Ingredients:

  1. whipping cream
  2. eggs
  3. vanilla
  4. all-purpose flour
  5. sugar
  6. cocoa powder
  7. baking powder
  8. salt

Steps:

  1. preheat oven to 175 c
  2. grease an 8 x 4 inch loaf pan and dust with powdered sugar , shaking off excess
  3. whip the cream until stiff
  4. beat in eggs and vanilla
  5. sift together the remaining ingredients and add to the cream mixture
  6. stir to combine
  7. spoon batter into the prepared pan and bake in the preheated oven for 45-55 minutes , or until the cake just begins to pull from the edges of the pan
  8. cool the cake in the pan for 10 minutes before turning out on rack
  9. the cake will keep in the fridge for up to a week wrapped air-tightly in plastic wrap and foil
