Chocolate Pinwheel Cookies image

Chocolate Pinwheel Cookies are perfect to make over the holidays! They're a combination of chocolate cookie dough and vanilla cookie dough rolled together into a beautiful swirl, then rolled in demerara sugar for a bit of sweet crunchiness on the outside! Categories     Dessert

Time 30m

Number Of Ingredients 9

2 cup All-Purpose Flour
1 tsp Baking Powder
1/4 tsp Salt
1 cup Light Brown Sugar (firmly packed)
1/2 cup Unsalted Butter
1 Large Egg
1 tsp Vanilla Extract
2 tbsp Unsweetened Cocoa Powder (to be added only after dividing the dough in half)
1 cup Demerara Sugar (for rolling cookie roll in)

Steps:

  • In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set to the side.
  • Using a hand-held mixer or stand mixer fitted with a paddle attachment, cream the light brown sugar and unsalted butter together thoroughly on medium-high speed until light and fluffy.
  • Add in the egg and vanilla extract.
  • Switching the mixer speed to low, gradually add in the whisked dry mixture until well combined.
  • Divide the dough in half. Roll half of the dough on a lightly floured sheet of wax or parchment paper to form a 9" x 12" rectangle, approx. 1/8" thick. Set aside.
  • With the other half of dough, blend in the unsweetened cocoa powder and then roll out the chocolate dough onto another lightly floured sheet of wax or parchment paper to a 9" x 12" rectangle.
  • Turn the chocolate layer onto the vanilla layer (so the vanilla layer will be on the outside of the roll). Remove the wax paper from the top and trim any rough edges of the rectangle.
  • Carefully roll the 2 layers of dough into a jelly roll.
  • Roll the pinwheel cookie dough roll in demerara sugar (optional step).
  • Double wrap the roll of cookie dough securely in plastic wrap and chill until form. You can chill the dough either in the refrigerator for 2-3 hours or overnight - or - chill in the freezer for 1 hour.
  • When ready to bake, adjust the oven rack to the 2nd level position and preheat the oven to 350ºF.
  • Using a sharp knife, slice the chilled cookie dough log into cookies approximately 1/8" thick and place on a parchment lined cookie sheet.
  • Bake for 8-10 minutes or until they are a light golden brown on the top and edges. Allow to cool for 10 minutes before transferring to a cooling rack.
  • Keep cookies stored in an airtight container with a slice of bread for up to a week.

Provided by Trisha Yearwood

Categories     dessert

Time 9h55m

Yield 2 dozen cookies

Number Of Ingredients 9

1/2 cup vegetable shortening, such as Crisco
1/2 cup sugar
1 1/2 teaspoons vanilla extract
1 large egg yolk
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons milk
1 ounce (1 square) unsweetened baking chocolate, melted

Steps:

  • Cream the shortening and sugar in a large bowl with an electric mixer. Add the vanilla, and egg yolk and mix well.
  • Sift the flour into a separate bowl with the baking powder and salt. Add the flour mixture and milk alternately to the shortening mixture, beginning and ending with the flour mixture, and mix to form a dough. Divide the dough into 2 halves. To one half, add the chocolate, mixing thoroughly. Wrap both sections of dough in separate pieces of plastic wrap and chill in the refrigerator for about 1 hour.
  • Unwrap and roll each half of dough between 2 pieces of waxed paper. Roll to a 1/8-inch thickness. Remove the waxed paper from the top of each layer of dough. Place the white layer on top of the chocolate layer and roll up carefully as you would a jellyroll, using the waxed paper to roll smoothly. Wrap the roll with the waxed paper and chill overnight in the refrigerator.
  • The next day, preheat the oven to 375 degrees F.
  • Cut the roll into 1/4-inch slices (see Cook's Note) and place about 1/2 inch apart on ungreased baking sheets. Bake for about 12 minutes. Do not brown. Remove carefully with a pancake turner and cool on racks.

COCONUT-CHOCOLATE PINWHEEL COOKIES

Coconut-Chocolate Pinwheel Cookies image

The chocolate filling rolled into these chewy Christmas pinwheel cookies creates a fudgy, brownie-like swirl that's completely irresistible.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Time 11h45m

Yield Makes about 24

Number Of Ingredients 10

2 cups cake flour (not self-rising)
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
9 tablespoons unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups desiccated unsweetened coconut (6 ounces)
9 ounces bittersweet chocolate, chopped (1 3/4 cups)
1/2 cup sweetened condensed milk

Steps:

  • In a medium bowl, whisk together flour, baking soda, and salt. In the bowl of a mixer fitted with the paddle attachment, beat together 8 tablespoons butter and sugar on medium speed until light and fluffy, about 3 minutes. Beat in egg and vanilla. Reduce speed to low and slowly add flour mixture, beating until almost combined. Add coconut and beat until incorporated. Place dough between two sheets of parchment and roll out to a 10 1/2-by-12 1/2-inch rectangle, 1/4 inch thick. Using a sharp knife, trim 1/2 inch from edges to create a 10-by-12-inch rectangle. Transfer to a baking sheet. Refrigerate until firm, at least 1 hour and up to overnight.
  • Place chocolate and remaining 1 tablespoon butter in a heatproof bowl set over a pot of simmering water; stir until melted and smooth, about 3 minutes. Remove from heat and stir in condensed milk. Let cool 5 minutes. Mixture will be thick and pasty.
  • Remove dough from refrigerator and peel off top sheet of parchment. Using an offset spatula, spread chocolate mixture evenly over surface of dough. Using the bottom sheet of parchment for support, roll dough into a tight log. Wrap log in plastic; refrigerate at least 2 hours and up to overnight.
  • Preheat oven to 350 degrees. Remove plastic from log and cut log into 1/4-inch-thick rounds. Transfer to parchment-lined baking sheets, spaced 1 inch apart. Bake, rotating pans halfway through, until firm and beginning to brown around edges, 15 to 18 minutes. Let cool on sheets 5 minutes, then transfer cookies to wire racks and let cool completely. Cookies can be stored in an airtight container at room temperature up to 1 week.
