ingredients and mix thoroughly.
  • (Use a tightly covered jar to shake dressing.) Pour dressing over salad and toss to mix.
  • Chill.
