- In a small bowl, combine dates and water; set aside to cool (do not drain). In a large bowl, cream sugar and shortening until light and fluffy. Beat in eggs. Combine the flour, baking soda and salt; gradually added to creamed mixture. Stir in dates. , Pour into a greased and floured 13x9-in. baking pan. Combine the topping ingredients; sprinkle over batter. Bake at 350° for 40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Steps:
- Combine all ingredients in a food processor and blend until combined- about 3 minutes. It should be a pasty texture, not grainy.
- Use a baller (about an inch in diameter) to create the balls.
- Refrigerate for an hour or until firm- of course you can always eat right away too! Keep refrigerated for up to a week.

Steps:
- Place the pumpkin seeds, sunflower seeds, shredded coconut, cocoa powder and sea salt in food processor.
- Process for 1 minute.
- Add in the vanilla and 1/4 of the dates. Process for 1 minute.
- Add 1/4 more dates and process for 1 minute.
- Repeat until the dates are gone.
- Press the crumble into a pan lined with parchment paper and refrigerate for 1 hour.
- Cut into squares and enjoy!
