ENGLISH CHOCOLATE CRISPS

Steps:
- Chop the two chocolates and place 3/4 of them in a heat-proof bowl. Place the bowl in a microwave on high heat for 30 seconds, remove the bowl, and stir the chocolates vigorously with a wooden spoon. Continue heating and stirring the chocolates in 30-second intervals, switching to 15-second intervals as the chocolates start to melt, continuing to stir vigorously with a wooden spoon in between each heating. Heat only until the chocolates are just melted. Add the remaining quarter of the chocolates and stir vigorously until melted and smooth. (If the chocolate isn't completely melted, microwave it for another 5 or 10 seconds.)
- Place the cornflakes in a medium bowl, pour the chocolate mixture over the cornflakes, and immediately fold them together with a rubber spatula, being careful not to break up the cornflakes. You'll want to work quickly so the chocolate doesn't harden. Fold in the cranberries.
- Line a sheet pan with parchment paper. Working with 2 soup spoons, spoon 8 mounds of chocolate crisps onto the paper. Set aside at room temperature to cool completely until hardened. Peel the crisps off the paper and serve.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange pecans on a baking sheet.
- Bake pecans in the preheated oven until fragrant and lightly browned, 7 minutes.
- Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Line a baking sheet with aluminum foil; grease with butter.
- Combine caramels, water, and butter in a saucepan over low heat; cook, stirring occasionally, until caramels are melted and smooth. Fold in pecans.
- Drop caramel mixture by the spoonful onto the prepared baking sheet. Allow to cool and harden.
- Drizzle chocolate over caramel nut clusters. Refrigerate to set, about 1 hour.

CHOCOLATE CANDY BAR ROUNDS

- For the chocolate layer: Combine the chocolate chips and coconut oil in a double boiler over low heat. Heat until melted and stir until smooth. Let sit until thickened slightly, 10 to 15 minutes.
- Spoon 1 tablespoon of the chocolate mixture into each cavity of a 6-cavity round cylinder silicone mold (2-inch-wide by 1-inch-deep cavities). Use a small pastry brush to paint the chocolate up the sides of the molds, making sure to cover the entire inside of each mold. (If your chocolate is too hot and doesn't coat the molds, refrigerate for a few minutes, then try again.) Refrigerate or freeze until set, about 10 minutes.
- For the nougat layer: Stir the marshmallow creme and peanut butter together in a small bowl. It should be the consistency of putty.
- For the caramel layer: Put the caramel sauce in a separate bowl. Stir in the confectioners' sugar 1 tablespoon at a time, until the mixture is thick but still pourable.
- For the assembly: Grease 2 teaspoons with coconut oil spray. Use the teaspoons to place a heaping tablespoon of the nougat into each mold, pressing to make a smooth layer. Sprinkle over the peanuts and press into the nougat. Use the same teaspoons to add a heaping tablespoon of the caramel to each mold, stopping about 1/4 inch from the top of the molds. Pour the remaining chocolate over the caramel and spread gently with a small offset spatula to completely cover the caramel. Refrigerate or freeze until set, at least 30 minutes.
- Remove the chocolates from the molds. Microwave the candy melting wafers in a microwave-safe bowl in 30-second increments, stirring in between each, until melted and smooth. Drizzle the melted white candy over top of the rounds and sprinkle over the popping candies to decorate.
EASY CHOCOLATE TRUFFLES AKA: COOL WHIP CANDY
A friend of ours dropped by one day with a few of these to share. He got the recipe from his grandmother. There are very few recipes I make using Cool Whip but this is now one of them. I looked up Cool Whip Candy here on Zaar & there are a couple others posted but they use different cookies and Hershey candy bars. I liked that this recipe uses chocolate chips, as they melt faster & I could buy a brand that I favor over Hershey. We store the truffles in a large resealable bag in the freezer & just grab one or two whenever we have a bit of a sweet tooth. Aside from some heavy duty stirring this recipe is very kid friendly. Cook time is chill time.

- In large microwave safe bowl, melt the chocolate chips slowly. About 30 seconds at a time, stirring between each increment until the chips are melted.
- Slowly start folding in the thawed Cool Whip & then continue to stir until well incorporated. (If Cool Whip is not well thawed the chocolate will freeze into tiny bits, ending with texture that resembles a rice krispie treat when eaten. The optimal outcome is to have a center that is light & fluffy like a 3 Musketeers candy bar.) Either way, they are very good.
- Line a cookie sheet with waxed paper or parchment.
- Roll a Tablespoon sized amount in your fingers or use a small (1-1/2 inch)cookie scoop and form into balls. Set aside on prepared cookie sheet. Repeat until the mixture is used up.
- Put cookie sheet with truffle centers into freezer for about 20 minutes (or longer to harden a bit).
- When ready to roll, remove centers from freezer & let sit on counter for just a few minutes.
- Put crushed graham crackers into a shallow bowl, roll each ball to cover and then place back on cookie sheet.
- When finished, put the cookie sheet back in freezer for an hour or two.
- Store covered in refrigerator or for long-term storage put the truffles into a large resealable bag & store in the freezer.

Steps:
- Melt the butter in a saucepan; break the chocolate into smaller pieces and melt with the butter. Stir.
- Add rice crispies and raisins (or other ingredient of your choice).
- Pour the mixture into a 9 x 13 inch pan or cookie sheet with raised edges; should be lined with parchment paper.
- Let the mix cool and cut/break into smaller pieces.
- Keep refrigerated.
