CHOCOLATE ICE CREAM CONES

Is it really worth the effort to make your own ice cream cones? Yes! Pre-made cones are fine and all, but crisp, sweet and fresh homemade cones are an extra special way to enjoy your favorite ice cream.

1/2 cup (4 oz, 112g) brown sugar
1/2 cup (4 oz, 112g) granulated sugar
Pinch of salt
2 large eggs
1/2 cup (4 oz, 120 ml) whole milk
1/4 cup (2 oz, 56g) unsalted butter, melted
1 tablespoon vanilla extract
3/4 cup ( oz, g) all purpose flour
1/4 cup cocoa powder

Steps:

  • In a large bowl, whisk together the brown sugar, granulated sugar, salt, eggs, milk, melted butter and vanilla.
  • Whisk in the flour and cocoa until combined. The batter will look like pancake batter.
  • Set aside the batter for 30 minutes or refrigerate overnight. Return the batter to room temperature before making the cookies.
  • If you have a pizelle cookie/waffle cone iron, preheat that. If you don't have a cookie iron, line 2 baking sheets with parchment paper or a silicone baking. mat and preheat the oven to 350°F.
  • Use about 2 tablespoons of batter for each cone or adjust the amount of batter according to the instructions for your cookie iron. Scoop the batter into the center of the cookie iron and immediately spread to cover the surface. Close and bake until set. Remove the cookie from the iron and set it on a work surface. Pour another cookie and while that bakes, wrap the first cookie into a cone shape. Continue working with two cookies at a time. While one is baking, form the other into a cone. As the cones cool continue tweaking the shape until they are set.
  • If baking the cones in the oven, work with 2 cookies at a time on each baking sheet. For each cookie, spread two tablespoons batter to a 5"-6" circle. Bake one sheet of cookies until set, about 10 minutes. While the first set of cookies is baking, spread the cookies onto the other sheet. Remove the first sheet from the oven and put in the second sheet. While the second sheet is baking, form the cones from the first sheet. Continue working with the sets of cookies until all the batter is used up. (see note)
  • Cool completely. Store at room temperature in a tightly covered container.

When you're hanging by the pool with no ice cream truck in sight, cool off with our homemade, customizable version of a classic: an ice cream cone with a crunchy chocolate shell (and cone inner coating) studded with toppings. Coconut oil helps the shell harden quickly, but you can use shortening if coconut isn't your thing. Our favorite combos to try: strawberry ice cream with pistachios, coconut ice cream with toasted coconut and salted caramel gelato with a sprinkle of sea salt. 4 ounces semisweet chocolate, chopped into small pieces
1/4 cup coconut oil or vegetable shortening
Kosher salt
8 small sugar cones
2 pints of your favorite ice cream
1/4 cup chopped nuts or toasted coconut or other topping

Steps:

  • Make a cone holder: Find a small, sturdy, clean box that will fit in your freezer. Turn it over, and cut eight X's about 2 inches apart with a sharp knife. Open up each X with your fingers so it will securely hold an ice cream cone upright.
  • Cook the chocolate, coconut oil and a pinch of salt in a small saucepan over medium-low heat, stirring constantly with a rubber spatula, until melted, about 4 minutes. Transfer to a small bowl.
  • Pour about 1 tablespoon of melted chocolate into a sugar cone, and swirl to completely coat the inside. Pour any excess chocolate back into the bowl. Place the cone in the cone holder. Repeat with the 7 remaining cones. Freeze the cones to set the chocolate, about 10 minutes.
  • Fill each cone to the top with ice cream, and top with an additional 1/3-cup scoop. Return the cones to the cone holder, and freeze to harden the ice cream, about 30 minutes.
  • Dip the cones: Put your desired topping in a small bowl. If the remaining chocolate starts to solidify, heat it in the microwave in 10-second increments, stirring in between, until it is fluid again. Dip each top scoop of ice cream in the chocolate to mostly cover it, leaving a little bit exposed. Let any excess chocolate drip off, then immediately dip the top scoop in the topping. Work quickly, as the chocolate shell sets in seconds.
  • Serve the cones immediately, or put them in the freezer until ready to serve. To freeze individually (for up to 2 weeks), roll the cone up in a large triangle of wax paper and tape closed.

Steps:

  • Line a baking sheet with aluminum foil on top so it's tight fitting. Use the sugar cones to poke holes into the foil with even spacing so they do not touch.
  • Fill a small saucepan with water, about a cup. Place the saucepan onto the burner and bring it up to a simmer. Place a glass bowl onto the saucepan and then pour in the chocolate chips and coconut oil. Mix the chocolate chunks often to help them melt.
  • Once the chocolate is completely smooth and melted start filling the cones and drain out the excess.
  • Repeat until all cones are finished and allow to harden in the fridge for at least 30 minutes before using.

Steps:

  • In a small bowl, combine ½ cup (85 G) chocolate chips and the heavy cream. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total. Cover with plastic wrap and refrigerate until set, about 20 minutes.
  • In a large bowl, combine the remaining chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth, about 1 minute total.
  • Wrap a 9x5-inch (22x12 cm) loaf pan in foil, keeping the foil taut across the top. Set nearby.
  • Spoon about 2 tablespoons of the melted chocolate-coconut oil mixture into a cone, flip upside-down, and spin to coat the inside, letting excess chocolate drip back into the bowl. Poke the cone through the foil to prop upright, and repeat with the remaining cones. Chill in fridge until set, about 2 minutes.

  • While the chocolate is still wet, quickly dip the cones in the chopped peanuts to coat.

  • In a medium bowl, microwave chocolate and vegetable oil for about 1 minute. Stir every 20 seconds until smooth.
  • Place ice cream cones on a small lined baking sheet. (Make sure you have cleared space in your freezer for the sheet.). Drizzle about 1 teaspoon melted chocolate into the bottom of each ice cream cone. Place in the freezer for 10 minutes, to set chocolate.

1 tablespoon malt powder (for milk-chocolate variation only)
4 cake cones
1/2 cup roasted cashews, peanuts, or hazelnuts, chopped
1 pint strawberry, caramel, or chocolate ice cream

Steps:

  • Shell: Combine chocolate and oil in a heatproof bowl set over (but not in) a pot of barely simmering water. Gently stir just until melted and smooth. Remove from heat and let cool completely, 20 to 30 minutes. Mixture should thicken slightly but still be pourable (if it thickens too much, return bowl to pot of simmering water for 10 to 15 seconds).
  • Ganache: Bring cream to a boil in a small saucepan or microwave-safe bowl. Pour over chopped chocolate; let stand 5 minutes. Stir until smooth. Stir in malt powder, if using.
  • Assembly: Dip top of cones (about 1/2 inch) into shell, allowing excess to drip back into bowl. Roll in nuts. Transfer to freezer until set, 2 to 3 minutes. Sprinkle 1 tablespoon nuts into bottom of each cone, then fill halfway with ganache. Return to freezer until ganache is set, about 30 minutes. Top each cone with a scoop of ice cream. Pour 1 to 2 tablespoons shell over each scoop and quickly sprinkle with more nuts. Serve immediately, or freeze, loosely covered, up to 1 day.
