A dense chocolate cake for those of us who can't tolerate wheat or gluten.

Number Of Ingredients 6

½ cup water
¼ teaspoon salt
¾ cup white sugar
18 (1 ounce) squares bittersweet chocolate
1 cup unsalted butter
6 eggs

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease one 10 inch round cake pan and set aside.
  • In a small saucepan over medium heat combine the water, salt and sugar. Stir until completely dissolved and set aside.
  • Either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate. Pour the chocolate into the bowl of an electric mixer.
  • Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. Beat in the hot sugar-water. Slowly beat in the eggs, one at a time.
  • Pour the batter into the prepared pan. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
  • Bake cake in the water bath at 300 degrees F (150 degrees C) for 45 minutes. The center will still look wet. Chill cake overnight in the pan. To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.

I used recipes I found here on Allrecipes.com for chocolate ganache (by INGRIDEVOGEL) and raspberry sauce (by The_Tattooed_Chef). The raspberry sauce complements all that chocolate and makes the cake moist. Both of these recipes are easy, simple, and exceptional as well.

15 ounces semisweet chocolate morsels
15 ounces unsalted butter
1 ¾ cups white sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10-inch cake pan with oil.
  • Combine chocolate, butter, and sugar in a double boiler over simmering water; cook, stirring frequently and scraping down the sides with a rubber spatula, until melted and smooth, about 5 minutes.
  • Pour chocolate mixture into the bowl of a stand mixer fitted with the paddle attachment; beat on low speed until cooled, about 5 minutes. Increase speed to medium; beat in eggs one at a time. Add water and vanilla extract; beat on low speed until blended. Pour into the prepared pan.
  • Place cake pan inside a large baking dish. Pour enough water into the baking dish to come halfway up the sides of the cake pan.

1 cup (2 sticks) unsalted butter, plus more for pan
8 large eggs

1/4 teaspoon fine sea salt
Special Equipment
A 10"-diameter springform pan

Steps:

  • Preheat oven to 350°F. Grease springform pan with butter and line bottom with parchment.
  • Using an electric mixer on high speed, beat eggs in a large bowl until doubled in size, about 5 minutes.
  • Place chocolate chips, salt, and 1 cup butter in a large microwave-proof bowl. Microwave on high in 10-second bursts, stirring between bursts, until smooth and pourable.
  • Using a rubber spatula, gently fold one-third of the whipped eggs into chocolate mixture until incorporated. Fold egg and chocolate mixture back into remaining whipped eggs until incorporated.
  • Transfer to prepared pan; cover bottom and sides of pan completely with foil. Set springform pan inside a large roasting pan; add hot water to a depth of about 1".

1 lb butter
1 cup sugar
1 cup cream
9 eggs
4 teaspoons vanilla

  • Preheat oven to 350°F.
  • In large saucepan, combine chocolate, butter, sugar and cream. Cook and stir until melted. Remove from heat.

1 pound fine quality bittersweet chocolate, finely chopped

Serving suggestions: sweetened whipped cream or crème anglaise

Steps:

  • Preheat oven to 400 degrees F.
  • Line a 9-inch round spring-form pan with parchment paper.
  • In a double boiler, whisking frequently, melt the chocolate with the butter. Set aside for 5 minutes to cool slightly then transfer to an electric mixer fitted with a whisk. Add the eggs and beat at the high speed for 10 minutes. Add the vanilla.
  • Combine the sugar and flour and gently fold this mixture into the whipped chocolate base.
  • Pour the batter into the prepared pan and bake until the cake is firm, but the center still moist, about 15 minutes.

12 ounces bittersweet chocolate, chopped
6 large eggs
1/2 cup sugar
Pinch of kosher salt
Unsweetened cocoa powder, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter the bottom and side of a 9-inch springform pan. Combine the chocolate and 1 1/2 sticks butter in a heatproof bowl. Place the bowl over a saucepan of simmering water (do not let the bowl touch the water) and stir until melted and combined. Remove the bowl from the saucepan and let cool slightly.
  • Combine the eggs, sugar and salt in a large bowl. Beat with a mixer on medium-high speed until pale and thick, 5 to 8 minutes.
  • Gently fold half of the melted chocolate mixture into the egg mixture until just combined, then gently fold in the rest. Pour the batter into the prepared pan and bake until the top is no longer shiny and barely jiggles and a toothpick inserted into the center comes out with only a few crumbs, 35 to 45 minutes. Transfer to a rack and let cool completely in the pan. Remove the springform ring and transfer to a platter; dust with cocoa powder.

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 350°. In top of a double boiler or a metal bowl over barely simmering water, melt chocolate and butter; stir until smooth. Remove from heat; cool slightly., In another large bowl, beat egg yolks until thick and lemon-colored. Beat in chocolate mixture. With clean beaters, beat egg whites and cream of tartar on medium speed until foamy., Gradually add sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until stiff glossy peaks form. Fold a fourth of the egg whites into chocolate mixture, then fold in remaining whites., Transfer to a greased 9-in. springform pan. 225g salted butter , cubed, plus more for the tin
300g dark chocolate , roughly chopped
1 tbsp coffee powder
6 large eggs , whites and yolks separated
100g soft light brown sugar
200g caster sugar
2 tsp vanilla paste
30g cocoa powder
berries , to serve (optional)

Steps:

  • Heat the oven to 160C/140C fan/gas 3. Butter a 23cm springform cake tin and line the base with baking parchment.
  • Melt the butter and chocolate in a medium heatproof bowl in the microwave or over a pan of gently simmering water. Mix the coffee powder with 2 tbsp hot water until dissolved. Stir the coffee into the chocolate and set aside to cool slightly.
  • Whisk the egg whites in a large bowl for 2 mins with an electric whisk until soft peaks form. In another large bowl, whisk both the sugars, the vanilla and egg yolks for 5-8 mins, or until pale and fluffy. Sift the cocoa powder into the egg yolk mixture and mix gently to combine.
  • Stir the cooled chocolate into the egg yolk mixture, then gently fold through the egg whites until smooth. Transfer to the tin and bake for 1hr-1hr 20 mins, or until a skewer inserted into the middle of the cake comes out clean. Allow to cool, remove from the tin and serve with fresh berries, if you like.

10 (1 1/2 ounce) Godiva dark chocolate bars, chopped
1 1/2 cups sugar
1 1/2 teaspoons instant coffee granules
3/4 cup boiling water
3/4 cup butter, softened
6 eggs, at room temperature
1 tablespoon vanilla extract
1 1/2 cups frozen unsweetened raspberries
1/2 cup sugar
1 tablespoon Chambord raspberry liquor
1 1/2 cups heavy cream
2 tablespoons sugar
1 1/2 teaspoons vanilla extract
fresh raspberry, for garnish

Steps:

  • Preheat oven to 350°F.
  • Position rack in lower third of the oven.
  • Butter the bottom and sides of a 9"x2" round springform pan.
  • Line bottom of pan with round of parchment or waxed paper and butter paper.
  • In a food processor fitted with metal blade, place chocolate, sugar, and coffee.
  • Cover and process for 15-20 seconds, until finely ground.
  • With motor running, pour boiling water through the feed tube.
  • Process for 10-15 seconds, until chocolate is completely melted.
  • Using a rubber spatula, scrape down sides of work bowl.
  • Add butter and process for about 5 seconds or until incorpaorated.
  • Add eggs and vanilla and process for about 5 seconds or until mixture is smooth and creamy.
  • Scrape chocolate batter into prepared pan and smooth top with rubber spatula.
  • Bake for 55 minutes, until edges of the cake are puffy and center is just set.
  • Cool cake in pan on wire racks for 30 minutes.
  • Cover and refrigerate for at least 3 hours or until ready to serve.
  • COULIS:.
  • In medium saucepan, place frozen raspberries and sugar.
  • Cook over medium heat stirring constantly with wooden spoon until sugar is completely dissolved and berries are soft.
  • DO NOT LET MIXTURE BOIL.
  • Strain raspberrey mixture through a fine-meshed sieve into a bowl.
  • Add liqueur, cover and refrigerate.
  • DECORATION:.
  • Run a thin-blended knife around edge of cake to loosen it from sides of springform pan.
  • Remove side of sprinform pan.
  • Invert cake onto a serving plate.
  • Peel off paper and refrigerate while preparing whipped cream.
  • In a large chilled bowl, beat cream with sugar and vanilla just until stiff peaks begin to form.
  • Spread thin even layer of whipped cream over top of the chocolate cake.
  • ****Fill a pastry bag fitted with a star tip(such as Ateco #6) with remaining whipped cream. OPTIONAL. Completely cover top of cake with whipped cream rosettes.****.
