BEST SAUTéED CHINESE SPINACH
Best Sautéed Chinese Spinach is a vegetarian sauteed or pan fried spinach recipe, with baby spinach or kale, broth, soy sauce, garlic, ginger and more!

Steps:
- Wash and remove the stems from the spinach or kale, if necessary.
- Combine the broth, soy sauce, sugar, cornstarch and sesame oil in a small bowl. Taste and if needed add salt. I only add salt if I use low sodium broth and soy sauce. If either have salt I don't generally add any.
- Heat the vegetable oil in a skillet over medium heat until it shimmers or when a drop of water flicked in it dances.
- Add the garlic and stir. If garlic starts to brown you need to reduce your heat.
- Quickly stir the soy mixture to make sure the cornstarch is totally dissolved. Add to the garlic in the skillet.
- Simmer for a few minutes until mixture thickens.
- Increase the heat, add the spinach and cook.
- Stir, with a wooden spoon, until starting to wilt and totally coated in soy mixture, about a minute.
- When serving, serve with a slotted spoon to reduce juices or serve juices on top of rice.
- Enjoy!
EASY FRIED SPINACH
This is a dish I stumbled across while I was in China and tried to emulate. Of all my various original recipes, this is the one of my families favorites. It is simple, requires few ingredients and is easy and fast.

Steps:
- Melt the butter with the canola oil in a large skillet over medium heat until it stops bubbling. This allows the water from the butter to evaporate. Add the garlic; cook and stir for about 2 minutes, until it is just beginning to brown. Put in the spinach leaves and cook for about 5 minutes while stirring, until the leaves are dark and are about 1/4 of their original size.

DEEP FRIED SPINACH
Sounds a little crazy, but this deep fried crispy spinach is something the kids will even eat! Light, crispy, and so good.

Steps:
- Heat oil in deep-fryer to 375 degrees F (190 degrees C). Place a large handful of fresh spinach in fryer basket, and submerge to cook for about thirty seconds. Drain spinach on paper towels, and repeat with remaining batches. Add a little salt and pepper to taste.

STIR-FRIED SPINACH WITH GARLIC

- In a large wok over medium heat, heat oil. Stir-fry salt and spinach for 1 minute. When spinach has wilted add sugar and garlic and stir-fry 2 to 3 minutes more. Plate spinach, serve warm or cold.
FRIED GARLIC AND BABY SPINACH SAUTE
Steps:
- In a wok, add canola oil and garlic and slowly heat. Eventually, the garlic will start frying. Carefully watch garlic and strain out once the garlic is light brown and crisp. Save the oil. Wipe out wok and bring to high heat. Add 1 tablespoon garlic oil and quickly stir in the spinach. Season and add back the crispy garlic and stir in the vinegar. Check for seasoning.
STIR-FRIED SPINACH WITH GARLIC

Steps:
- Wash the spinach thoroughly.
- Remove all stems leaving just the leaves.
- Heat the wok (or large frying pan) until it is VERY hot.
- Add the oil.
- When the oil it is very hot and slightly smoking, add the garlic and salt.
- Stir-fry both for 10 seconds.
- Add the spinach and stir-fry for about 2 minutes to coat the spinach leaves thoroughly with the oil, garlic and salt.
- When the spinach has wilted to about one-third of its original size, add the sugar.
- Continue to stir-fry for another 4 minutes.
- Transfer to a plate and pour off any excess liquid.
- Serve hot or cold.
SPINACH FRIED RICE
This is an easy to throw together not so "fat" fried rice that give you a way to satisy the craving for "fried"

- In a wok or large frying pan over medium high heat, saute the spinach and garlic in the oil for 2 minutes, stirring constantly.
- Transfer to a platter In the same pan, heat the wine and saute the celery or bok choy and mushrooms, stirring constantly, for 3 minutes.
- Add the rice, scallions and spinach.
- Heat through.
- Season with soy sauce or tamari.
