- In a small saucepan, combine the butter, oil and chocolate. Cook and stir over low heat until chocolate is melted. Remove from the heat. Add the water; pour into a mixing bowl. Cool to room temperature. Beat in the eggs, sugar and vanilla. Combine the flour, cinnamon, baking soda and salt; add to the chocolate mixture alternately with buttermilk. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° until a toothpick inserted near the center comes out clean, 30-35 minutes. Remove to a wire rack. , In a small saucepan, combine the butter, milk and chocolate. Cook and stir over low heat until the chocolate is melted. Remove from the heat. Stir in confectioners' sugar and vanilla until smooth; fold in pecans. Spread over warm cake. If desired, sprinkle with additional chopped pecans.

- Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.
- Mix flour, baking soda, and salt together in a large bowl. Add melted butter, brown sugar, and white sugar; beat with an electric mixer until smooth. Add egg and vanilla; beat until combined. Mix in cocoa powder until incorporated. Stir in chocolate chips and cinnamon.
- Drop hazelnut-sized balls of dough 2 inches apart onto the prepared baking sheets.

CREAMY CHOCOLATE PUDDING PARFAIT
Steps:
- In a medium pot combine milk and vanilla pudding mix, place over medium heat whisking constantly. Bring to a boil while continuing to whisk the mixture.
- In 3 medium bowls place white, dark and milk chocolate chips. Combine reserved chips together in a small bowl, mix and set aside.
- Remove mixture from the heat and evenly divide the hot pudding over the 3 bowls. Wait 1 minute then whisk the mixture to incorporate and melt the chips into the pudding.
- Set up 3 resealable bags into 3 large glasses so that it will be easy to pour the warm pudding into the bags. Pour the pudding into separate bags. Tie the bags closed with a twist tie. Place pudding into the refrigerator for 2 hours, or until pudding is chilled and set.
- Cut off the corner of each bag. Pipe each of the pudding mixtures evenly into 6 champagne glasses starting with the dark chocolate, white chocolate and ending with milk chocolate.
- Garnish with reserved chocolate chips.
CHOCOLATE CINNAMON PARFAIT
A wonderful frozen, make-ahead dessert for chocolate lovers! This recipe was developed by Ms. Henna Ström; it won 1st prize in a chocolate recipe competition organised by Kodin Kuvalehti magazine! Cooking time is freezing time, which in turn is an estamate, as I usually make this in the morning, put in the freezer, and serve at dinner time! Do not keep this in the freezer for days though, as the texture will suffer.

Steps:
- Whip cream until stiff peaks form.
- Transfer 1/3 of the whipped cream into another bowl, add cinnamon (to the 1/3) and stir to combine.
- Beat one egg yolk well.
- Measure sugar and water into a small saucepan and bring the mixture slowly to a boil, stirring.
- As soon as the the mixture begins to boil, remove from heat.
- Slowly pour half of the hot sugar-water mixture on the beaten egg yolk, stirring constantly.
- Allow the mixture to cool.
- Add the cinnamon-flavoured whipped cream to the egg-sugar mixture, stir to combine.
- Spoon the mixture into four small drinking glasses and place in the freezer.
- Melt chocolate in a water bath or microwave.
- Beat the remaining egg yolk well.
- Reheat the remaining sugar-water mixture, and slowly add it to the egg yolk, stirring constantly.
- Allow to cool.
- Add cocoa powder and melted chocolate to the mixture, stir.
- Add the remaining whipped cream, stir to combine.
- Spoon the mixture on top of the cinnamon parfait and return the glasses to the freezer until frozen and ready to serve.
- Bring to room temperature some 10 minutes before digging in.

COCONUT CREAM AND CHOCOLATE RICE CAKE PARFAIT
My wife Polly discovered this technique of chilling the can of coconut milk, taking the crema off the top and whipping it into whipped cream. I thought it was so cool, to get the whipped cream experience but dairy free. The last few years I've tried to reduce my gluten intake, i.e. I don't drink beer anymore (but I still eat scallion pancakes and dumplings for the record). Hence I developed this gluten-free rice cake that is still super chocolately and decadent. I have to say this, everyone loves parfait, said by the donkey on Shrek!

- Preheat the oven to 400 degrees F. Grease a 1/3 hotel pan that is 2 1/2-inches deep, about 3 quarts in size, with the room temperature butter. Set aside.
- Add the rice flour to a medium bowl and whisk in the liquid egg substitute until thoroughly combined. Set aside.
- Place the chocolate in a heatproof bowl and set aside. Place the oat milk in a saucepan with the cinnamon sticks and bring to a simmer. Once simmering, pour over the chocolate and cover with a plate, pot lid or whatever will cover the top of the bowl. After at least 5 minutes, remove the cinnamon sticks and whisk the chocolate until smooth. Add the chocolate ganache to the rice flour mixture and carefully stir to combine. Pour into the greased pan and put into the oven. Bake until evenly browned, about 10 minutes.
- Remove from the oven and let cool slightly, about 5 minutes. Turn the cake out onto a wire rack lined sheet tray and let cool completely at room temperature.
- Remove the top cream from the coconut cans and discard or reserve for another use. Pour the rest of the coconut can contents into the bowl of a stand mixer fitted with a whisk attachment. Whisk until thickened and holds stiff peaks. Set aside and save in the refrigerator until the cake is completely cooled.
- Make the parfaits in rocks glasses. Cut out small circles of the cake to fit them - 2 to 3 inches in size. Place a piece of cake on the bottom, top with the coconut whipped cream and repeat until you end with the dollop of cream on top. Dust cocoa powder on top for garnish and serve.

this came in my email described as "Intense, heavenly chocolate is all you'll think about when you taste this dessert, though it's packed with all the good things found in tofu. Make sure the tofu is smooth before adding the chocolate mixture." this keeps refrigerated for up to 2 days.

- Place wafers in a zip lock plastic bag, seal and crush with a rolling pin.
- Alternatively, pulse wafers in a food processor.
- set aside.
- Puree tofu in a food processor, scraping down the sides as needed, until completely smooth.
- Combine chocolate and cocoa in a medium bowl.
- Add boiling water and stir with a wooden spoon until the chocolate has melted and the mixture is smooth.
- Stir in vanilla and orange zest.
- Mix in confectioners sugar, a little at a time, until smooth.
- Add the chocolate mixture to the processor; puree until smooth and well blended, scraping down the sides as needed.
- Spoon about 2 teaspoons chocolate wafer crumbs into each of 5 parfait glasses or dessert dishes.

- Top with another 1/4 cup mousse and finish with a sprinkling of crumbs.
- Cover and refrigerate for at least 1 hour.

- Preheat the oven to 350 degrees F (175 degrees C). Grease two 9x5-inch loaf pans and line the bottoms with parchment paper.
- Sift flour, cocoa powder, cinnamon, salt, baking powder, and baking soda together into a bowl. Whisk buttermilk, water, and vanilla extract together in a separate bowl.
- Combine butter and sugar in a third, large bowl; beat with an electric mixer until light and creamy, about 5 minutes. - Make the chocolate mixture: Place chocolate in a medium heat-proof bowl. Heat 1/2 cup heavy cream in a small saucepan, and pour over chocolate. Let stand 10 minutes, and stir until completely melted and smooth. Set aside.
- Place egg yolk and egg in the bowl of an electric mixer fitted with the whisk attachment, and beat until light and frothy, about 2 minutes. Set aside.
- Place sugar, corn syrup, and the water (do not stir) in a small saucepan set over medium heat until a candy thermometer registers 245 degrees. Wash down sides of pan with a pastry brush dipped in water to prevent crystals from forming. With mixer on low, slowly pour sugar mixture into eggs; mix until combined mixture is room temperature, about 2 minutes.
- In another bowl, whip remaining 1/3 cup cream to soft peaks. Fold into egg mixture, and fold in chocolate. Fill 3-ounce plastic cups one-third full. Place in freezer until firm, 4 to 5 hours. Unmold onto a baking sheet lined with waxed paper; cover with plastic wrap, and return to freezer for at least 1 hour.
- Make the mint mixture: Prepare an ice bath, and set aside. Bring a large pot of water to a boil; quickly blanch fresh mint 1 minute. Transfer to ice bath to stop cooking and preserve bright color; let cool completely. Remove from ice bath, and place on paper towels; gently squeeze to extract excess water. Set aside.
- Place sugar, corn syrup, dried mint, and the water (do not stir) in a small heavy saucepan over medium heat until a candy thermometer registers 245 degrees. Wash down sides of pan with a pastry brush dipped in water to prevent crystals from forming. Remove from heat; let cool.
- Add blanched fresh mint; transfer to the jar of a blender. Blend until mixture is a smooth paste, about 3 minutes. Strain through a fine mesh sieve back into saucepan. Place over medium heat, and gently reheat 2 to 4 minutes. Place egg yolks and egg in the bowl of an electric mixer fitted with the whisk attachment, and beat until light and frothy, about 4 minutes. With mixer on low speed, slowly pour sugar mixture into eggs; continue mixing until combined mixture is room temperature, about 5 minutes.
- In another clean bowl, whip cream to soft peaks; fold into egg mixture with a rubber spatula. Fill 6-ounce ramekins or custard cups halfway, and place frozen chocolate mixture in the center of each. Level with remaining mint parfait mixture. Cover with plastic wrap, and place in freezer until completely set, 5 to 6 hours. Store in freezer up to 1 month.
- To serve, unmold parfaits onto serving plates, and garnish with chocolate sauce and candied mint leaves, if desired.
