Chocolate-Dipped Frozen Bananas image

These are so colorful and festive looking it makes you feel like it's a party when you look at an assortment of them. And they couldn't be easier to make, even your kids could do it. You can use white chocolate too, for a more wintry or icy look.

8 medium bananas, peeled
8 wooden popsicle sticks
32 ounces semisweet chocolate, chopped or chips
4 tablespoons unsalted butter

Steps:

  • Dipping decorations: granola, chopped nuts, sprinkles, jimmies, crushed cookies, and toasted coconut
  • Line a sheet pan with waxed paper. Cut 1-inch off the end of each banana. Insert a popsicle stick into the cut-end of each banana, pushing the stick halfway in, leaving the other end exposed for use as a handle. Place the bananas on the sheet pan and freeze 1 hour.
  • Melt the chocolate and butter in a bowl over a saucepan of simmering water, stirring occasionally.
  • Arrange the dipping decorations on several flat plates. Working with 1 banana at a time, dip it in the chocolate and turn to completely coat (spoon some on, if needed). Roll the dipped banana in the desired decorations, transfer to the sheet pan, and return to the freezer.
  • Once frozen, store the bananas in an airtight container.
  • Serving suggestion: To serve at a kid's party, paint a hunk of styrofoam and stick the banana handles in the top, so they stand upright.

8 popsicle sticks
3 cups good quality chocolate bar
3 tablespoons butter, cut up
Chopped nuts
Toasted coconut
Cookie crumbles
Colored sprinkles or chocolate jimmies
Mini chocolate candies or mini semi sweet chips, for chocoholics
Granola

Steps:

  • Peel and cut the bananas in half crosswise, so that you have 8 pieces. Place peeled bananas on sticks. Line a cookie sheet with waxed paper. Place bananas on the cookie sheet in the freezer, keep them in there as long as possible, at least 10 minutes. Heat chocolate bits with butter in a double boiler over low heat until the chocolate melts and butter is incorporated. Dip the chilled bananas in chocolate and roll with your favorite topping. Chill or freeze until ready to serve.

Steps:

  • Stir chocolate and oil in heavy small saucepan over low heat just until smooth. Let stand 15 minutes to cool.
  • Place each topping in separate shallow dish. Line baking sheet with foil. Arrange banana slices on foil. Using fingers, dip 1 banana slice in chocolate, coating completely. Shake off excess chocolate. Drop dipped banana in 1 topping. Using clean hand, sprinkle more topping over banana to coat; transfer to foil-lined sheet. Repeat with remaining bananas, chocolate, and toppings. Freeze until firm, about 3 hours, then serve.

1 cup peanut butter
4 bananas, sliced into 1-inch rounds
8 (1 ounce) squares semisweet chocolate
1 tablespoon shortening
⅓ cup toffee baking bits

Steps:

  • Cover a baking sheet with waxed paper.
  • Spoon a thin layer of peanut butter on top of each banana slice. Insert a toothpick through the peanut butter layer into the banana. Place banana bites onto the prepared baking sheet; freeze for 30 minutes to overnight.
  • Melt chocolate and shortening in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  • Cover another baking sheet with waxed paper.
  • Remove 2 to 4 banana bites from the freezer at a time; coat each bite with chocolate mixture. Place coated banana bites on the second baking sheet; sprinkle each with toffee bits. Repeat until all the bites are coated. Return banana bites to freezer until set, at least 1 hour. Allow bites to sit in room temperature for about 15 minutes before serving.

6 firm bananas
2 cups chocolate chips
2 tablespoons vegetable shortening
shredded coconut, chopped nuts, sprinkles, ect

Steps:

  • Cut off a inch off the bottom of each unpeeled banana, and gently insert a popsicle stick into each one. Then unpeel bananas. Place banana's onto a baking sheet and freeze until frozen.
  • In a double boiler melt chocolate chips and shortening. Dip frozen bananas into melted chocolate, then roll in coconut, chopped nuts, sprinkles, or anything you want.
  • Eat immediatly or freeze to eat them another time. Enjoy!

4 ounces milk chocolate, chopped
1 tablespoon peanut butter
1 cup peanuts, finely chopped
2 large bananas, cut into 1/2-inch pieces

Steps:

  • Melt chocolate in the top of a double boiler or in the microwave, then stir in peanut butter.
  • Place peanuts in a wide, shallow dish. Roll 3 to 4 pieces of banana in the melted chocolate and peanut butter mixture, and stir to coat.
  • Remove bananas using a fork and place in the dish containing peanuts. Roll chocolate-covered bananas in peanuts and coat as best as you can. Once well coated, place bananas on baking sheet lined with waxed paper.
  • Repeat with remaining bananas, re-melting the chocolate mixture if needed. Once complete, place in freezer.
  • Once frozen, store in a freezer bag or airtight container. Thaw for 8 to 10 minutes before eating, to ensure banana bites are frozen, but not rock hard.

  • Prepare your work space. Place a cutting board for the banana slices to your left. In front of you arrange bowls for the toppings and leave a space for the bowl of melted chocolate. To your right, set a parchment or silicone baking mat-lined baking sheet for placing the dipped banana slices. Have 2 forks handy. Your work will flow from left to right (reverse if you are left-handed).
  • Melt the chocolate. Fill the bottom of the double-boiler or saucepan with an inch of water and bring to a simmer. Cover with the top of the boiler or place a metal or glass bowl on the saucepan. Place the chocolate in the bowl. Let the chocolate melt, stirring occasionally, until the chocolate is completely melted. Remove the bowl with the chocolate and transfer to your work station. (Alternatively, melt the chocolate in 15-second bursts in the microwave, stirring between bursts. Stop when there are still a few lumps of chocolate and stir until all the chocolate is melted.)
  • Prepare the bananas and toppings. While the chocolate is melting, peel and cut the bananas into 1/2-inch slices. Pour the toppings into separate bowls.
  • Add the coconut oil to the chocolate. Add the coconut oil to the chocolate and stir until completely combined. The coconut oil will help loosen the chocolate and make a thinner coat over the bananas.
