CHOCOLATE CHIP BANANA MUFFINS
These banana muffins are my kids' favorite. I adapt it for adults by adding chopped nuts or dried apricots.

- In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk the egg, oil, yogurt and vanilla. Stir into dry ingredients just until moistened. Fold in bananas and chocolate chips. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 22-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.

- Preheat oven to 325 degrees F (165 degrees C). Grease 12 muffin cups with butter or line with paper muffin liners.
- Stir sugar, oil, mayonnaise, and eggs together until creamy and light yellow. Mix in bananas until incorporated.
- Stir flour, oats, flax, wheat germ, baking soda, baking powder, and salt into banana mixture until smooth. Mix in chocolate chips and walnuts. Spoon batter into prepared pans.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes.

Steps:
- Beat the SOFTENED butter and white sugar in a mixing bowl
- until light and fluffy.
- Add the eggs and mashed bananas and mix well.
- Add the flour, baking soda, brown sugar, salt and vanilla and mix until blended. Add chocolate chips and pecans and stir until well mixed.
- Spoon into paper muffin cups and place in a muffin pan. Fill each muffin about ¾ full.
- Bake at 375 degrees for 20-30 minutes or until a wooden pick inserted in the center comes out clean.
- Remove the muffins from the pan immediately after taking them out of the oven and set them aside to cool for about 15 minutes.
- Then enjoy their awesomeness.
CHOCOLATE CHIP BANANA NUT MUFFINS
I adapted this recipe with a few of my own changes from a Cooking for 2 Magazine recipe, so it is great for when you just want to mix up 1/2 dozen muffins. These are a very moist muffin with just enough chocolate and nut flavor. Tastes best fresh out of the oven.

- In a mixing bowl, cream butter and sugar. Beat in the egg, banana, and vanilla.
- In separate bowl, combine the flours, baking powder, salt, baking soda, and cinnamon.
- Add the flour mixture to the creamed mixture just until moistened.
- Fold in the walnuts and chocolate chips.
- Coat 6 muffin cups with nonstick cooking spray and fill two-thirds full with batter.
- Bake at 350 degrees for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

- Preheat the oven to 375 degrees F.
- Line a 12-cup muffin pan with parchment squares so they come up over the sides, and set aside.
- Whisk together the flours, wheat germ, baking soda and salt in a medium bowl. Beat the butter and sugars together with an electric mixer until light and fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition.
- Mash the bananas with a fork in a separate bowl. Stir in the milk and vanilla. With the mixer on low, alternately add thirds of the flour mixture and halves of the banana mixture to the butter mixture, beginning and ending with the flour mixture. Mix until just combined. Fold in the chocolate chips.
- Divide the batter among the muffin cups. Bake until a toothpick inserted in the center of a muffin comes out clean, 20 to 24 minutes.

These muffins are so moist and delicious there are never any leftovers. I am a person that does not like an overabundance of banana flavour so these were just right. You can also make this into a banana loaf as well. Adapted from a recipe I found on the Food Network.

- Sift the flour, baking soda and salt into a bowl. Set aside.
- Whisk the eggs and the vanilla together. Set aside.
- Preheat oven to 350°F.
- Cream together the butter and sugar until light and fluffy (I use a Kitchen Aid stand mixer for this).
- Gradually pour the egg mixture into the butter while mixing until incorporated.
- Add the bananas and stir until incorporated.
- Mix in the flour mixture until just incorporated with a spatula.
- Pour in the walnuts and chocolate chips and gently fold into mixture.
- Place mixture in a paper-line muffin tray and bake for about 20 minutes or until a toothpick comes out clean. (All tray sizes and ovens are different so keep an eye on them).
