Chocolate Covered Raisin Oatmeal Cookies Recipe

  1. rolled oats
  2. butter
  3. shortening
  4. granulated sugar
  5. brown sugar
  6. baking soda
  7. eggs
  8. vanilla
  9. all-purpose flour
  10. walnuts
  11. chocolate-covered raisins


  1. for oat flour: put 1 cup rolled oats in food processor or blender
  2. cover and blend or process until oats turn into a powder
  3. transfer powder to a small bowl
  4. if using a blender do 1 / 2 cup of the oats at a time
  5. set aside
  6. beat butter and shortening in a large mixing bowl with on electric mixer on medium to high speed for 30 seconds
  7. add granulated sugar , brown sugar and baking soda
  8. beat until combined , scraping sides of bowl occasionally
  9. beat in eggs and vanilla
  10. beat in oat flour and all purpose flour
  11. stir in the 1 cup rolled oats , walnuts and chocolate-covered raisins
  12. drop dough by the well-rounded teaspoonful 2 inches apart on an ungreased cookie sheet', "bake in a 350' oven for 8-10 minutes or until the edges are lightly browned", 'transfer to wire racks and cool
