2 cups plus 1 tablespoon cold 2% milk, divided
1 package (3.9 ounces) instant chocolate pudding mix
4 ounces cream cheese, softened
1 tablespoon sugar
1/4 teaspoon peppermint extract
1 cup whipped topping
Mint Andes candies, optional

Steps:

  • In a large bowl, whisk 2 cups milk and pudding mix for 2 minutes; set aside. In a small bowl, beat the cream cheese, sugar, extract and remaining milk. Fold in whipped topping. , Spoon half of the pudding into four parfait glasses. Top with half of cream cheese mixture. Repeat layers. Garnish with candies if desired.

1 cup semisweet chocolate chips
1/2 cup plus 1-1/2 tablespoons shortening
3/4 cup sugar
1 large egg
1/4 cup light corn syrup
1 teaspoon peppermint extract
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup crushed peppermint candy
Additional sugar

Steps:

  • In a double boiler, melt chocolate chips. Remove from the heat. In a large bowl, cream shortening. Gradually add sugar, beating until light and fluffy. Beat in melted chocolate. Add egg, corn syrup and extracts; mix well. , Combine flour, baking soda and salt; stir into batter. Fold in candy. Shape into 1-in. balls and roll in sugar. Place 3 in. apart on ungreased baking sheets. , Bake at 350° for 12-15 minutes. Cool 5 minutes before removing to wire racks.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine butter, sugar, vanilla extract, and salt in a large bowl; beat using an electric mixer until smooth and creamy. Slowly add flour and mix in. Add mint chocolate chips until well incorporated. Roll dough into 1-inch balls and place on the prepared baking sheet.

1 can (14 ounces) sweetened condensed milk, divided
2 teaspoons vanilla extract
6 ounces white candy coating, coarsely chopped

  • In a heavy saucepan, melt chocolate chips with 1 cup milk. Remove from the heat; stir in vanilla. 3 cups/300 grams confectioners' sugar
3/4 cup/90 grams dark cocoa powder
1/2 teaspoon/6 grams kosher salt
5 ounces/135 grams 72 percent chocolate, preferably with nibs, chopped
1 1/2 cups/135 grams chopped, toasted pecans
4 large egg whites, room temperature
1/2 cup/100 grams sugar cubes, crushed, for the tops

Steps:

  • Heat oven to 325 degrees. Whisk together sugar, cocoa and salt. Stir in chocolate and pecans. Beat egg whites until slightly stiff, then stir into chocolate mixture until just until incorporated. (Do not overmix.) You can use a stand mixer on low or a sturdy spoon and a large bowl.
  • Crush sugar cubes and place in a shallow bowl. Using a small ice cream scoop or a melon baller, spoon up dough to create a scoop about the size of a golf ball. Lightly dip the top of the cookie into the sugar and then place on a parchment-lined baking sheet, about 2 inches apart.

  • Heat oven to 350 degrees.

1 cup All-Bran® Original or All-Bran® Bran Buds®
3/4 cup chopped walnuts
1/2 cup powdered sugar

Steps:

  • 1. Stir together flour, baking powder and salt. Set aside.2. In 3-quart saucepan, melt shortening and chocolate together over low heat, stirring constantly until smooth. Remove from heat. Cool. Stir in granulated sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Add flour mixture, mixing until combined. Stir in KELLOGG'S ALL-BRAN cereal and walnuts. 1 tablespoon coconut oil
orange gel frosting
1 tablespoon black gel frosting

Steps:

  • Microwave the chocolate chips for 30 seconds. Stir and microwave for an additional 30 seconds. Stir again. Chips should be fully melted.
  • Top one cracker with melted chocolate and shredded coconut. Place lollipop stick on cracker and top with more white chocolate and a second cracker, making a sandwich. Repeat as many times as desired and freeze the pops until the the chocolate is hard.
  • Melt more chocolate and add some mint extract (about ½ tsp per pound of chocolate) and coconut oil (about 1 Tbsp. per pound of chocolate).
  • Dip pops in chocolate and swirl until completely coated.
  • Carefully cut holes in the Ritz box to hold your lollipops. Freeze until hard.
  • Use the orange and black frosting to decorate your lollipops.

1/2 cup all-purpose flour
1/4 cup unsweetened cocoa powder (not Dutch process)
4 teaspoons instant espresso or 4 teaspoons instant coffee
1 teaspoon baking powder
1/8 teaspoon salt
4 tablespoons unsalted butter, softened
2/3 cup packed light brown sugar
1 large egg
4 ounces bittersweet chocolate (it can still be warm, just not so hot it would curdle an egg) or 4 ounces semisweet chocolate, melted and cooled (it can still be warm, just not so hot it would curdle an egg)
1 tablespoon milk
powdered sugar, for coating

Steps:

  • In a medium bowl, sift the flour, espresso, cocoa, baking powder and salt.
  • Don't skip the sifting process.
  • If you are using instant coffee, be sure to press the coffee pieces through the sieve so they become smaller grains that are totally incorporated into the cookies.
  • With an electric mixer, cream butter and brown sugar until fluffy.
  • Beat in egg until combined; mix in cooled chocolate.
  • With mixer on low, add flour a little at a time.
  • Then beat in milk until just combined.
  • The dough will be very wet-- flatten it into a disk and wrap it in plastic wrap, then freeze until firm.
  • That takes about 45 minutes, but you can freeze it longer if you want to make the cookies the next day.
  • Preheat oven to 350 degrees farenheit.
  • Line two baking sheets with parchment or foil.
  • Shape dough into one-inch balls.
  • The dough is still messy, so it helps to roll very fast, and sprinkle a little powdered sugar on your hands between cookies.
  • Pour powdered sugar (about 1/2 cup) into a medium bowl.
  • Working with a few cookies at a time, roll the balls in sugar two times.
  • Make sure they are completely coated and no dark dough is visible.
  • Place on baking sheets 2 inches apart, and bake until cookies have spread and coating is cracked, about 12 minutes.
  • Cookies will still be soft to the touch, but do not overbake.
  • Cool cookies on a wire rack.
