- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment.
- In the bowl of a stand mixer, cream together the butter, granulated sugar and brown sugar on medium-high speed until light and fluffy, 3 to 5 minutes. Add the vanilla and eggs and beat on medium speed until just combined. Add the flour, baking soda and salt, then mix on low speed until just combined. Stir in the chocolate chips and 2 cups of the crushed potato chips. Put the remaining 2 cups crushed potato chips in a shallow bowl.
- Roll the dough into 2-inch balls, then roll them in the remaining potato chips so they are completely coated. Place the cookies 2 inches apart on the prepared baking sheets and bake until golden, 12 to 15 minutes. Let cool for 5 minutes, then transfer to a wire rack to cool completely.

- Position the rack in the middle of the oven and preheat to 350 degrees F.
- Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. Brush some butter on the inside of a 9-by-13-inch pan and cool the remaining butter slightly. Whisk the remaining cooled butter, brown sugar, eggs and vanilla in a large bowl until smooth.
- Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a spoon or spatula, taking care not to over mix. The batter should be thick and all of the flour mixture should be fully incorporated. Fold in the chocolate chips.
- Spread the batter evenly in the prepared pan. Bake until the edges are browned and the center is completely set, about 30 minutes. Cool completely, at least one hour, cut into 24 pieces and serve.
POTATO CHIP-CRUSTED MAGIC BARS

- Preheat the oven to 350°F. Butter a 9x13" baking pan, preferably metal, and line with parchment paper so it overhangs by a couple of inches on the long sides of the pan.
- In a food processor, pulse the potato chips with the flour until they resemble coarse bread crumbs. Pour in the 4 tablespoons butter and pulse until the chips are evenly moistened and finely chopped. Press the mixture into the prepared baking pan.
- Bake for about 15 minutes, until the crust is dry and very lightly browned. Let cool.
- Pour the sweetened condensed milk over the crust and tip the pan so it forms an even layer. Scatter the chocolate chips, coconut, and nuts on top and use a fork or the back of a spoon to press the ingredients into the sticky condensed milk.
- Bake for about 25 minutes, until the coconut is toasted and the condensed milk is lightly browned at the edges. Transfer to a rack and let cool.
- When the bar is cool, use the parchment paper to lift it out of the pan. Cut into any size squares you desire and serve.

- Preheat oven to 350 degrees F (175 degrees C).
- Process flour, sugar, and cocoa powder in a food processor until combined. Add butter and process until mixture is crumbly. Press into the bottom of a 9x13-inch baking pan.
- Bake in the preheated oven until lightly browned, about 15 minutes.
- Combine condensed milk and 1 cup chocolate chips in a bowl. Microwave 1 minute. Stir; continue microwaving in 20-second intervals until chocolate is melted and mixture is smooth. Add vanilla extract and stir.
- Pour chocolate and milk mixture over the baked crust. Top with remaining chocolate chips and walnuts.
- Bake in the preheated oven until set, about 20 minutes. Let cool before cutting into 24 or 36 pieces.

- Set oven rack to second-lowest position.

- Heat oven to 350°F. Line 8-inch square pan with cooking parchment paper allowing paper to hang over 2 sides of pan. Spray paper with cooking spray. Secure overhanging paper with metal binder clips.
- In medium bowl, stir together graham cracker crumbs and butter until well combined. Press evenly in bottom of pan. Set aside.
- In small microwavable bowl, microwave peanut butter on High about 30 seconds until slightly melted. Add condensed milk; stir to combine.

- Place a rack in the center of the oven and heat to 375 degrees. Line 2 baking sheets with parchment paper.
- In the bowl of an electric mixer fitted with the paddle attachment, beat butter, vanilla and salt on medium-high speed until creamy, about 1 minute. Add brown sugar and confectioners' sugar and beat until fluffy, about 2 minutes more. Scrape down sides of the bowl with a rubber spatula, then add flour. Mix on low speed until a smooth dough forms. Add 1 cup/95 grams crushed potato chips and all the chocolate chips, then beat until blended.
- On a work surface, spread about half the remaining crushed potato chips out into a 10-by-12-inch rectangle. Turn dough out onto chips and pat it somewhat flat. Cover surface of dough with parchment paper or plastic wrap. Using a rolling pin, roll dough into a 7-by-11-inch rectangle (about 1/2-inch thick). Remove parchment or plastic.
- In a small bowl, beat egg, granulated sugar and 1 tablespoon water until very smooth. Lightly brush surface of dough with egg wash, then sprinkle evenly with remaining crushed potato chips. Roll the rolling pin over the top of dough to encourage chips to adhere. Use a bench scraper or knife to cut dough into 4 dozen 1 1/4-inch-square cookies. Transfer cookies with bench scraper or small offset spatula to the prepared baking sheets, spacing them about 1 1/2 inches apart.
- Bake 1 sheet of cookies at a time until set and golden, about 15 minutes. Let cookies cool for 3 minutes on the baking sheets before transferring them to a wire rack to cool completely. They will crisp up as they cool.

- Position racks in the top and bottom thirds of the oven; preheat oven to 350°.
- In a bowl, whisk the flour, baking soda, and nutmeg until combined; set aside.
- Put margarine in a big bowl; beat with an electric mixer on medium speed until softened.
- Add in both sugars; continue beating until combined but grainy, with no bits of margarine visible, about 2 minutes.
- Beat in the egg, then the egg white and vanilla.
