EASY CANTONESE BEEF CURRY



Easy Cantonese Beef Curry image

Introduced by Indian monks, curry dishes-such as Cantonese beef curry-are popular in southern and western China.

1/2 pound flank steak
1 medium onion
1/2 cup chicken broth or stock
1 teaspoon dark soy sauce
1/2 teaspoon sugar
1/4 teaspoon salt
1 1/2 teaspoons cornstarch (mixed in 3 tablespoons water)
2 tablespoons curry powder (mixed with 2 tablespoons water to make a paste)
1 to 2 teaspoons Chinese rice wine or dry sherry
1 to 2 tablespoons peanut, canola or other vegetable oil for stir-frying

Steps:

  • Cut the beef across the grain into thin strips, approximately 1 1/2 inches long and 3/4 inch wide. Peel and chop the onion.
  • In a small bowl, combine the chicken broth, dark soy sauce, sugar, and salt. Set aside. In another small bowl, combine the cornstarch with water and set aside.
  • Preheat the wok on medium-high heat; the wok is ready when a couple of drops of water sizzle are added.
  • Pour 1 to 2 tablespoons oil to the wok, drizzling to coat the sides. When the oil is hot, turn the heat down to medium and add the onion. Add the curry powder, brown briefly, then add the water to make a paste.
  • Turn the heat back up to medium-high. Push the onion to the sides and add the beef in the middle. Sear for about 30 seconds, then stir-fry until the redness is gone, about 2 minutes. Splash the beef with the rice wine or dry sherry while stir-frying.
  • Add the sauce to the wok. Bring to a boil and cook for another 2 to 3 minutes.
  • Remove the wok from the heat. Give the cornstarch and water mixture a quick re-stir. Stir the cornstarch and water mixture into the sauce. Return the wok to the burner and continue stirring until the sauce thickens. Serve hot over rice.

This came from a Chinese friend who was teaching Chinese cooking classes at the time. If you like curry then more curry powder can be used. I prefer it milder as is.

1 lb steak (use lean frying or grilling steak, I use rump in NZ)
3 potatoes
2 onions
1 teaspoon curry powder
1 chicken stock cubes or 1 teaspoon chicken stock powder
2 tablespoons oil
2 tablespoons oil, extra
1 teaspoon curry powder, extra
1 tablespoon satay sauce
1 teaspoon Chinese chili sauce
1 tablespoon soy sauce
1 cup water (plus)
1/3 cup water (or more if needed)
1 tablespoon sherry wine
3 teaspoons cornflour

Steps:

  • Slice steak thinly across the grain.
  • Peel potatoes and cut into 1/2 inch cubes.
  • Peel onions, cut into quarters and separate each layer.
  • Heat oil in pan or wok, add potatoes, cook 5mins or until just tender but still crisp, tossing occasionally.
  • Add onions and curry powder, cook further 2 minutes, remove from pan.
  • Heat extra oil in pan, add steak, cook until golden brown on both sides and cooked through.
  • Add potatoes, onion and extra curry powder; toss for 2 minutes.
  • Add combined sate sauce, chilie sauce, soy sauce, water, stock cube, cornflour and sherry.
  • Toss until sauce boils and thickens.
  • Reduce heat, simmer 30 minutes or until potatoes are cooked.
  • Serve with boiled rice.

Steps:

  • Fry off onions in a little oil until softening then add mushrooms. Meanwhile mix the curry concentrate with boiling water a little at a time until you have the desired consistency (you dont need a lot, a little goes a long way), you will need around about just over a pint of made up sauce. If you are using beef or chicken, fry off with the onions. If prawns or seafood are being used, add with the mushrooms, as they take a shorter time to cook. Add the curry sauce and the frozen peas (no need to cook as the heat of the sauce will do that for you). Taste for seasoning, if it tastes a little bland it will need a pinch of sugar, not salt por pepper. It all depends on what make of sauce it is, they all come up a bit different. If you want a hotter sauce you could add some cayenne pepper.
  • Tip
  • You can get the chinese style curry paste concentrate from asian supermarkets. Everyone lives near one, just google your nearest. I get most of my meat and seafood in my local one as they are better quality and 10 times cheaper than the supermarkets.

  • In a skillet or wok, heat the oil over medium high heat. Add the onions and garlic and cook until translucent and just slightly caramelized.
  • Add the ground beef, breaking it up with a spatula. Cook until browned. Next, add the curry powder, turmeric, cumin, sugar, black pepper, and salt. Stir everything together and allow the mixture to cook for another couple of minutes.
  • While that’s happening, make a cornstarch slurry by mixing the beef broth with 1 tablespoon of cornstarch. Stir the slurry into the beef mixture and simmer for a few minutes, until the entire mixture has thickened. You’ll know it’s ready when there’s no more pooling liquid––just a very viscous curry beef! Transfer the beef mixture to a bowl and allow to cool.
  • Once the filling has cooled, take your puff pastry out of the freezer and defrost for about 35-40 minutes--no more. Unfold each puff pastry sheet, and cut each one into 9 squares.
