Use a chocolate with a high cocoa content for best results. Feel free to use whisky, orange liqueur or anything you fancy, really, instead of the rum. This recipe can be made per person, using one ounce of chocolate and one egg for each. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

6 ounces bittersweet chocolate, chopped
6 eggs, separated
6 teaspoons rum

Steps:

  • Melt the chocolate slowly in a double boiler over simmering water. Remove from heat and beat egg yolks into chocolate with electric mixer.
  • Beat in rum, orange liqueur, or vanilla extract, if desired. In a separate bowl, beat egg whites to medium-stiff peaks. Stir a large spoonful of egg whites into the chocolate mixture to loosen. Then gently fold the remaining egg whites into the chocolate. Pour into serving glasses and chill in refrigerator until set, 4 to 5 hours. Will keep up to four days in refrigerator.

1 cup white sugar
2 cups butter
1 cup water
1 teaspoon instant coffee granules
1 pound semisweet chocolate, chopped
8 eggs
½ cup heavy whipping cream
1 tablespoon confectioners' sugar
16 whole almonds, toasted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan and wrap bottom with aluminum foil.
  • Heat sugar, butter, water, coffee, and chocolate in a 3-quart saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat. Beat eggs in a separate bowl; gradually pour in the chocolate mixture, whisking constantly. The batter will be very thin. Transfer batter to prepared pan.
  • Bake in the preheated oven until a wooden pick inserted in center comes out clean, about 45 to 50 minutes. Cool completely. Remove sides of pan. Cover cake with plastic wrap and refrigerate until chilled, at least 4 hours.
  • Remove plastic wrap. Beat whipping cream and confectioners' sugar in a chilled 1 1/2 quart bowl until stiff. Garnish top of cake with whipped cream and, if desired, whole almonds. Refrigerate any remaining cake.

1 cup semi-sweet chocolate chips
1/2 cup sugar
1/4 cup water
2 eggs
2 tablespoons coffee-flavored liqueur
1/2 teaspoon instant coffee granules
1 cup whipping cream, whipped
whipped cream (additional)
toasted almond

Steps:

  • Melt chocolate over very low heat and let cool slightly.
  • Combine sugar and water in a saucepan and bring to boil, stirring,until sugar is dissolved.
  • Beat eggs on medium speed and gradually add chocolate into eggs; stir in liqueur and coffee granules.
  • While beating at medium speed, slowly pour hot sugar syrup in a thin stream over egg mixture and beat until well blended.
  • Fold in the whipped cream- takes some time to incorporate.
  • Chill, covered, for at least two hours or overnight.
  • Spoon into 4 parfait dishes.
  • Add additional whipped cream (and toasted almonds if desired).

12 ounces white chocolate, chopped
*8 egg yolks
1/4 cup plus 2 tablespoons sugar
1/2-ounce gelatin sheets
Creme de Cacao or other chocolate flavored liqueur to dissolve the gelatin
3 ounces liquid coffee
8 egg whites*
1 pint heavy cream

Steps:

  • Melt the chocolate in a double boiler and set aside. Beat the yolks with the 2 tablespoons of sugar with an electric mixer at high speed until light and fluffy. Stream in the melted chocolate at low speed.
  • Dissolve the gelatin in the warmed liquor and stream slowly, along with the coffee, into the chocolate mixture at low speed. Transfer the mixture into a stainless steel bowl and refrigerate until needed.
  • In another mixing bowl, whip the egg whites and the remaining 1/4 cup sugar to a stiff meringue with an electric mixer. In a separate bowl whip the heavy cream until firm. Fold the meringue into the chocolate mixture, then fold in the whipped cream. Refrigerate for at least 1 hour before serving.
