2 cups shredded zucchini
1 cup shortening
1 cup brown sugar
1 cup white granulated sugar
2 eggs
1 teaspoon vanilla
4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
2 cups chocolate chips
1 cup chopped nuts

Steps:

  • Cream brown sugar, white sugar, shortening, eggs, and vanilla.
  • In a separate bowl, combine shredded zucchini, flour, baking soda, salt, chocolate chips and chopped nuts.
  • Add dry ingredients to wet ingredients, and stir to combine.
  • Drop by teaspoon on a greased baking sheet.
  • Bake in a preheated 350 degree F oven for 15 minutes.
  • Cool on the pan for 3-4 minutes; remove and cool on a cooling rack.

½ cup butter flavored shortening
½ cup white sugar
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
⅓ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 ¾ cups grated zucchini

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the shortening, white sugar and brown sugar until smooth. Beat in the egg and vanilla. Combine the flour, cocoa, baking soda and salt; gradually stir into the creamed mixture. Fold in the grated zucchini. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 1/2 cups flour
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup oats
1/2 cup butter softened
1/2 cup sugar
1/3 cup brown sugar
1 large egg
1 teaspoon vanilla
1 1/2 cups zucchini shredded
1 cups chocolate chips

Steps:

  • Preheat oven to 350. In a medium bowl whisk together flour, cinnamon, baking soda, oats, and salt.
  • In a large bowl cream butter and sugars until light and fluffy. Add egg, vanilla, and zucchini and mix well. Add dry ingredients to wet ingredients and mix until incorporated. Fold in the chocolate chips.
  • Drop spoonfuls of cookie dough onto a lightly greased cookie sheet at least 2 inches apart. Bake for 12-14 minutes until golden brown. Allow cooling 10 minutes on the baking sheet before transferring to a cooling rack or sheet of parchment or wax paper to finish cooling completely.

1-3/4 cups sugar
2 eggs
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon
1/4 to 1/2 teaspoon ground cloves
1/2 cup buttermilk
2 cups shredded peeled zucchini

Steps:

1 cup chopped walnuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine the flour and baking soda. Set aside.
  • Mix the butter, brown sugar, white sugar, pudding mix, and vanilla. Beat until creamy. Add the eggs and mix well. Gradually stir in the flour mixture. Stir in the chocolate chips and the chopped nuts. Drop from teaspoon onto ungreased cookie sheets about 1 inch apart.
