Chocolate Mint Pudding Cakes Recipe

Ingredients:

  1. bittersweet chocolate
  2. unsalted butter
  3. eggs
  4. egg yolks
  5. superfine sugar
  6. all-purpose flour
  7. peppermint extract
  8. salt
  9. powdered sugar
  10. peppermint ice cream
  11. fresh mint leaves

Steps:

  1. preheat oven to 375f
  2. lightly butter six 3 / 4-cup ramekins or custard cups
  3. stir chocolate and butter in heavy small saucepan over low heat until melted and smooth
  4. remove from heat and cool slightly
  5. using electric mixer , beat eggs , egg yolks , and 1 / 3 cup sugar in large bowl until slightly thickened , about 5 minutes
  6. add all purpose flour and beat until blended
  7. add chocolate mixture , peppermint extract , and salt
  8. beat just until incorporated
  9. divide chocolate mixture among prepared ramekins
  10. place ramekins on baking sheet
  11. bake cakes until edges are set but centers look shiny and still move slightly when ramekins are gently shaken , about 11 minutes
  12. remove cakes from oven
  13. run small knife around each cake to loosen
  14. place small plate atop 1 ramekin with pudding cake
  15. using oven mitts or pot holders , hold plate and ramekin firmly together and invert , allowing cake to settle onto plate
  16. repeat with remaining cakes
  17. sprinkle each cake with powdered sugar or sweetened cocoa
  18. place scoop of ice cream alongside
  19. garnish with mint leaves and serve
