GERMAN CHOCOLATE FRENCH TOAST CAKE



German Chocolate French Toast Cake image

Nonstick cooking spray, for spraying the cake pans
16 slices Texas toast or other 3/4-inch-sliced white bread
2 cups light cream
1/3 cup chocolate syrup
1/4 cup cocoa powder
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
8 large eggs
1 cup chopped or grated dark chocolate
One 12-ounce can evaporated milk
1 1/4 cups packed light brown sugar
2 teaspoons vanilla extract
1 teaspoon cornstarch
1/4 teaspoon kosher salt
3 large egg yolks
4 tablespoons (1/2 stick) unsalted butter
One 7-ounce package shredded coconut (about 2 2/3 cups), toasted
1 1/4 cups chopped pecans, toasted

Steps:

  • For the French toast: Preheat the oven to 300 degrees F. Spray two 9-inch cake pans with cooking spray, line with parchment paper and spray again. Press 4 slices of the bread into each cake pan to form 1 even layer.
  • In a blender, combine the cream, chocolate syrup, cocoa powder, vanilla, salt and eggs and blend until smooth. Pour half of the custard between the 2 cake pans to cover the first layer of bread. Sprinkle half of the chocolate over each. Press 4 slices of the bread into each cake pan to form a second even layer. Divide the remaining custard between the cake pans over the second layer of bread. Let sit for 10 minutes to allow the bread to soak up the custard.
  • Bake until set, 25 to 30 minutes. Let cool in the pans until slightly warm, then remove the cakes from the pans.
  • For the frosting: In a medium pot, combine the milk, sugar, vanilla, cornstarch, salt and yolks and whisk until blended. Add the butter and place over medium-low heat. Cook, stirring constantly, until thickened, 6 to 8 minutes. Remove from the heat and stir in 2 cups of the coconut and 1 cup of the pecans. Let cool until slightly warm.
  • Put one layer of the French toast cake on a serving plate. Spread half of the frosting over the cake. Sprinkle on half of the remaining chocolate. Place the second layer of cake on top and spread with the remaining frosting. Sprinkle on the remaining coconut, pecans and chocolate.

1/3 cup baking cocoa
2 tablespoons sugar
1 package (1/4 ounce) active dry yeast

1/2 cup 2% milk
1/2 cup semisweet chocolate chips
2 tablespoons butter
1 large egg, room temperature

Steps:

  • In a bowl, combine 1-1/4 cups flour, cocoa, sugar, yeast, salt and baking soda. In a saucepan, heat the water, milk, chocolate chips and butter; stir until chocolate is melted. Cool to 120°-130°. Add to dry ingredients; beat on medium speed for 2 minutes. Add 1/2 cup flour and egg; beat on high for 2 minutes. Stir in enough remaining flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in 2 greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1 hour., Bake at 375° until browned, 25-30 minutes. Remove from pans to cool on wire racks. Dust with baking cocoa and/or confectioners' sugar if desired.

This makes a great Christmas morning treat or gift to a friend. This bread is not difficult or complicated to make, the time involved is for double risings and restings. If you prefer you can make this with an electric mixer fitted with a dough hook. Cooking time includes 6 hours for the starter to proof. It was originally created by Paula Oland of the Balthazar Bakery in New York.

1/4 teaspoon active dry yeast
1 cup lukewarm water
1 cup all-purpose flour, plus

2 1/2 cups bread flour
1/4 cup good-quality cocoa powder
1/3 cup sugar, plus

2 teaspoons active dry yeast
1 cup water
1 1/4 teaspoons fine salt
2 tablespoons unsalted butter, room temperature,plus more for pans
3 ounces good-quality bittersweet chocolate, chopped into 1/4 inch pieces

1 large egg yolk, lightly beaten
1 tablespoon heavy cream

Steps:

  • Chocolate Bread Starter: Dissolve yeast in water for 10 minutes; stir in flour until completely mixed; cover loosely and leave to proof at room temperature 6 hours.
  • Chocolate Yeast Bread: Stir and thoroughly mix flour, cocoa, 1/3 cup sugar, yeast, water and 1/4 cup Chocolate Bread Starter (save the remainder for another use); let rest 15 minutes.
  • Scrape dough onto floured work surface and knead in salt and butter; knead until smooth and elastic, about 10 minutes; knead in chopped chocolate thoroughly.
  • Place dough in lightly oiled bowl and cover with plastic wrap; let rise until doubled, about 1 1/2 hours; leaving dough in bowl, fold dough into thirds as if folding a letter for an envelope, recover with plastic wrap; let rest 30 minutes.
  • Butter two 7"x3"x2" loaf pans and coat with remaining 2 T granulated sugar; divide dough in half and then divide each half into 4 even pieces; roll and form each piece of dough into a tight ball; place four pieces, smooth side up, side-by-side in each loaf pan; cover tightly with plastic wrap and let rise at room temperature until doubled, about 2 hours.
  • Preheat oven to 375°; combine egg yolk and cream and brush on loaves; sprinkle with turbinado sugar; place in oven, reduce temperature to 350° and bake for 40-45 minutes or until loaves have a slightly hollow sound when tapped on the bottom.
  • Let rest in loaf pans for 5 minutes before removing to wire rack.

2 bananas, mashed
3 large eggs
1 cup whole milk
½ cup heavy cream
¾ cup sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
1 tablespoon vanilla extract
12 cups brioche bread, 1 loaf (day old bread)
1 cup chocolate chips
¼ cup pecan, chopped
8 tablespoons unsalted butter, 1 stick
1 cup brown sugar
½ teaspoon kosher salt
1 teaspoon vanilla extract
2 tablespoons pecan, chopped
3 bananas, halved lengthwise and crosswise

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Make the banana custard: In a large bowl, mash the bananas. Add the eggs, milk, and heavy cream and stir to combine.
  • In a medium bowl, combine the sugar, cinnamon, nutmeg, and vanilla and mix with a fork.
  • Add the sugar mixture to the custard mixture and stir to combine.
  • Add the cubed bread, chocolate chips, and pecans to the custard mixture and toss well to coat. Let soak for 10 minutes.
  • While the bread is soaking, make the caramel base: In a medium microwave-safe bowl, microwave the butter for about 2 minutes, stirring every 30 seconds, until melted and hot.
  • Add the brown sugar and stir to combine. Microwave for another minute, stirring halfway, until the sugar is mostly dissolved.
  • Add the salt, vanilla, and pecans and stir to combine.
  • Pour the caramel into the bottom of a 9 (22 cm) x 13-inch (33 cm) baking dish and spread evenly. Arrange the bananas, cut side down, over the caramel.
  • Spoon the brioche-custard mixture evenly over the bananas.
  • Cover with foil and bake for 30 minutes, then uncover and bake for 40-45 minutes longer, until the custard is set. Remove from the oven and let cool for 5 minutes.
  • Run a knife around the edges of the baking dish to loosen the bake, then invert onto a rectangular serving dish. Do not wait any longer than 5 minutes or the bake will stick to the pan.
  • Slice and serve.
