If you mix coca-cola with chocolate cake mix you get a very fluffy and fudgy chocolate cake.

- Preheat oven to 350°F. Pour cake mix and can of coke into a large bowl and mix until there are no lumps in the batter. It may be easier to use a mixer because it took me a while to get out all the lumps with a hand whisk.
- Line a 9 x 13-inch pan with parchment paper. Pour batter into pan. Bake for approximately 35 minutes or until knife inserted comes out clean. Cool before cutting. Cake crumbs do fall apart easily so cut carefully with a sharp knife. You can also bake into individual cupcake liners to make it less messy.

- Combine flour and white sugar in mixing bowl. Heat 1 cup butter, 3 tablespoons cocoa, and 1 cup cola soft drink to boiling and pour over the flour and sugar. Mix thoroughly.
- Add buttermilk, eggs, baking soda, vanilla, and marshmallows and mix well.
- Bake in a prepared 9 by 13 inch pan for 40 minutes at 350 degrees F (175 degrees C).
- While still hot, frost with Coco Cola Frosting: Combine 1/2 cup butter or margarine, 2 tablespoons cocoa and 6 tablespoons cola soft drink and heat to boiling. Pour over 4 cups confectioners' sugar and mix well. Mix in chopped nuts and spread over hot cake.

- Preheat oven to 350 F degrees. Spray 9x13 baking pan with nonstick cooking spray. Prepare cake mix according to package directions but instead of adding water, you will replace that amount with Coca-Cola. Add in dry instant pudding mix to the batter and mix as well. Pour batter into baking dish and bake according to package directions, usually around 35-39 minutes. Just before cake is ready to come out of the oven, start making frosting. In a medium saucepan, over medium heat, start melting one stick of butter. Add in cocoa powder and heavy cream (or milk) and stir. Then stir in confectioners' sugar. Stir briskly with a whisk to get all the lumps out. Take mixture off the heat and add in vanilla extract. Once cake comes out of oven pour frosting over warm cake. I've had this recipe for probably 30 years. It's been awhile since I made it but it's nice and moist, wonderful flavor. Several already on this site but none with these exact ingredients. The icing is a bit thin if you follow directions, it's more like a glaze, so I think it needs maybe another cup of powdered sugar.

- Combine the margarine, shortening, cocoa and cola in saucepan and bring to boil. Add the chocolate mixture to sugar-flour mixture. Add buttermilk, soda, vanilla and beaten eggs.

MOM'S CHOCOLATE COCA-COLA CAKE & FROSTING
This is the recipe my mom used to make my birthday cake when I was a little girl, and the recipe for my son's cake when he requests chocolate. It is very similar to the other Chocolate Coca-Cola Cakes, but the main difference is the little bit of cinnamon that is in it. It is our favorite chocolate birthday cake. For a prettier cake, you can use double-boiler seven minute frosting....it's not chocolate, but it does make a very pretty cake! It is a nice white frosting...almost like a meringue type frosting. Cook time does not include the 7 minutes for the white icing!

- In a large bowl, mix together 2 cups flour, 1/2 tsp cinnamon, and 2 cups sugar.
- In a heavy saucepan combine 1/2 cup margarine or butter, 1/2 cup oil, 3 tbsp cocoa, and 1 cup coke. Bring to a boil. Pour over the dry ingredients mixed earlier. Mix until blended.
- In a small bowl, mix together 1/2 cup buttermilk and 1 tsp baking soda. Then add it to the mixture.
- Add 2 eggs and 1 tsp vanilla and beat inches Then fold in the marshmallows.
- Bake in a 13 x 9 x 2 inch pan for 30 to 35 minutes (or until a toothpick inserted in the middle comes out clean) in a 350 degree oven.
- For the frosting: Place 1/2 cup margarine or butter, 3 tbsp cocoa, and 5 tbsp coke in a saucepan and bring to a boil. Add the confectioners sugar and vanilla. Mix well. If it is too thick, and a drop or two more of coke.
- If you want the white 7 minute frosting: (These ingredients are not listed above!) In the top of a double boiler, combine 1 1/2 cups sugar, 1/4 cup + 1 tbsp cold water, 2 egg whites, 1 tbsp light corn syrup, and a dash of salt. Beat at a low speed of an electric mixer 30 seconds or just until blended. Place over boiling water; beat constantly on high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla and beat 2 minutes or until frosting is thick enough to spread.

- Then add in the eggs, buttermilk, baking soda and vanilla and beat well. Gently fold in the mini marshmallows and pour into your prepared pan. Spread evenly in pan.
- Bake at 350 degrees for 30 minutes.
- Frosting:
- In a saucepan combine the butter, cocoa and milk. Stir until butter is melted and all mixed together. Pour into a mixing bowl and beat in vanilla and powdered sugar. Spread over the cake while it is still warm.
