Chocolate Covered Candied Orange Peel Recipe

Ingredients:

  1. navel oranges
  2. sugar
  3. water
  4. corn syrup
  5. salt
  6. semi-sweet chocolate baking squares
  7. shortening

Steps:

  1. with a sharp knife , score orange peel into four wedge-shaped sections
  2. loosen peel with a spoon and remove
  3. save fruit for another use
  4. place peel in a heavy saucepan and cover with cold water
  5. bring to a boil
  6. reduce heat
  7. cover and bring to a boil
  8. reduce heat
  9. cover and simmer for 20 minutes
  10. drain , then repeat process twice , draining well each time
  11. cool for 5 minutes
  12. carefully scrape off excess pulp from peel
  13. cut the peel into 1 / 4 inch strips
  14. in another saucepan , combine sugar , water , corn syrup and salt
  15. cook over medium heat until clear
  16. add orange peel strips
  17. boil gently until all syrup is absorbed and peel is transparent , about 30-35 minutes
  18. using a slotted spoon , transfer strips to wire racks for at least 3 hours or until dry
  19. melt the chocolate and shortening
  20. stir until smooth
  21. dip each strip halfway into chocolate
  22. dip the other half in sugar if desired
  23. cool on racks that have been coated with nonstick cooking spray
  24. store in a covered container in the refrigerator
  25. yield: about 3 cups
