- In a large bowl, cream shortening and sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine the flour, cocoa, salt and baking soda; gradually add to creamed mixture and mix well., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 8 minutes. Press a marshmallow half, cut side down, onto each cookie; bake 2 minutes longer. Remove to wire racks to cool., In a small bowl, beat the butter, confectioners' sugar, cocoa and salt until smooth. Add enough milk to achieve a spreading consistency. Frost cookies.

chocolate brownie-like cookies with a marshmallow center frosted with chocolate frosting. This one came from an older lady friend (Amy Walling) I knew as a kid who also taught me to crochet. This cookie is not for someone who is watching their figure, very decadent. I always double the batch because these cookies do not last long and you have enough frosting for a double batch.

Steps:
- Cookies:.
- cream together butter and sugar with a hand held electric mixer.
- Add egg, then vanilla and milk.
- Then add flour, salt, baking soda, and cocoa.
- Drop by spoonfuls on to a greased cookie sheet.
- Bake @ 350 degrees for 8 minutes
- Then press marshmallow (cut side down) on to cookie.
- Put cookies back in oven for 2 more minutes.
- Let cookies cool then frost.
- Frosting:.
- In a sauce pan combine sugar, milk and butter.
- Bring to a boil, stir and remove from heat.
- Add chocolate chips to hot mixture and let cool stirring occasionally. Frosting will come together as it cools.

These can be as healthy as you want them, but they are to die for! If you can, I urge you to invest in a stone baking sheet, they are fabulous for making cookies. Also, take the cookies out before you think they're done; they will crisp up after they're taken out.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat white sugar, margarine, and brown sugar together in a bowl using an electric mixer until creamy. Add egg white and vanilla extract; mix until well blended.
- Combine flour, cocoa powder, baking soda, and salt in a separate bowl. Add flour mixture to the sugar mixture gradually, using a wooden spoon to work the dough together. Stir in chocolate chips and pecans.
- Drop dough by the teaspoonful onto a baking sheet. Smoosh cookies down a little and make an indentation in the middle of each one. Place a small spoonful of marshmallow cream into the indentations.
- Bake in the preheated oven until golden brown, 8 to 10 minutes. Cool on the baking sheet for 1 minute; transfer to a wire rack to cool completely, about 30 minutes.

Steps:
- In a small bowl, combine flour, corn starch, and confectioners' sugar. Set aside.
- In a large bowl, cream butter and vanilla extract until smooth.
- Add flour mixture and begin mixing on low speed.
- Once mixture begins to get thick, increase speed to thoroughly mix until combined, scraping down sides.
- Scrape batter from beaters, and mix in chocolate chips with a large spoon.
- Refrigerate dough for 1 hour to firm up. (It's important that the dough be cold).
- When ready to bake, preheat oven to 350°F.
- Roll dough into 1-inch balls (no larger).
- Place 1-1/2 inches apart on lined baking sheet, flatten if desired., and bake for 10 to 12 minutes until bottom edges just barely begin to turn brown. (Do NOT over-bake)
- Cool on racks.
- Pour powdered sugar into a bowl or plastic baggie.
- Shake chocolate chip meltaway cookies in powdered sugar.
- Store in an airtight container.

- Preheat the oven to 350°. Prepare cookie sheets with parchment paper or used ungreased sheets.
- In a large mixer bowl, cream the shortening and sugar until light and fluffy, 4-5 minutes. Beat in the egg, milk, and vanilla. In a medium bowl, combine the flour, cocoa, salt and baking soda. Gradually add the flour mixture 1/2 cup at a time into the butter/sugar mixture, mixing well.
- Take about a tablespoon of dough and roll into a ball, then put on the cookie sheet about 2" apart. Bake for 8-9 minutes, then remove from the oven and press one half of a marshmallow into each cookie, pressing down firmly (cookie will crack). Return to the oven and bake for 2 more minutes. Remove cookies from the oven and cool on a rack.
- To make the icing, in a medium bowl beat the butter, powdered sugar, cocoa, and salt until smooth. Add the vanilla and enough milk to get a smooth, spreadable consistency. After the cookies are completely cool, spread the icing generously on each one. Let firm up about one hour before storing.
