This is the best cheesecake I've ever had. People have offered to pay me to make these for them during the holidays!

1 ½ cups graham cracker crumbs
⅓ cup white sugar
⅓ cup unsweetened cocoa powder
⅓ cup butter, melted
3 (8 ounce) packages cream cheese
1 (14 ounce) can sweetened condensed milk
3 eggs
2 teaspoons vanilla extract
1 cup mini semi-sweet chocolate chips
1 teaspoon all-purpose flour

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Mix graham cracker crumbs, sugar, butter and cocoa. Press onto bottom and up the sides of a 9 inch springform pan. Set crust aside.
  • Beat cream cheese until smooth. Gradually add sweetened condensed milk; beat well. Add vanilla and eggs, and beat on medium speed until smooth. Toss 1/3 of the miniature chocolate chips with the 1 teaspoon flour to coat (this keeps them from sinking to the bottom of the cake). Mix into cheese mixture. Pour into prepared crust. Sprinkle top with remaining chocolate chips.
  • Bake at 300 degrees F (150 degrees C) for 1 hour. Turn off oven (do not open oven door) and leave the cake in the oven to cool in the oven for another hour. Remove from oven and cool completely. Refrigerate before removing sides of pan. Keep cake refrigerated until time to serve.

1 individual package chocolate graham crackers, crushed
½ cup melted butter
2 tablespoons white sugar
2 (8 ounce) packages cream cheese, softened
½ cup brown sugar
2 eggs
1 egg yolk
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Mix cracker crumbs, melted butter and sugar. Press into the bottom and sides of a 9 inch pie plate. Refrigerate crust while making filling.
  • In a large bowl, beat cream cheese and brown sugar until smooth. Beat in the eggs and egg yolk. Stir in vanilla. Fold in the chocolate chips. Pour filling into pie crust.
  • Bake in the preheated oven for 50 minutes, or until filling is set.

1 c chocolate wafer crumbs
3 Tbsp butter, melted
3 pkg (8 oz.) cream cheese, softened
3/4 c sugar
1/4 c flour
3 eggs
1/2 c sour cream
1 tsp vanilla
1 c miniature chocolate chips

Steps:

  • 1. Combine crumbs and butter for crust; press onto bottom of 9 inch springform pan.
  • 2. Bake at 350 degrees for 10 minutes.
  • 3. Combine cream cheese, sugar and flour until well blended, mixing with electric mixer.
  • 4. Add eggs, one at a time, mixing well.
  • 5. Blend in sour cream and vanilla
  • 6. Stir in chocolate pieces; pour over crust.
  • 7. Bake at 325 degrees for 55 minutes.
  • 8. Cool and chill.

3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup sugar
1/4 cup flour
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1 tsp. vanilla
3 eggs
1 cup miniature semi-sweet chocolate chips

Steps:

  • Heat oven to 325°F.
  • Combine wafer crumbs and butter; press onto bottom of 9-inch springform pan. Bake 10 min.
  • Beat cream cheese, sugar and flour in large bowl with mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Stir in chocolate chips; pour over crust.
  • Bake 55 min. or until center of cheesecake is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar

  • Drain maraschino cherries, reserving 2 teaspoons juice. Cut cherries into quarters; set aside. , In a small bowl, beat the cream cheese, sugar and reserved cherry juice until smooth. 1 large egg, beaten

  • In a large bowl, combine the flour, cracker crumbs, sugar and cocoa; stir in butter. Set aside 3/4 cup for topping. Press remaining mixture into a greased 9-in. microwave-safe pie plate. 1 1/4 cup all purpose flour
1/4 cup cornstarch
1/2 teaspoon baking powder
1/4 cup unsalted butter, room temperature
4 oz cream cheese, room temperature
1 large egg
1 tablespoon milk
1/2 teaspoon vanilla extract
1 1/4 cup powdered sugar
5-6 tablespoon mini chocolate chip

Steps:

  • In a medium bowl combine flour, cornstarch and baking powder. Leave aside.
  • In a large bowl mix butter and cream cheese, with an electric mixer on medium speed, until it is fine and creamy.
  • Add an egg, milk and vanilla extract and continue mixing.
  • Then, add powder sugar and mix some more until the mixture is fluffy. Put in dry ingredients and mix until you get fine dough.
  • Finally, add mini chocolate chips and stir well. Leave in fridge for an hour.
  • Preheat the oven to 375 F. Line two baking sheets with parchment paper. Take the dough out of the fridge. Shape it into balls (24-26 balls).
  • Place them in the baking sheets, 1.5 inch apart. Flatten the balls using your hands or some firm object.
  • Sprinkle some mini chocolate chip, if you wish. Bake for 10 minutes.
  • Take them out of the oven and leave to cool in the baking sheets for a few minutes.
  • Transfer them to a wire rack to cool down completely.

1/2 cup butter
1 slightly beaten egg yolk
1/4 teaspoon vanilla
FILLING:
5 packages (8 ounce) cream cheese
1/4 teaspoon vanilla
3/4 teaspoon grated lemon peel
1 3/4 cups sugar
3 tablespoons flour
1/4 teaspoon salt
4 or 5 eggs, enough to make 1 cup
2 egg yolks
1/4 cup heavy cream
STRAWVERRY GLAZE:
1 cup fresh strawberries, crushed
3/4 cup water
2 tablespoons cornstarch
1/2 cup sugar
1 cup whole fresh strawberries

  • Preheat oven to 400 degrees fahrenheit. CRUST: Combine first 3 ingredients. Cut in butter till crumbly. Add egg yolk and vanilla; mix well. Pat 1/3 of dough on bottom of 9-inch spring-form pan (sides removed). Bake about 8 minutes or till golden; cool. Butter sides of pan; attach to bottom. Pat remaining dough on sides of pan to height of 1 3/4 inches. Preheat oven to 450 degrees fahrenheit. FILLING: Let cream cheese stand at room temperature to soften (1 to 1 1/2 hours).
